CHERRY TEA CAKES

Enjoy this delicious cookie using Gold Medal® all-purpose flour - perfect for dessert.

1 cup powdered sugar
1 cup butter or margarine, softened
2 teaspoons maraschino cherry liquid
1/2 teaspoon almond extract
3 or 4 drops red food color
2 1/4 cups Gold Medal™ all-purpose flour
1/2 teaspoon salt
1/2 cup drained maraschino cherries, chopped
1/2 cup white vanilla baking chips

Steps:

  • Heat oven to 350°F. In large bowl, beat powdered sugar, butter, cherry liquid, almond extract and food color with electric mixer on medium speed until blended. On low speed, beat in flour and salt. Stir in cherries.
  • Shape dough into 1-inch balls. On ungreased cookie sheets, place balls 2 inches apart.
  • Bake 8 to 10 minutes or until edges are light golden brown. Remove from cookie sheets to cooling racks. Cool 20 to 30 minutes.
  • In 1-quart resealable freezer plastic bag, place baking chips; seal bag. Microwave on High 35 to 50 seconds, squeezing chips in bag every 15 seconds, until chips are melted and smooth. Cut small tip from bottom corner of bag; drizzle melted chips over cookies.

1 cup pitted cherries
1 (2 inch) piece fresh ginger, peeled and sliced
3 tablespoons white sugar
4 cups filtered water, divided
4 (2 g) bags green tea
4 lemon slices
1 tablespoon lemon juice, or to taste

Steps:

  • Combine cherries and ginger slices in a glass bowl. Sprinkle sugar over the cherries mixture and cover with 2 cups filtered water.
  • Cover bowl with plastic wrap and refrigerate 2 hours to overnight.
  • Bring 2 cups filtered water nearly to a boil; pour over tea bags in a pitcher. Steep tea for 90 seconds. Squeeze tea bags into pitcher and discard bags.
  • Strain cherry-ginger water into pitcher with green tea, squeezing out excess liquid. Serve with lemon slices and lemon juice.

Steps:

  • Pour all the ingredients, except the cherries, into a shaker filled with ice. Shake a couple of times and pour into a serving glass. Garnish with 2 Michigan cherries on toothpick.

IRISH CHERRY TEA CAKE

A moist and tender cherry cake that's perfect for afternoon tea.

2¼ cups cake flour (unbleached and divided in two)
2½ teaspoons baking powde
⅛ teaspoon salt (just a pinch)
8 ounces glacé cherries (cut each cherry in half and reserve 12 cherry halves for decorating)
6 ounces unsalted butter (1½ sticks)
⅞ cups white sugar (¾ cups plus two tablespoons)
3 medium eggs
4 tablespoons whole milk
1 teaspoon pure vanilla extract
2 tablespoons demerara sugar (sucanat or turbinado sugar can be substituted)

Steps:

  • Preheat the oven to 350° F. Prepare an 8-inch round baking pan with a removable bottom, by lining thebottom with a circle of parchment paper. Use butter to keep the paper in place. Grease the sides of the pan and the top of the parchment paper.
  • Sift half of the cake flour with the salt and into a mixing bowl. Add the cherry halves (except those reserved to decorate the top of the cake.) Toss the cherries to coat them in flour.
  • Siftthe remaining flour into another bowl with the baking powder.
  • Add the butter and sugar to the bowl of an electric mixer. Beat until soft and fluffy.
  • Add one egg with about two tablespoons of the sifted flour and baking powder to the creamed butter mixture, Combine well together. Repeat with the other two eggs.
  • Add the remainder of the flour and baking powder, milk, and vanilla essence. Mix on low speed.
  • Add the flour coated cherries and the remainder of the flour to the mixture. Gently blend with a large spoon.
  • Transfer the batter into the prepared baking tin. Level the top and use the back of a spoon to place a small hollow in the center of the cake to prevent it from rising too high during baking.
  • Decorate the top of the cake with the un-floured cherry halves. Sprinkle with demerara sugar. Bake for about 90 minutes until a knife or toothpick comes out clean. If the cake starts to brown too quickly, make an aluminum foil tent to cover the cake.
  • Remove from the oven and allow to cool in the pan for about 20 minutes. Turn the cake out onto a baking rack and cool completely. Remove the parchment paper from the base before serving. Cut into triangular slices to serve.

A great twist on the traditional tea, made with fresh cheries, black tea and lemon. Hot and iced recipe versions included.

2 cups boiling water
1 tablespoon black tea leaves (or use about 2 black tea bags)
1 cup cherries (pitted and stalks removed)
3 tablespoons sugar (or to taste)
1 tablespoon lemon juice (or to taste)
ice cubes (if making an iced version)

Steps:

  • Boil the water first in a medium sized saucepan and pour over the black tea. Leave to infuse for 3 minutes or so (depending on how strong you like your tea).
  • Add cherries and sugar. Mix and let the sugar fully disolve before letting the whole mixture to simmer for 5 minutes to soften the cherries.
  • Pour the cherries mixture through a fine sieve and using a spoon make sure that you get as much of the cherries through the sieve as possible. Discard the leftover cherries.
  • Add the lemon juice and taste.
  • Serve hot or cool down for iced cherry tea.
  • Leave to cool down first and then move to fridge to chill properly.
  • Serve with extra ice cubes

1 1/4 cups sugar
1/4 cup lemon juice
2 whole star anise
5 black tea bags, steeped in
2 cups water

Steps:

  • Bring water to boil in a medium-sized pot.
  • Add cherries, sugar, lemon juice, and star anise.
  • Simmer for 15 to 20 minutes, until the cherries are almost falling apart.
  • Turn off heat, mix in black tea, and let stand for 1 hour to cool.
  • Strain liquid through a fine mesh sieve, mashing the cherries with a wooden spoon to extract more liquid.
  • Discard solids.
  • Transfer liquid to a pitcher and refridgerate until ready to serve.
