- Preheat oven to 350 degrees. Butter and flour six mini loaf pans (each 5 3/4 by 3 inches, with a 2-cup capacity). Make streusel topping: In a bowl, mix streusel ingredients with fingertips until moist clumps form. Place in freezer.
- Make cherry-pecan batter: In a medium bowl, whisk flour, baking powder, salt, and baking soda. In a large bowl, whisk butter, sugar, sour cream, eggs, and vanilla until smooth. Mix in dry ingredients until moistened. Fold in dried cherries and pecans.
- Divide batter evenly among prepared pans; spread to fill corners. Place pans on a baking sheet. Bake 15 minutes, then remove from oven, and quickly sprinkle loaves with streusel topping.
- Return loaves to oven; bake until golden and a toothpick inserted in center comes out with only a few moist crumbs attached, 20 to 25 minutes. Cool loaves 10 minutes in pans; turn out of pans, and cool completely, streusel side up, on a rack.
NICK'S FAVORITE CHERRY PECAN BREAD
One of my son's favorite breads. You can ice top with a powdered sugar glaze if you wish.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9 x 5 inch loaf pan.
- In a large bowl, cream butter or margarine and sugar together. Add eggs, and continue mixing until light and fluffy. Add baking soda, salt, and vanilla; mix thoroughly. Alternately add buttermilk and flour to the creamed mixture, mixing only enough to hold ingredients together. Fold in cherries and nuts, mixing lightly. Turn batter into prepared pan.
- Bake for 50 to 60 minutes, or until bread tests done. Cool completely before slicing.

CHOCOLATE-CHERRY PECAN BREAD
Here's something special! Based on the method outlined in The New York Times last November, this bread requires very little effort. But you do have to plan ahead-start it the night before, then bake the next day, or start early in the morning for bread in the evening. This recipe was developed using a bread crock, but any appropriately sized heavy, oven-safe, covered pot should work. This recipe comes from the King Arthur site. Times given do not allow for the long rising time.

- Mix flours, sugar, salt, yeast, and water in a large bowl.
- Add cherries, chocolate chips, and pecans. Stir well to make a very soft dough, and cover the bowl with plastic wrap.
- Let rest at room temperature overnight, or for at least 12 hours; the dough will be bubbly and puffy.
- Turn the dough out onto a lightly floured surface, and fold it onto itself a few times.
- Let it rest 15 minutes, then form it into a ball.
- Place it in a lightly greased bowl, smooth side down. Cover and let rise at room temperature about 2 hours, until a slight indentation remains when poked with a finger.
- During the last 30 minutes of rising, preheat the oven to 450°F and place a bread crock (or a heavy, 4- to 4 1/2-quart oven-safe pot) in the oven while it heats.
- When the dough is risen, remove the crock from the oven, and turn the dough out of the bowl and into the crock; the smooth side will be facing up.
- Shake the crock gently to settle the dough, then cover with the lid and return to the oven.
- Bake the bread for 20 minutes, then remove the lid and continue to bake another 30 to 40 minutes, until the bread is deep brown in color and an instant-read thermometer inserted into the center registers about 205°F.
- Remove the crock from the oven, turn the bread onto a rack, and cool before slicing. Yield: 1 loaf.

EASY BUTTER PECAN BREAD
Steps:
- Gather the ingredients.
- Preheat the oven to 350 F / 180 C / Gas 4.
- Grease and flour a 9 x 5 x 3-inch loaf pan.
- In a mixing bowl, combine the flour, baking powder, soda, salt, and spices; mix with a spoon or whisk to blend thoroughly. Stir the brown sugar into the flour mixture.
- In a small bowl, whisk the egg lightly. Whisk in the buttermilk and melted butter until well blended. Stir the egg and buttermilk mixture into the flour mixture until well blended.
- Fold in the chopped pecans.
- Spoon the batter into the prepared loaf pan.
- Bake the quick bread in the preheated oven for 45 to 50 minutes, or until a wooden pick or cake tester inserted in center comes out clean.
- Cool the bread in the pan on a rack for about 10 minutes. Turn it out and place it on the rack to cool completely before slicing.

