CHRISTMAS CHERRY CHEWS
We make these around Christmas time, because the red and green cherries make it so holiday looking....warning, these are addictive, they taste almost like a fruitcake with a crust

Steps:
- Set oven to 350 degrees.
- Grease a 9" x 13" baking pan.
- In a bowl, mix together the first 5 ingredients.
- Cut in the cold butter with a pastry blender until crumbly.
- Press mixture into the prepared baking pan.
- Bake for 8-9 minutes (don't overbake); remove and cool.
- Lower the oven temperature to 325 degrees.
- In a bowl, combine all topping ingredients; mix well.
- Spread topping over the cooled base.
- Sprinkle with pecan halves over top.
- Return to oven; bake for 30 minutes longer.
- Cool, cut into squares.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan, or for thinner bars, use a 10x15 inch jellyroll pan.
- Melt butter in a saucepan over medium heat. Stir in brown sugar until smooth. Remove from heat and let cool slightly.
- Stir the eggs and vanilla into the brown sugar and butter. Mix in the chopped pecans, and then the flour. Spread evenly in the prepared pan.
- Bake for 25 minutes in the preheated oven, or until golden brown. Allow to cool before cutting into bars.

- 1. Preheat oven to 350. Line a 15x10x1 inch baking pan with foil, extending the foil over the edges of the pan. Grease the foil, set pan aside.
- 2. In a large bowl, combine flour, the 1/2 cup sugar, and the salt. Using a pastry blender, but in the 1 cup of butter until mixture resembles coarse crumbs. Press mixture evenly into prepared pan. Bake in preheated oven for 20 minutes.
- 3. Meanwhile, in a large mixing bowl, whisk eggs, corn syrup, the 1 1/4 cups sugar, the 3 tablespoons butter, and the vanilla until combined.
- 4. Sprinkle pecans and dried cherries over hot crust. Slowly pour egg mixture over all. Bake for 25-30 minutes or until set. Cool completely in pan on wire rack. Lift baked mixture from pan using the foil. Remove foil. Cut into bars. Makes 48 bars.
- 5. These freeze great!!!!
AMISH CHERRY PECAN CRUMBLE

- Preheat the oven to 350*.
- In a large bowl, mix together the brown sugar, tapioca and nutmeg.
- Add the almond extract, cherries and red food coloring, if using. and combine thoroughly.
- Allow the mixture to stand for 10 minutes, then pour into a 9x13 greased baking dish. Make the topping; in a bowl, combine the flour, sugar, salt and butter with a pastry blender until it resembles coarse crumbs. (This can also be done in a food processor)
- Mix in the chopped pecans and spoon the topping over the cherry mixture, spreading it out evenly.
- Bake the crumble for 1 hour or until it is bubbling and the top is golden.
- Serve slightly warm with heavy cream, whipped cream or ice cream if desired.

- 1. Heat oven to 350 degrees. Mix flour, oats, 1 c. brown sugar, baking soda and 1/4 tstp salt. Add butter and mix until crumbly, first with a fork, then with fingers. Press mixture into bottom of greased 13X9X2 in pan. Bake for 10 minutes. Beat eggs; stir in sugar and almond extract. Mix flour, baking powder and 1/2 tsp salt together and gently stir into the egg mixture. Add coconut and cherries; stir to blend. Pour over the baked mixture and spread evenly. Sprinkle with pecans. Return to oven and bake for 25 minutes until lightly brown. Cool and ice with Cherry Almond Icing as follows:
- 2. 3 tbsp soft butter 2 cup sifted icing sugar 2 tbsp maraschino cherry juice 1/4 tsp almond extract Blend butter and sugar. Add cherry juice and almond extract, using enough juice to make the icing easy to spread. Stir until smooth. makes 2 dozen

- Mix flour, rolled oats, 1 cup brown sugar, baking soda, and 1/4 teaspoon salt. Add 1/2 cup butter and mix until crumbly, first with a fork, then with fingers. Press mixture into a greased 9x13-inch pan. Bake for 10 minutes.
- Beat eggs, stir in remaining brown sugar and almond extract. Mix flour, baking powder, and 1/2 teaspoon salt together, then stir into egg mixture. Add coconut and cherries and stir to blend.
