Cherry Bars image

Sweet and tart cherry bars with crispy butter crust. Made with fresh cherries drizzled in a savory custard, these delicious bars are as glorious as the summer sun. Enjoy while the fresh cherries are in season!

Provided by Namiko Chen

Categories     Dessert

Time 1h

Number Of Ingredients 14

4 cups cherries ((fresh, pitted))
2 tsp all-purpose flour (plain flour)
¾ cup unsalted butter ((12 Tbsp; melted))
½ tsp pure vanilla extract
⅔ cup sugar
2 cups all-purpose flour (plain flour)
⅛ tsp kosher salt (Diamond Crystal; use half for table salt)
1 cup unsalted butter ((16 Tbsp))
3 large eggs (50 g each w/o shell)
⅔ cup sugar
⅛ tsp kosher salt (Diamond Crystal; use half for table salt)
½ cup all-purpose flour (plain flour)
1 tsp pure vanilla extract
1 tsp almond extract

Steps:

  • Gather all the ingredients.
  • Preheat oven to 375ºF (190ºC). For a convection oven, reduce cooking temperature by 25ºF (15ºC). Line a 13 x 9-inch (33 x 23 cm) baking dish with parchment paper.
  • Pit cherries and toss them with 2 tsp flour.
  • In the bowl of an electric mixer, combine melted butter, vanilla and sugar. Mix on medium speed until well blended and smooth.
  • Blend in flour and salt and stir until incorporated.
  • Press dough evenly into bottom of prepared baking dish. Bake until crust is golden and slightly puffed, about 18 minutes.
  • When the crust is done, transfer to a wire rack and cool crust in pan.
  • Meanwhile, let's make the filling. Cut the butter into a few pieces and place in a saucepan over medium heat. Melt the butter completely stirring frequently with the spatula.
  • As the butter heats, it will begin to foam and then bubble. After several minutes, the milk solids will start to become brown on the bottom of the pan. Make sure that milk solids do not stick to the pan. Continue stirring until the butter is evenly browned, being careful not to burn. Remove from the heat and pour browned butter into a glass bowl to cool slightly.
  • In the bowl of an electric mixer, combine eggs, sugar, and salt in a medium bowl and whisk all together.
  • Add extracts and blend in flour by ⅓ at a time. Whisk all together until smooth.
  • Gradually blend in browned butter and whisk mixture until completely blended.
  • Arrange cherries over cooled crust.
  • Carefully pour filling evenly over fruit.
  • Bake at 375ºF (190ºC) for about 30 minutes, until filling is puffed and golden. A skewer inserted in the center should come out clean. Cool bars completely in pan on a wire rack.
  • Carefully lift the parchment paper to remove cooled bars from the pan and place them on a cutting board. Cut them into squares using a knife.

CHERRY POWER BARS

Cherry Power Bars image

Got this one from Chow - sounds great, putting her for safekeeping! "We like 18 Rabbits' Funky Figs and Cherry bars, but we knew that we could make them better. We definitely knew we could give them a better name. Enter the Cherry Power Bar. It beats up on wussy energy bars with its tartness and light sweetness, but it's no bully: It's got nice chewiness. Plus with all that wheat germ and flax seed, as well as oats and nuts, it'll power you through your morning or provide a pick-me-up in the afternoon."

Provided by Katzen

Categories     Breakfast

Time 1h

Yield 10 Bars, 10 serving(s)

Number Of Ingredients 14

1 tablespoon unsalted butter, plus more for coating the pan
2 cups rolled oats (not instant)
1/2 cup sliced almonds, raw
1/2 cup walnut halves, raw, finely chopped
1/4 cup wheat germ, raw
2 tablespoons coconut flakes, dried, unsweetened, untoasted
2 tablespoons flax seed meal
1/4 cup honey
3 tablespoons dark brown sugar, packed
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/4 teaspoon fine salt, plus
1/8 teaspoon fine salt
3/4 cup dried cherries, pitted, finely chopped (about 4 ounces)

Steps:

  • Heat the oven to 350°F and arrange a rack in the middle. Coat an 8-by-8-inch baking pan with butter; set aside.
  • Place oats, almonds, walnuts, wheat germ, coconut, and flax seed meal on a rimmed baking sheet, toss with your hands to combine, and spread in an even layer. Bake, stirring halfway through, until walnuts are light golden brown, about 12 minutes. Transfer to a wire rack. Reduce the oven temperature to 300°F.
  • Place honey, brown sugar, measured butter, cinnamon, vanilla, and salt in a medium saucepan over medium-low heat and stir until mixture is smooth and combined and brown sugar has dissolved. Remove from heat and immediately add oat-nut mixture and cherries to the saucepan, stirring until combined. Transfer to the prepared baking pan, spreading the mixture evenly with a spoon.
  • When the mixture is cool enough to handle but is still warm, dip your hands in water to prevent sticking and press the mixture evenly and firmly into the pan. Bake until aromatic, about 10 minutes. Place the pan on a wire rack to cool completely.
  • Remove the granola slab from the pan. Cut it in half to form two rectangles, then cut each rectangle width-wise into 5 bars to form 10 bars total. Wrap each bar in plastic wrap. Store at room temperature for up to 3 days or freeze for up to 3 weeks; let frozen bars come to room temperature before eating.

Categories     Desserts     Pies     Slab Pie Recipes

Time 4h30m

Yield 36

Number Of Ingredients 11

½ cup milk
1 egg, separated
2 ½ cups all-purpose flour
1 teaspoon salt
1 cup cold butter, cut into chunks
1 ½ cups crushed corn flakes cereal
3 (21 ounce) cans cherry pie filling
2 tablespoons white sugar
1 cup confectioners' sugar
2 tablespoons milk
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat 1/2 cup milk and egg yolk together in a bowl. Combine flour and salt in a separate bowl. Cut butter into flour mixture using a pastry blender or fork until mixture resembles coarse crumbs; stir into milk-egg mixture until a ball of pastry dough forms. Separate dough into 2 pieces.
  • Roll 1/2 of the dough on a floured work surface large enough to fit in the bottom and up the sides of a 10x15-inch jelly roll pan. Place dough on pan. Sprinkle crushed corn flakes over dough.
  • Drain 1/3 cup liquid from each can of cherry pie filling and reserve liquid for another use. Carefully spoon cherries over corn flakes layer.
  • Roll remaining dough into an 11x16-inch rectangle on a floured work surface; place on top of cherry layer. Tuck 1/2 inch of dough under the bottom crust and gently seal edges.
  • Beat egg white in a bowl until foamy; brush over top dough layer. Sprinkle white sugar over dough.
  • Bake in the preheated oven until lightly browned, about 1 hour. Transfer to a cooling rack to cool completely, about 3 hours.
  • Whisk confectioners' sugar, 2 tablespoons milk, and vanilla extract together in a bowl until glaze is smooth. Spoon glaze into a plastic bag and snip 1 corner. Slice bars and squeeze glaze onto each bar.
