Cherry Cordials image

You can make classic Cherry Cordials at home. Cherries, Kirschwasser, and dark chocolate come together for the ultimate candy treat.

Number Of Ingredients 6

16 oz jar maraschino cherries, with stems
1/2 cup (4 oz, 120ml) Kirschwasser or liquor of your choice (see note)
2 cups (15 oz, 420g) granulated sugar
1/2 cup (4 oz, 120ml) water
1/4 cup (3 oz, 84g) light corn syrup
16 oz (448g) tempered dark chocolate

Steps:

  • Drain the maraschino cherries, reserving 2 tablespoons of the liquid. Place the cherries back in the jar and pour the Kirschwasser over the cherries. Close the jar and set it aside for at least 12 hours, or overnight.
  • Have a food processor set up near the stove. Combine the sugar, reserved maraschino cherry liquid, water and corn syrup in a saucepan. Bring the liquid to a boil over high heat. Do not stir the syrup once it begins to boil. Reduce the heat to medium high. Dip a pastry brush in water to clean any splatters from the inside of the pan. Place a candy or probe thermometer into the syrup and boil until the temperature reaches 240°F.
  • Remove the pot from the heat and immediately pour the syrup into the food processor. Rinse the thermometer to remove any sugar crystals and set the thermometer into the syrup. Do not disturb the syrup as it cools.
  • Allow the syrup to cool to 120°F. Remove the thermometer. Process the syrup for 3-4 minutes until it thickens and becomes opaque.
  • Pour the fondant into a microwave safe container. Sprinkle 2 teaspoons of water over the fondant to cover the surface. This will prevent it from forming a crust. Cover the container and set aside for several hours or overnight.
  • Line 2 sheet pans with parchment paper or a silicon baking mat. Drain the cherries and blot them dry with paper towels.
  • Warm the fondant in 20 second increments until it is a little warmer than body temperature and loosens up enough to thickly coat the back of a spoon. Don't let the fondant get warmer than 160°F or you'll loose the crystals.
  • Use the stem to lift a cherry and dip it into the fondant, covering the cherry up to the stem. Hold the cherry over the bowl to allow the excess fondant to drip back into the bowl. Set the cherry onto one of the lined sheet pans. Continue dipping all the cherries. You may need to rewarm the fondant if it becomes too thick to dip. You can sprinkle a few drops of water to loosen up the fondant if needed. Don't add too much water or the fondant won't stick to the cherries. Set the cherries aside to dry while you temper the chocolate. Visit this post to see how to temper chocolate.
  • Lift a cherry by the stem and dip it into the chocolate, covering all the fondant and going a little up the base of the stem. Hold the cherry over the bowl to allow the excess chocolate to drip back into the bowl.
  • Set the cherry onto the other lined sheet pan. Continue dipping all the cherries. Allow the chocolate set completely before packing the cherries into a covered container. Store at room temperature. The fondant layer needs a couple of days to melt and become the cordial syrup. Wait at least 2 days before serving

2 cups (1 pt.) heavy cream
1 (14 oz.) can Eagle Brand® Sweetened Condensed Milk
1 (10 oz.) jar maraschino cherries (without stems), well drained and chopped (about 1 cup)
3/4 cup semi-sweet mini chocolate chips
1 tablespoon vanilla extract
1/2 teaspoon almond extract

Steps:

  • COMBINE all ingredients in ice cream freezer container; mix well. Freeze according to manufacturer's instructions. REFRIGERATOR-FREEZER METHOD: OMIT half-and-half. Whip heavy cream. In large bowl, combine sweetened condensed milk, 1/2 cup chopped maraschino cherries, 1/2 cup mini chocolate chips, 2 teaspoons vanilla and 1/4 teaspoon almond extract; mix well. Fold in whipped cream. Pour into 9 x 5-inch loaf pan or other 2 quart container. Cover. Freeze 6 hours or until firm.

1/2 pound sour cherries, washed, stemmed, and pitted
1 cup sugar
2 cups rectified spirits, or premium vodka

Steps:

  • Gather the ingredients.
  • Place cherries in a 1-quart (1-liter) jar. Pour sugar over cherries (do not stir or shake).
  • Slowly pour the spirits or vodka over the cherries until the jar is full (leave a slight gap at the top). Make sure cherries are covered but do not stir or shake.
  • Tightly close the jar and place in a pantry or closet for three months at room temperature.
  • After three months, strain the ​nalewka and rebottle. It may be drunk immediately or aged further.
  • Serve and enjoy.

