BROILED TURKEY TENDERLOINS
This recipe is perfect for weekday meals or special dinners with my grandchildren. The simple sauce gets its tang from citrus, a little kick from cayenne and subtle sweetness from molasses. Steps:
- In a small saucepan, whisk the first eight ingredients; bring to a boil. Set aside 3/4 cup for serving. Brush tenderloins on both sides with remaining sauce., Broil 6 in. from the heat for 5 minutes, basting once. Turn and broil 5-8 minutes longer or until juices run clear. Serve with the reserved sauce.

Steps:
- Rinse turkey, pat dry and season with salt and pepper. Put on a rotisserie.
- Combine ketchup, mustard, oil and paprika. Peel and press garlic, then add to ketchup mixture. Rub onto turkey.
- Turn on oven's broiler and grill turkey for 60 minutes, until golden brown, baste with marinade throughout. Remove turkey from the rotisserie, slice and serve.
THE GREATEST GRILLED TURKEY
Although not very traditional, grilling turkey is the best way of cooking it -- it comes out tender and juicy every time! The turkey drippings may be used to prepare a gravy by placing a metal pan under the turkey inside the roasting pan, and mixing in about 1/2 cup water, adding more water as necessary to prevent the drippings from scorching. Remove the pan about 30 minutes before the turkey is done cooking.

- Prepare an outdoor grill for indirect medium-high heat.
- Rinse turkey and pat dry. Turn wings back to hold neck skin in place. Return legs to tucked position. Brush turkey with oil. Season inside and out with Italian seasonings, salt, and pepper.
- Place turkey, breast side up, on a metal grate inside a large roasting pan. Arrange pan on the prepared grill. Grill 2 to 3 hours, to an internal thigh temperature of 180 degrees F (85 degrees C). Remove turkey from grill and let stand 15 minutes before carving.

GRILLED TURKEY BREAST

- BRINE TURKEY BREAST (OPTIONAL): Place [not too cold] water, salt (and herbs, sugar, garlic if using) in a large ziploc bag. Massage bag to help dissolve salt. Add turkey breast. Seal bag and refrigerate for 3-4 hours. If in a rush, let sit on counter for an hour.
- HEAT BBQ GRILL to medium high (about 450F/232C). Note 2 - adding wood smoke.
- MAKE SEASONING MIXTURE: Combine all ingredients in a small bowl.
- SEASON TURKEY AND GRILL: Smear seasoning mixture all over turkey including under the skin (gently separate skin from flesh). Place turkey breast on one side of grill and turn off the heat/burner under the turkey. Grill with lid closed. Adjust temperature of BBQ to achieve 350-375F (176.7-190C). After 30 minutes, turn breast 180 degrees to allow other side of turkey to be closer to the heat (for even cooking). Grill for a total of 45-60 minutes (depending on size of turkey). An instant thermometer should read 160F/71C in thickest part. In the last 2-3 minutes, turn turkey breast skin side down on heated part of grill to further brown skin if desired.
- REST, SLICE AND SERVE: Transfer turkey breast to cutting board to rest for 15 minutes, loosely covered with foil. Very important for juicy turkey! The temperature will rise to 165F/73.9C which is the temp you want. Slice all the turkey meat away from bone. Then slice horizontally into 1/4-1/2 inch (0.63-1.27cm) slices. Serve with Savory Peach Sauce, mango Sauce, peach chutney, Herb Sauce or Cranberry Relish.

- Only very young, fresh-killed turkeys weighing from 3 1/2 to 5 pounds broil successfully. Split the turkey and remove the breastbone and backbone. Rub well with oil, salt, pepper and paprika. A clove or two of garlic, finely chopped, may be rubbed into the skin and along the bone of the bird. This gives the turkey a delicious flavor.
- Adjust the broiling pan about 4 to 5 inches from the heat and boil the turkey, bone side to the heat, for approximately 25 minutes, basting occasionally with a little melted butter. Turn at the end of 25 minutes, brush with butter or olive oil, and broil until nicely browned and cooked through, about 18 to 25 minutes more. Be careful not to overcook, or the white meat will be dry and uninteresting.
- Serve the broiled turkey with matchstick potatoes and a good salad. Drink a Beaujolais such as Juliénas.
- Variation: Marinate the turkey in one cup white wine, 1/2 cup Japanese soy sauce, 3 cloves garlic finely chopped, 1/4 cup olive oil and one tablespoon Tabasco. Turn the turkey several times during the marinating period. Broil as directed and baste with marinating liquid. Serve with fried rice and tiny cooked green beans with crisp, crumbled bacon and onion.

- Coat a 9x13-inch baking pan with cooking spray.
- Bring milk and 1 stick of butter to a slow boil in a saucepan over medium-high heat. Stir in grits, salt, and pepper. Cover, reduce heat to medium-low, and cook, stirring occasionally, until thickened, about 5 minutes. Pour into the prepared baking pan. Place in the refrigerator until firm, at least 1 hour.
- Preheat the oven to 400 degrees F (200 degrees C).
- Remove chilled grits from the refrigerator and cut into rectangular pieces. Remove pieces from the baking pan and then drop them back into the pan randomly, as if they were falling domino tiles. Pour melted 1/2 stick butter over grits and sprinkle with Swiss and Parmesan cheeses.
- Bake in the preheated oven until grits are cooked through and cheese is melted, 25 to 30 minutes.

- Cook bacon until it is crisp. Add salt, pepper and paprika to the bacon fat and keep it warm. Spread the bone side of the turkey halves with some of the bacon fat mixture and grill according to instructions for Epicurean Broiled Turkey . Brush the skin side with bacon fat before turning. Brush the turkey twice more with bacon fat during the cooking process.
- Serve the broiled turkey garnished with the bacon, tiny green peas cooked with onions and dressed with plenty of butter and potatoes boiled in their jackets. Follow this with cole slaw as a separate course. Dress the cabbage with a sauce of sour cream and fresh horseradish. Fresh fruit and cheese round out this homely dinner.

- Prepare broiled chicken in same manner.
