DRIED CHERRY-APPLE STUFFING

Dried Cherry-Apple Stuffing image

Go way beyond bread crumbs with a stuffing recipe fortified with apples, dried cherries and chopped pecans. What a substantial-and savory-side.

Provided by Betty Crocker Kitchens

Categories     Side Dish

Time 1h10m

Yield 24

Number Of Ingredients 7

1/2 cup butter or margarine, melted
1 large onion, finely chopped (1 cup)
1 package (16 oz) herb-seasoned stuffing mix crumbs
2 medium red apples, chopped (2 cups)
1 1/2 cups dried cherries
1 cup chopped pecans
2 1/2 cups Progresso™ chicken broth (from 32-oz carton)

Steps:

  • Heat oven to 325°F. Grease 13x9-inch (3-quart) glass baking dish with shortening or cooking spray. In 8-inch skillet, melt butter over medium heat. Add onion; cook 4 to 6 minutes, stirring occasionally, until tender.
  • In large bowl, thoroughly mix cooked onion and remaining ingredients. Use 4 cups of the stuffing to fill body cavities of 12-pound turkey (do not pack stuffing because it will expand during roasting). Place remaining stuffing in baking dish. Cover with foil; refrigerate until ready to bake.
  • Roast stuffed turkey as directed in recipe. Bake stuffing in baking dish with turkey for the last 40 to 50 minutes of baking time or until thoroughly heated (165°F).

Provided by Martha Stewart

Categories     Food & Cooking     Dinner Recipes     Dinner Side Dishes

Time 1h

Number Of Ingredients 13

1 loaf crusty white bread, cut into 3/4-inch pieces (8 cups)
3 tablespoons unsalted butter, plus more for baking dish
1 medium yellow onion, diced medium
2 large celery stalks, diced medium
4 garlic cloves, roughly chopped
1 cup packed dried tart cherries
1 cup roughly chopped toasted pecans
2 tablespoons chopped fresh sage leaves
1 tablespoon crushed fennel seed
Coarse salt and ground pepper
1/2 cup roughly chopped fresh parsley leaves
3 large eggs, lightly beaten
3 cups low-sodium chicken broth

Steps:

  • Preheat oven to 400 degrees, with racks in middle and lower thirds. On two rimmed baking sheets, arrange bread in a single layer. Toast until dry and pale golden brown, 10 to 12 minutes. Let cool.

CHERRY-PECAN STUFFED TURKEY

Cherry-Pecan Stuffed Turkey image

Dried cherries add a hint of sweetness to the traditional stuffing in this recipe; the chopped pecans lend a satisfying crunch.

Provided by Allrecipes Member

Time 3h45m

Yield 10

Number Of Ingredients 13

¾ cup chopped onion
¾ cup butter
3 tablespoons sweet Marsala, dry sherry or chicken broth
¾ teaspoon salt
¾ teaspoon paprika
¾ teaspoon dried thyme, crushed
¼ teaspoon ground white pepper
6 cups soft bread crumbs
1 ½ cups sliced celery
1 cup dried tart cherries
¾ cup coarsely chopped pecans
¼ cup chicken broth
1 10- to 12-pound turkey

Steps:

  • For stuffing, in a medium skillet, cook onion in butter until tender but not brown. Stir in the Marsala, sherry or broth; salt; paprika; thyme and white pepper. Transfer the ingredients to a large bowl. Add bread crumbs, celery, cherries and pecans; toss to mix well. Drizzle with the chicken broth; toss.
  • Spoon some of the stuffing into the neck cavity of the turkey; fasten the neck skin with a skewer. Lightly spoon the remaining stuffing into the body cavity. Tie the drumsticks to the tail. Place the turkey, breast side up, on a rack in a shallow roasting pan. Insert a meat thermometer into the thigh muscle.
  • Roast the turkey, uncovered, in a 325 degree F. oven for 3 to 3-3/4 hours or until the meat thermometer registers 180 degrees F. to 185 degrees F. (cut string between drumsticks when the bird is two-thirds done). Let roasted turkey stand, covered, 15 to 20 minutes before carving.

  • In a large skillet, heat one tablespoon of the butter and the olive oil over medium-low heat. When butter has melted and begins to sizzle, add the onions and garlic. Cook, stirring, for about 8 minutes, or until the onions are soft. Season with half the thyme and the salt, and pepper. Pour the celery mixture from the skillet on top of the bread and gently toss to mix all the ingredients. Place the skillet back over low heat. Add 1 cup milk and the remaining 1 tablespoon butter and simmer for 2 to 4 minutes, using a spatula to scrape up any bits on the bottom of the skillet. Pour 1 cup of the hot milk mixture over the bread and toss; the stuffing should be somewhat moist. If the stuffing seems dry add the remaining 1/2 cup milk. Season to taste. Makes 8 to 10 (1/2 cup) servings plus leftovers.