5 tablespoons cocoa (scant)
2 tablespoons oil
1/2 cup warm water
2/3 cup sugar
1/4 cup butter

Batter
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 1/4 cup powdered sugar
1/4 cup butter, softened
1/2 cup milk
1 egg
1/2 teaspoon vanilla extract

2/3 cup chopped medium almonds
1/2 can (20 ounce size) cherry pie filling

Steps:

  • For Crust: Combine until crumbly flour, finely chopped almonds, sugar, butter, milk and almond extract. Press into bottom and sides of a lightly greased deep 10-inch glass pie dish. Preheat oven to 450 degrees F and bake for about 5 minutes or until light golden. Cool. For Chocolate Sauce: Combine in a small saucepan cocoa, oil and warm water. Heat until mixture is smooth. Add sugar. Bring to a boil, stirring constantly. Remove from heat and add 1/4 cup butter and vanilla. Stir until butter melts. Set aside. For Batter: In a small mixer bowl of electric mixer, combine flour, sifted with baking powder, salt, powdered sugar, butter, milk, egg, vanilla, and almond extract. Beat for 2 minutes or until smooth. To Assemble: Have ready chopped medium almonds and half a can of cherry pie filling. Spoon cherry pie filling into bottom of crust. Carefully spoon all of the batter to cover cherries. Stir chocolate sauce and pour over batter. Lastly sprinkle with almonds. Preheat oven to 325 degrees F and bake pie for 45-50 minutes or tests done. Cool pie, then chill. Serve with whipped cream.

3 tablespoons butter, softened
3 tablespoons corn syrup
2 cups sifted confectioners' sugar
1 pound chocolate confectioners' coating

Steps:

  • Drain cherries and set on paper towels to dry.
  • In a medium bowl, combine butter and corn syrup until smooth. Stir in confectioners' sugar and knead to form a dough. Chill to stiffen if necessary. Wrap each cherry in about 1 teaspoon of dough. Chill until firm.

2/3 cup white sugar
3 tablespoons flour
3 tablespoons cornstarch
2 1/2 cups milk
3 large egg yolks
1 large egg
3 tablespoons butter
1 teaspoon pure vanilla extract
1 teaspoon almond extract
1/2 cup semi-sweet chocolate chips
1 tablespoon water
1 pre-baked 9 inch pie shell
1 (17 ounce) can pitted sweet cherries, drained and patted dry
1/2 cup heavy cream
1 cup semisweet chocolate morsel
1 tablespoon butter, at room temp

Steps:

  • In a heavy saucepan mix together sugar, flour, and cornstarch.
  • Stir in some of the milk until a heavy paste forms.
  • Gradually stir in remaining milk.
  • Cook over medium heat, stirring until nicely thickened, aroound 8-10 minutes.
  • Whisk together egg yolks and egg until slightly frothy.
  • Stir in 1 cup of the thickened milk mixture whisking well.
  • Pour into remaining milk mixture in pan.
  • Cook over medium heat, stirring constantly until bubbles JUST appear.
  • Remove from heat.
  • Stir in butter, vanilla and almond extracts, continuing to stir until the butter is melted and well incorporated.
  • Press a piece of plastic wrap on the surface and cool completly.
  • In the top of a double boiler over simmering water melt the chocolate morsels with water.
  • Spread evenly over the bottom of the pre-baked crust.
  • Arrange cherries over chocolate layer.
  • Pour filling slowly around the cherries and over crust.
  • In a medium saucepan heat cream until small bubbles appear around edge of pan.
  • Remove from heat.
  • Stir in chocolate morsels until well combined and glossy.
  • Stir in butter.
  • Pour into a bowl, cool until slightly thickened.
  • Pour frosting over pie smothing the top evenly.
  • Chill.

1 medium lemon
2 pounds whole, unpitted Northwest sweet cherries
1 tablespoon green cardamom pods
1 (1-inch) knob fresh ginger
2 cups water
2 cups unrefined cane sugar

Steps:

  • Finely grate the lemon peel into a small bowl, avoiding any bitter white pith. Then slice the lemon in half cross-wise, and then squeeze its juice into a separate bowl. Leave both the finely grated lemon peel and the juice on the countertop while you prepare the other ingredients.
  • Dump the cherries into a large, heavy pot. Next, scoop lemon zest into the pot over the cherries. Drop in the cardamom pods and ginger. Then, pour in the water.
  • Bring the ingredients to a boil over medium-high heat, and then immediately turn down the heat to medium-low. Continue simmering the cherries and spices together over medium-low heat for 10 minutes.
  • Arrange a fine-mesh sieve over a bowl or wide-mouthed pitcher, and then line it with cheesecloth or butter muslin. Pour the cherries into the lined sieve, allowing the juice flow into the bowl. Press the cherries with a wooden spoon to extract as much juice as you can, and then discard the spent cherries, preserving the juice.
  • While the juice is still hot, stir in the sugar until it dissolves completely, and then stir in the lemon juice.
  • Pour the finished cordial into a jars or flip-top bottles, and seal them. Let it cool to room temperature, and then transfer it to the fridge where it will keep about 6 weeks. Alternatively, freeze the cordial in glass jars (allowing at least 2 inches of head space) up to 6 months.
  • Spoon 2 to 4 tablespoons into a glass, and then fill with sparkling water.

