This crisp is a tasty change from a typical tomato salad.

1 1/2 pounds (about 5 cups) cherry tomatoes
2 slices white sandwich bread
1/4 cup grated Parmesan cheese
2 tablespoons fresh parsley leaves
1 tablespoon olive oil
1 chopped garlic clove
Coarse salt and ground pepper

Steps:

  • Preheat oven to 400 degrees. In a food processor, combine bread, Parmesan cheese, parsley leaves, olive oil, and garlic; season with coarse salt and ground pepper. Pulse until bread is very coarsely chopped, 4 to 6 times.
  • In an 8-inch square baking dish, arrange cherry tomatoes in a single layer; sprinkle with crumb mixture. Bake until crust is browned and tomatoes are tender, 20 to 25 minutes.

1 (10 ounce) basket cherry tomatoes, halved
1 tablespoon olive oil
1 teaspoon minced garlic
salt and ground black pepper to taste
4 ounces angel hair pasta
3 basil leaves, cut into thin strips, or more to taste
1 dash red pepper flakes
2 tablespoons fresh grated Parmesan cheese, or to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Combine tomatoes, olive oil, garlic, salt, and pepper in a bowl until well mixed; spread on a shallow-sided baking sheet.
  • Bake in the preheated oven until tomatoes are soft and wrinkled, 25 to 30 minutes.
  • Bring a large pot of lightly salted water to a boil. Cook angel hair pasta in the boiling water, stirring occasionally until tender yet firm to the bite, 4 to 5 minutes. Drain; reserving a small amount of cooking water.
  • Spoon tomatoes with their juices into a small saucepan; add basil and red pepper flakes. Mix in reserved cooking water to thin tomato mixture to desired consistency. Cook and stir over low heat until warmed, about 5 minutes; stir in pasta. Top with Parmesan cheese before serving.

This is a very delicious way to use an overabundance of cherry tomatoes.

4 cups halved cherry tomatoes
¼ cup vegetable oil
3 tablespoons cider vinegar
1 teaspoon dried parsley
1 teaspoon dried basil
1 teaspoon dried oregano
½ teaspoon salt
1 ½ teaspoons white sugar

Steps:

  • In a small bowl or cup measure, mix together oil, apple cider vinegar, herbs, salt, and sugar.
  • Pour dressing over cherry tomatoes in a serving dish, and gently stir to coat. Chill for at least 2 hours. Gently stir from bottom to top, coating all tomatoes, before serving.

20 fresh basil leaves, chopped or julienned
Sea salt

Steps:

  • Preheat the oven to 400 degrees F.
  • Toss the tomatoes lightly with olive oil on a sheet pan. Spread them out into one layer and sprinkle generously with kosher salt and pepper. Roast for 15 to 20 minutes, until the tomatoes are soft.
  • Transfer the tomatoes to a serving platter and sprinkle with basil leaves and sea salt. Serve hot or at room temperature.

1 lb large cherry tomatoes (about 10 to 12 large cherry tomatoes)
1/4 teaspoon sea salt
2 tablespoons extra virgin olive oil
1 cup fresh parsley leaves
2 garlic cloves

Steps:

  • Heat the oven to 325 degrees.
  • Halve the tomatoes and squeeze out the seeds, and place them cut-side up in a 9-by-9-inch glass baking dish.
  • Sprinkle the salt and olive oil over them and bake for 1 1/2 to 2 hours, until they're a little caramelized around the edges and slightly shriveled.
  • Mince the parsley and the garlic together on a cutting board until very fine to make the persillade; set aside.
  • When the tomatoes are done, take them out of the oven, sprinkle the persillade over them and return them to the oven for a few minutes, which will cook the garlic a little without compromising the freshness of the parsley.
  • Serve immediately or later at room temperature.

  • Add the cherry tomatoes and cilantro, and pulse until you reach the desired consistency.
  • If there is a lot of excess liquid, drain some out. Add the lime juice and salt, and stir.
