After dining at a cafe in Michigan about 10 years ago, I tried duplicating this scrumptious twist on Chicken Salad at home. The cherries can be ordered on-line these days, which makes it much easier for those of us living where cherries are not readily available. Regular milk can be substituted for buttermilk, if necessary.

3 cooked, boneless chicken breast halves, diced
⅓ cup dried cherries
⅓ cup diced celery
⅓ cup toasted, chopped pecans
⅓ cup low-fat mayonnaise
1 tablespoon buttermilk
½ teaspoon salt
½ teaspoon ground black pepper
⅓ cup cubed apples

Steps:

  • In a large bowl, combine the chicken, dried cherries, celery, nuts, mayonnaise, milk, salt and pepper and apple if desired. Toss together well and refrigerate until chilled. Serve on toasted cracked wheat bread or croissants.

2/3 cup dried cherries

4 teaspoons buttermilk

1/8 teaspoon pepper
7 croissants, split

Steps:

  • In a large bowl, combine the chicken, cherries, celery, apple and pecans. In another bowl, combine the mayonnaise, buttermilk, salt and pepper; add to chicken mixture and mix well. Spoon 1/2 cup chicken salad onto each croissant.

I had a similar chicken salad at a restaurant and created my own version. It may seem like an odd combination, but the ingredients work really well together. My children love it, and it only takes a few minutes to cut everything up-so easy!

This cherry chicken salad is sweet and savory-perfect for summer when cherries are in season!

20 cherries (pitted and halved or quartered)
2 tsp granulated sugar
1 lime lime juice
3 cups baby arugula
1/2 English cucumber (cubed and skin-on)
4 oz feta cheese (crumbled)
1/2 cup sliced almonds
3 Tbsp olive oil
1 pinch kosher salt
2 chicken breasts (grilled, sliced)

Steps:

  • Place prepared cherries in a small mixing bowl. Add sugar and lime juice then stir to coat. Set aside to rest for 15 minutes.
  • Remove cherries from bowl, reserving the liquid for dressing. Add cherries, arugula, cucumber, feta and almonds to a large salad bowl toss lightly then set aside.
  • Add olive oil and salt to reserved dressing. Whisk until dressing comes together to form an emulsion. Pour dressing over salad and toss until combined.
  • Place sliced grilled chicken (warm or cold) on top and serve immediately. This salad works great served on a platter with the chicken as the hero adorning the top. However, serving it in a salad bowl works great too.

3 cups cooked chicken breasts, chopped fine
2/3 cup dried cherries
1/3 cup celery, chopped
1/3 cup red onion, chopped
1/3 cup tart apple, chopped
1 hard-boiled egg, chopped
1/3 cup sliced almonds, toasted
3/4 cup light mayonnaise
2 tablespoons lemon juice
salt and pepper

Steps:

  • In a large bowl, combine the chicken, cherries, celery, onion, apple, egg and sliced almonds.
  • In another small bowl, combine the mayo and lemon juice.
  • Add to chicken mixture and mix well.
  • Season with salt and pepper to taste.
  • Refrigerate for 1 hour to allow flavors to blend.
  • Serve on Croissants or crackers.
