Cherry-Walnut Balls image

A surprising and delicious filling of maraschino cherries and toasted walnuts makes these sweet bites irresistible. Powdered sugar makes a quick (and delicious) topper. They will be well received as gifts also.

Number Of Ingredients 8

1/4 cup coarsely chopped maraschino cherry
1 cup butter, softened
1/2 cup powdered sugar
1/2 teaspoon almond extract
1/2 teaspoon vanilla
2 cups all-purpose flour
3/4 cup chopped walnuts, toasted*
powdered sugar

Steps:

  • Preheat oven to 325°F
  • Drain maraschino cherries on paper towels; pat dry to remove any excess liquid.
  • Set cherries aside.
  • Beat butter in a large mixing bowl with an electric mixer on medium to high speed for 30 seconds.
  • Beat in the 1/2 cup powdered sugar, almond extract, and vanilla until combined, scraping side of bowl occasionally.
  • Beat in as much flour as you can with the mixer.
  • Stir in any remaining flour, nuts, and cherries with a wooden spoon.
  • Shape dough into 1-inch balls.
  • Place 2 inches apart on ungreased cookie sheets.
  • Bake in preheated oven for 18 to 20 minutes or until bottoms are lightly brown.
  • Cool 5 minutes on cookie sheets on wire racks.
  • Roll warm cookies in powdered sugar to coat and transfer cookies to wire racks and cool completely.
  • If desired, roll cooled cookies in additional powdered sugar before serving. Makes about 48 balls.
  • *NOTE: To toast nuts, spread them in a single layer in a shallow baking pan. Bake in a preheated 325F oven for 8 to 10 minutes or until nuts are slightly golden brown, stirring once or twice. Cool completely. Chop nuts and set aside.
  • TO STORE: Place cookies in layers separated by pieces of waxed paper in an airtight container; cover. Store at room temperature for up to 3 days or freeze for up to 3 months. Thaw cookies, if frozen, before serving.

I usually make this recipe for Christmas (using the green cherries) & for Valentine's Day (using the red cherries). These are real easy to make & very delicious.

cup(s) 2 1/4 cups all-purpose flour
cup(s) 1/2 cup granulated sugar
cup(s) 1 cup butter
- 3 eggs
cup(s) 1-1/2 cups packed brown sugar
teaspoon(s) 3/4 teaspoon bakingpowder
teaspoon(s) 3/4 teaspoon salt
teaspoon(s) 3/4 teaspoon vanilla
jar(s) 1-6 ounce jar (red or green) maraschino cherries, drained & chopped (reserving 1/4 cup liquid)
cup(s) 1/2 - 1 cup chopped walnuts
cup(s) 2 cups powdered sugar
tablespoon(s) 2 -4 tablespoon butter, softened

Steps:

  • Lightly grease a 13x9x2- inch baking pan; set aside. In a large bowl, combine flour & granulated sugar, cut in 1 cup butter until crumbly. Press into prepared pan. Bake in a 350 degree F. oven for 20 minutes.
  • Meanwhile, in a medium bowl stir together eggs, brown sugar, baking powder, salt & vanilla. Add cherries & nuts, Spread on top of baked crust. Bake 25 minutes more. Cool on wire rack.
  • Combine powdered sugar, tablespoons butter & enough of reserved cherry liquid (3-4 tablesoons) to make icing of spreading consistency. Spread or pipe over cooled bars.

2 ¼ cups all-purpose flour
½ cup white sugar
1 cup butter, softened
2 eggs
1 cup packed brown sugar
½ teaspoon salt
½ teaspoon baking powder
1 teaspoon vanilla extract
½ cup chopped walnuts
½ cup flaked coconut
1 (4 ounce) jar maraschino cherries
1 teaspoon butter
1 cup confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (180 degrees C).
  • Mix together flour, white sugar and butter or margarine. Mix until crumbly. Press into a 9 x 13 inch pan. Bake for 20 minutes or until lightly browned.
  • Beat eggs, sugar, salt, baking powder, and vanilla. Drain and chop cherries, reserving liquid. Stir chopped cherries, nuts, and coconut into egg mixture. Pour on top of crust.
  • Bake 25 min. Cool.
  • Combine 1 teaspoon butter and 1 cup confectioner's sugar with enough liquid from cherries until spreadable. Frost bars. Sprinkle with coconut when icing is set.

2 cups Gold Medal™ Gluten Free Oat Flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter, softened
1/2 cup packed brown sugar
1/3 cup granulated sugar
1 egg
1 teaspoon pure vanilla extract
1 cup dark chocolate chips
1/2 cup chopped dried cherries
1/2 cup coarsely chopped walnuts

Steps:

  • Heat oven to 375°F. In medium bowl, mix oat flour, baking soda and salt; set aside.
  • In large bowl, beat softened butter and sugars with electric mixer on medium speed 3 to 5 minutes or until fluffy, scraping side of bowl occasionally.
  • Beat in egg and vanilla until smooth. Stir in oat flour mixture just until blended. Stir in chocolate chips, cherries and walnuts.
  • Onto ungreased cookie sheets, drop dough by rounded tablespoonfuls 2 inches apart.
  • Bake 10 to 12 minutes or until tops are dry and light brown. Cool 3 minutes; remove from cookie sheet to cooling rack. Cool completely, about 15 minutes. Store covered in airtight container.
