PILLSBURY'S CHERRY POM-POMS
A bake-off recipe; I haven't tried it yet. I wouldn't use sugarfree jello and pudding in this recipe.

Steps:
- Combine flour, baking powder, oil, jello, pudding mix, egg yolks, milk and almond extract. Blend well. Stir in nuts and 2/3 cup coconut.
- Shape into balls, using a rounded teaspoons for each. Slightly beat egg whites with water. Roll balls in egg whites, then in remaining coconut. Place on ungreased cookie sheets, pressing down to flatten.
- Bake at 350 for 15 to 18 minutes or until delicately browned.

CHERRY MASH TRUFFLES
These Cherry Mash Truffles are a delicious copycat of Cherry Mash candies featuring a soft cherry center, covered in chocolate peanut coating.

- Into the bowl of your stand mixer, place butter and 1 cup of powdered sugar. Mix to combine. Add another cup of powdered sugar, followed by milk. Mix to combine. Add remaining of powdered sugar, cherry emulsion and food coloring. Mix to combine.
- Using a 2 teaspoon cookie scoop, scoop cherry mixture into balls and place onto a sheet pan. Once all mixture has been rolled into balls, place into freezer to chill for 2 hours or until solid.
- Melt chocolate and coconut oil together. Stir in peanuts.
- In batches, dip cherry balls into the chocolate and place onto a parchment lined cookie sheet. Once all cherry balls are dipped, place into freezer to set. Store in refrigerator.

GINGER TRUFFLES
Couldn't find a suitable ginger chocolate/truffle for a friend who isn't allowed too much dairy. These were perfect, easy and very gingery :) I guess you could add some nuts to this mix, or even roll them in nuts or coconut. Have fun with it.

Steps:
- Pulverize the biscuits in your food processor until fine crumbs.
- Add the ginger and process 30 seconds, re-arrange and process another 30 seconds.
- Add the chocolate, broken into small pieces, and process until it all comes together in a tacky ball.
- Spread on a tray and refrigerate until you can easily roll it into small balls.
- Put the balls on baking paper, and return to fridge overnight.
- Melt the extra chocolate and dip each ginger ball to coat, refrigerate until hardened.
- NOTE ADDED: I just made these using ginger seconds from the ginger factory, and because these bit were smaller, there was more sugar in the mix, and I found I had to add 100g chocolate to make it come together. I also had to take the mix out and re-mix in 2 lots.

SCOTTISH CHOCOLATE SHORTBREAD TRUFFLES
A melt in your mouth mixture of dark chocolate,Scottish shortbread,and whisky, this is the easiest truffle recipe I've ever made...the Drambuie is subtle so if you prefer a strong taste of it, double the measurement.Chocolate should be 55-70% cocoa solids. This recipe is from "Scot's Cooking" by Sue Lawrence.

Steps:
- Melt chocolate and butter together over low heat, then stir in the shortbread crumbs and Drambuie until mixed thoroughly.
- Transfer to a shallow bowl and leave to cool,then chill for a couple of hours to firm up.
- Spoon out some of the mixture and shape it into balls with the palms of your hands, at first the mixture will be stiff,but it softens quickly in your hands.
- Roll each ball in Cocoa powder and set aside until all have been dusted.
- The truffles will keep for several days in an airtight tin.

- Preheat oven to 250 degrees F.
- Beat the egg whites until stiff, starting on a low speed and gradually on a higher speed.
- Then start adding the sugar, a tablespoon at the time, keep beating until you have a thick and glossy meringue.
- Line baking trays with paper.
- Using a piping bag with a plain nozzle, pipe a straight meringue bone/line of approx 4 inch long, pipe 2 meringue balls at each end of the bone/line.
- Take of any pointy bits meringue on the balls with a small knife or use scissors.
- Bake the bones for 1 ¼ to 1-½ hours until they have dried out, let them cool on the paper.
- If you like the bones to look more brittle, then mix in some chopped nuts.
- The yield will depend on how large you make the bones and on the size of the nozzle.

- In a small bowl, combine cherries and brandy; cover and let soak for 1 hour or until cherries are softened., Place dark chocolate in a small bowl. In a small saucepan, bring cream just to a boil. Pour over chocolate; whisk until smooth. Stir in extract and soaked cherries with liquid. Cool to room temperature, stirring occasionally. Refrigerate for 1 hour or until firm., Shape into 1-in. balls. Place on baking sheets; cover and refrigerate for at least 1 hour., In a microwave, melt milk chocolate; stir until smooth. Dip half of the balls into milk chocolate, allowing excess to drip off. Place on waxed paper; let stand until set., Melt dark chocolate; stir until smooth. Dip remaining balls into dark chocolate, allowing excess to drip off. Place on waxed paper; let stand until set. Drizzle with melted chocolate and decorate with pearl dust as desired. Store in an airtight container in the refrigerator.

- In a small saucepan, bring the cream, butter and sugar to a boil, stirring constantly. Remove from the heat; stir in chocolate until melted. EGGNOG TRUFFLES
I found this McCormick recipe in a magazine. McCormick suggest dipping the truffles in two batches as the coldness of the truffles may cause the melted chocolate to harden. Cooking time is chill time.

Steps:
- Melt 8 oz of the chocolate as directed on the package. Beat cream cheese, sugar, nutmeg, and extract in large bowl with electric mixer on medium speed until well blended and smooth. Add melted chocolate and beat until well mixed. Cover.
- Refrigerate 4 hours or until firm. Shape into 24 (approx 3/4 inch) balls. Place on waxed paper-lined tray. Refrigerate until ready to dip.
- Coat only 12 truffles at a time. Melt 4 oz of the remaining chocolate in a small microwavable bowl on medium 1 1/2 minutes, stirring after one minute. Using a fork, dip 1 truffle at a time into the chocolate. Place on wax paper-lined tray. Sprinkle truffles with nutmeg. Repeat until all truffles are dipped.
- Refrigerate 1 hour or until chocolate is set.
- Store truffles in refrigerator up to one week.