CHERRY-PECAN SWIRL BREAD
Wow your brunch crowd with this Cherry-Pecan Swirl Bread. If you're new to making bread from scratch, take your time with each step. Kneading can be sticky work, but don't overflour your work surface or the dough itself. This will make the bread tough and dense. To knead, fold the top of the dough in half toward you. - Prepare the Dough: Cook sour cream, butter, salt, and 1/4 cup of the granulated sugar in a saucepan over medium-low, stirring occasionally, until butter just melts, 4 to 5 minutes. Remove from heat. Cool to 110°F to 115°F, about 10 minutes.
- Stir together warm water, yeast, and remaining 1 teaspoon granulated sugar in a bowl. Let stand until foamy, about 5 minutes.
- Beat sour cream mixture, yeast mixture, eggs, and orange zest with a stand mixer fitted with a dough hook attachment on medium-low speed, gradually adding 3 3/4 cups of the flour, until a soft Dough forms and pulls away from sides but still adheres to bottom of bowl, 2 minutes.
- Turn out Dough on a lightly floured work surface. Knead until smooth and elastic, 10 minutes, adding up to 1/2 cup remaining flour in very small increments, if needed to keep the Dough workable. (It should be tacky but not sticky.) Place in a lightly greased (with cooking spray) bowl, turning to coat all sides. Cover; chill at least 8 hours or up to 24 hours.
- Turn out Dough on a lightly floured work surface. Roll into a 20- x 16-inch rectangle. Coat a 12-inch cast-iron skillet with cooking spray. Place a round sheet of parchment paper in bottom of skillet. Set aside.
- Prepare the Filling: Stir together brown sugar, cherries, pecans, softened butter, cinnamon, and cardamom until mixture is well combined and the texture of wet sand.
- Gently spread Filling over Dough, carefully pressing to adhere, leaving a 1-inch border on both long sides. Starting at 1 long side, roll up jelly-roll style. Using a serrated knife, cut log in half lengthwise. Arrange pieces side by side, cut sides up, on the work surface. Carefully twist together, keeping cut sides facing up. Form twisted Dough into a 9-inch ring, tucking ends underneath. Place in prepared skillet, and cover loosely with plastic wrap. Let stand in a warm place until almost doubled in size, 1 to 1 1/2 hours.
- Preheat oven to 350°F with rack in lower third position. Remove and discard plastic wrap from Dough. Bake until golden brown and cooked through, 35 to 40 minutes, tenting with aluminum foil after 25 minutes, if needed, to prevent excessive browning. Remove from oven.
- Prepare the Glaze: Whisk together powdered sugar and orange juice. Drizzle over bread. Serve warm, or transfer to a wire rack to cool completely, about 1 hour.

This Cherry Pecan Sourdough Bread is chewy and full of dried cherries and toasted pecans! It is delightful for breakfast, an afternoon snack with nut butter or for dinner!

- The night before, build your liquid levain from your starter. If you are maintaining a liquid levain starter with 125% hydration already, there is no need to feed a separate starter, just adjust the ratio above to make sure you have enough to feed the next day. Allow it to proof at room temperature.
- Whisk together dry active yeast and water in the bowl of a stand mixer just to hydrate and make sure there are no clumps. Add all purpose flour, whole wheat flour, and levain to the bowl. Mix on low until all the flour has been completely incorporated, let the dough sit for 15 minutes (autolyze) to develop gluten.
- While your dough autolyzes, cover the dried cherries with hot water and allow to soak 30 minutes. Drain very well and set aside.
- Add the salt to the bowl, switch to the hook attachment and then mix on low to incorporate the salt.
- Turn the mixer up to medium speed to develop the gluten. Stop the mixer every now and again and take a piece of the dough in your hands. Working around the edges of the dough try to pull the piece thin enough to see through. The whole wheat grains will tear more easily. Do not despair! This is normal and it takes practice. This dough will not form a ball around the hook because it is too wet of a dough (this is what we want!).
- Add the toasted, cooled pecans and the strained cherries and mix on low until they are inside the dough and not all on the outside.
- Scoop dough into an oiled bowl and cover with plastic wrap.
- Place in a warm spot for an hour.
- First set of folds: Fold each of the four sides into the center, pulling the dough up and allowing it to smack down on top of the remaining dough in the bowl. This is developing more gluten! Cover and proof an additional hour or until doubled and light and airy feeling. You want to oil or flour your hand before you feel the dough. It should feel light and airy and not stiff or dense.
- Pre-shape: Dust the top of the dough in the bowl with flour. Turn the dough out onto a lightly (I mean lightly!) floured surface. Divide the dough into two equal portions of 625g each. Fold each of the four sides towards you into the center, turning the dough after each fold. This will create a little packet. Flip the dough so the seam in on the counter. Shape it into a round by using both hands to pull the dough towards you. Once you have a round ball with a smooth top, allow it to sit and bench rest for 15 minutes.
- Final Shape: Repeat the same process as with the pre-shape. Place the dough on a piece of parchment or flip it upsidedown into a proof basket that has been dusted with rice flour. Cover with plastic wrap.
- To bake same day: Place the basket back into the warm spot and allow to rise another 1-2 hours or until it feels light and airy and has doubled in volume in the basket. The volume will be tough to tell if you are proofing it on parchment because it doesn't contain or control the shape of the sourdough. Proceed to the baking step below.
- To bake next day: OMIT THE DRY ACTIVE YEAST! Place covered basket into the refrigerator to retard the dough overnight. This will slow the proofing of the yeast and will allow you to bake 12-18 hours later.
- Baking: Preheat the oven to 450F convection or 470F non-convection with the Dutch oven or baking pan inside. Meanwhile, cut a piece of parchment a little larger than the loaf. When your oven is ready toss a little flour onto the dough then turn the dough out of the basket onto the parchment. [If you proofed your dough on parchment, skip this step] Score the dough using a lame, razor blade or pairing knife. You want to score midway between the bottom and the top. With this bread in a round shape, I like to make a square so that it rises straight up and maintains its round shape.
- Take the preheated Dutch oven from the oven, gently lower the dough into the pot and cover it with the lid. Place in the oven and bake 20 minutes. Remove the lid and continue baking 25 minutes or until the loaf is a dark amber brown.
- Remove the loaf from the Dutch oven, remove the parchment carefully, and then cool completely. This allows the crumb to set.
