My mom always makes this for Thanksgiving and all of my siblings have carried on the tradition. The secret is in the topping.

1 (6 ounce) package cherry-flavored gelatin (such as JELL-O®)
2 cups hot water
1 (8 ounce) can crushed pineapple, juice drained and reserved
3 bananas, sliced
1 ½ cups cold water
1 cup miniature marshmallows, or as needed
¾ cup white sugar
2 tablespoons all-purpose flour
1 egg
1 (8 ounce) package cream cheese, softened
1 (8 ounce) container frozen whipped topping, thawed

Steps:

  • Dissolve gelatin completely in 2 cups hot water and pour into desired mold. Mix crushed pineapple, bananas, and 1 1/2 cup cold water into gelatin mixture; top with miniature marshmallows. Chill until firm.
  • Whisk reserved pineapple juice, sugar, flour, and egg in a saucepan over low heat and cook, whisking constantly, until mixture almost comes to a simmer and becomes thick, about 5 minutes. Mix cream cheese into sauce, transfer to a large bowl, and cool to room temperature. Stir whipped topping into cream cheese mixture. Spread over gelatin. Chill thoroughly before serving.

Black Cherry Jello Salad with Cream Cheese and Pecans is an elegant side dish or dessert with a deep fruity flavour that is so refreshing.

1 package black cherry jello (or wild cherry or plain cherry )
1 cup boiling water
1 15 oz can Bing cherries (using all the juice and half of the cherries )
2 oz cream cheese
1/4 cup raw pecans (roughly chopped )

Steps:

  • Drain the can of cherries, reserving the juice into a measuring cup. Add cold water to the juice to make a total of 1 ¼ cups liquid and place in the fridge to chill.
  • Dissolve Jello in 1 cup of boiling water in an attractive serving bowl. Stir until totally dissolved and there are no visual Jello granules remaining.
  • Stir the cold cherry juice/water combination into the warm Jello thoroughly.
  • Refrigerate until partially set. In the meantime, check if the cherries are pitted. Cut the cherries in half if you prefer smaller bites of cherry. (I use half of the cherries but all of the juice in the can). Cut the cream cheese into small cubes.
  • Roughly chop the pecans and measure out ¼ cup. Add cherries, cream cheese and roughly chopped pecans to partially set Jello. Refrigerate for at least 2 hours.

3 tablespoons cherry preserves
½ cup extra-virgin olive oil
salt and ground black pepper to taste
1 (10 ounce) package mixed salad greens
2 medium fresh pears, peeled and diced
½ cup dried cherries
½ cup chopped pecans
¼ medium red onion, finely chopped
⅓ cup crumbled Gorgonzola cheese

Steps:

  • Combine balsamic vinegar and cherry preserves for vinaigrette in a small bowl. Gradually whisk in olive oil until emulsified. Season with salt and pepper.
  • Toss mixed greens, pears, cherries, pecans, red onion, and vinaigrette in a large salad bowl.
  • Evenly distribute salad among four individual salad bowls and top with Gorgonzola cheese.

6 ounces sugar-free cherry gelatin
3 ounces fat free cream cheese
1 cup crushed pineapple
1 (16 ounce) can cherries, packed in water
1/2 cup pecans, chopped
1 cup mini marshmallows
20 ounces Diet Coke

Steps:

  • Seperate the pineapple and cherry juice from the fruit. Use the juice and water as needed to create 2 cups of liquid. Bring liquid to a boil, remove from heat and add jello packets. Stir untill dissolved completely.
  • Wisk in cream cheese until well blended. Stir in diet coke, crushed pineapple, and cherries. Refridgerate for 1 hour.
  • Before the jello fully sets, stir in chopped pecans. Put jello salad into a pretty dish and place the mini marshmallows on top. Refridgerate over night or until it is completely set.