1-1/2 cups all-purpose flour
1/2 teaspoon salt
1/2 cup shortening
1/4 cup ice water
FILLING:
2 cans (16 ounces each) tart cherries
1 cup sugar
3 tablespoons quick-cooking tapioca
1/4 teaspoon almond extract
1/4 teaspoon salt
Red food coloring, optional
1 tablespoon butter

Steps:

  • In a large bowl, combine flour and salt; cut in shortening until crumbly. Gradually add water, tossing with a fork until dough forms a ball. Divide dough in half. Roll out one portion. Line a 9-in. pie plate with bottom crust; trim pastry even with edge. , Drain cherries, reserving 1/4 cup juice. In a large bowl, combine the sugar, tapioca, extract, salt, food coloring if desired and reserved juice. Gently stir in the cherries; let stand for 15 minutes., Pour into the crust. Dot with butter. Roll out remaining pastry; make a lattice crust. Seal and flute edges. Bake at 375° for 55-60 minutes. Cool on a wire rack.

3 c marshmallows, mini
1/2 c milk
1/2 c maraschino cherries,drained and chopped
1/4 c cherry liqueur
1 c whipping cream, whipped
1 9 inch baked chocolate cookie crumb crust

Steps:

  • 1. Combine marshmallows and milk in a 2 1/2 qt. glass mixing bowl. Microwave, uncovered, at power level high for 4 to 5 min. or until marshmallows melt and puff. Stir until smooth. Add chopped cherries and liqueur, blending throughly. Let cool to room temp. about 30 min. Fold whipped cream into marshmallow mixture and turn filling into prepared pie crust. Refrigerate for at least 4 hours. Garnish, if you wish, with additional whipped cream and maraschino cherry halves.

1 box devils food cake mix, moist variety
12 oz cream cheese
14 oz can of sweetened condensed milk
2 eggs
2 tsp vanilla extract
1 can(s) cherry pie filling
10 oz dark chocolate chips
22 fresh cherries for garnish
2 can(s) easy frost no fuss frosting

Steps:

  • 1. Preheat oven to 350 degrees. In a large mixing bowl combine cake mix, eggs, condensed milk, vanilla, cherry filling, softened cream cheese and mix with a mixer until smooth. Fold in chocolate chips.Put a cupcake foil in each slot of cupcake pan and fill 3/4 full with batter. Bake according to cake mix directions, usually 18-22 minutes. Allow cupcakes to cool completely and frost. Top with a fresh cherry if desired.

1 1/2 pounds fresh or thawed frozen sour cherries, pitted (about 3 cups), plus more for garnish (optional)
1 1/2 cups granulated sugar
1 1/2 cups Muscat wine
1 1/2 tablespoons fresh lemon juice
1/8 teaspoon coarse salt
Ice cubes
1 cup (8 ounces) gin
3 cups (24 ounces) seltzer water
8 strips lemon zest (optional)

Steps:

  • Bring cherries, sugar, wine, lemon juice, and salt to a gentle simmer over medium-low heat, stirring to dissolve sugar. Cook for 4 minutes. Using a slotted spoon, transfer cherries to a bowl. Raise heat to medium-high, and cook until mixture is syrupy, about 5 minutes. Let cool completely. Return cherries to syrup. (Cherries in syrup can be refrigerated in an airtight container for up to 1 month.)
  • Fill 8 glasses with ice. Pour 2 tablespoons gin and 2 tablespoons syrup into each glass, and add 5 cherries. Divide seltzer among glasses (1/4 cup plus 2 tablespoons each). Garnish with fresh cherries and lemon zest strips, if desired. Serve immediately.

  • In a large bowl, mix the butter, corn syrup, salt, and powdered sugar until fully incorporated. Then knead until completely smooth. If the dough is too soft, place it in the refrigerator to chill for a bit.
  • Flatten a slightly mounded teaspoon of dough into a circle and shape it around each cherry. If you have very large cherries, you will probably need to use a bit more dough.
  • Place dough wrapped cherries on a wax paper covered cookie sheet. Chill for at least a few hours or overnight.
  • Drain cherries and place them on a paper towel lined platter to dry. Patsy always uses the cherries without stems. I experimented with both stemmed and stemless. The stemmed cherries take just a tiny bit more time to wrap with the dough, but a bit less time to dip in the chocolate. And they definitely have a different look, making for a really fun presentation. But I decided to make most of mine without the stem, mostly because I knew they would be easier for me to store.
