3 cup all-purpose flour
2 teaspoon baking soda
2 teaspoon ground cinnamon
1 teaspoon ground cloves
1 cup vegetable shortening
1 1/2 cup sugar
2 large eggs
1 cup cold black coffee
2 cup chopped apple
1 cup raisins

Steps:

  • Grease and flour a 13-by-9-inch baking pan. Preheat the oven to 350 degrees.
  • Mix together the flour, baking soda, and spices. In a separate large bowl using an electric mixer, cream together the shortening and sugar. Add the eggs and beat well. Mix in the flour mixture, alternating with the coffee, beginning and ending with flour mixture. Fold in the chopped apples and raisins. Pour into the greased pan. Bake 45-55 minutes. Cool cake completely on wire rack. Serves 8-10.

The best apple cake you have ever tasted. If desired, add 1/2 cup nuts and 1/2 cup raisins.

¾ cup vegetable oil
2 eggs
2 cups white sugar
2 ½ cups all-purpose flour
3 cups chopped Granny Smith apples
1 teaspoon salt
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
2 teaspoons baking soda
1 (8 ounce) package cream cheese, softened
1 tablespoon milk
1 teaspoon vanilla extract
1 pinch salt
2 ½ cups confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F(175 degrees C). Grease and flour a 9x13 inch pan.
  • Chop apples finely and place into a large bowl. In a separate bowl, beat eggs and oil together and pour over apples. Let stand while mixing the dry ingredients.
  • in a medium bowl, mix sugar, flour, 1 teaspoon salt, cinnamon, nutmeg and baking soda. Fold into apples, eggs and oil and mix well. Batter will be thick.
  • Pour into prepared 9x13 inch pan, and bake at 350 degrees F ( 175 degrees C) for 45 minutes. Once cool frost with Cream Cheese Icing.
  • To Make Cream Cheese Frosting: In a medium bowl, combine cream cheese, milk, vanilla and pinch of salt. Gradually add sugar, beating until frosting is smooth. Add additional milk, 1 tablespoon at a time, until frosting is desired consistency.

3 cups flour
2 tsp. cinnamon
2 tsp. baking soda
1 tsp. ground cloves
3 medium apples, divided
1 cup butter or margarine
2 cups sugar
2 eggs
1 cup very strong cold coffee
1/2 cup chopped pecans
1/2 cup raisins

Steps:

  • Preheat over to 350 Grease 13x9" baking pan. In small bowl, combine flour, cinnamon, baking soda and cloves. Pare, core and chop 2 apples. In mixing bowl, with electric mixer at medium speed, cream butter and sugar until light and fluffy. Add eggs; beat until well-blended. Beat flour mixture alternately with coffee into creamed mixture. Stir chopped apple into batter with walnuts and raisins. Pour batter into pan. Bake 55-60 minutes or until toothpick inserted in center of cake comes out clean. Cook cake in pan on wire rack. Just before serving, chop remaining apple. Cut cake into 12 pieces. Top with sour cream ahnd apple chunks.

1 cup white sugar
½ cup brown sugar
2 ¼ cups all-purpose flour
¼ teaspoon salt
1 teaspoon baking soda
2 teaspoons ground cinnamon
½ cup vegetable oil
2 eggs, beaten
1 cup sour milk
2 cups apples - peeled, cored and chopped
¼ cup brown sugar
¼ cup white sugar
½ cup chopped walnuts
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. Make the topping by mixing together 1/4 cup brown sugar, 1/4 cup white sugar, chopped walnuts and 1/2 teaspoon cinnamon. Set aside.
  • In large bowl, mix together 1 cup white sugar, 1/2 cup brown sugar, flour, salt, baking soda and cinnamon. Make a well in the center, and pour in the oil, eggs and sour milk. Beat until smooth, then fold in chopped apples.
  • Pour batter into prepared pan. Sprinkle with topping mixture. Bake in the preheated oven for 45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
