The very first time that I made Cherry Crisp, my brother happened to be visiting. He is an ice cream lover-but he passed up the scoops of vanilla that he tops most desserts with so he could taste the cherries better! Wheat, soybeans and milo are the main crops on our farm. We also have three small cherry trees. I apportion all of that harvest for this recipe. My husband's is the manager of a coop. I work part-time as a church secretary...teach piano in our home...and enjoy making clothes for myself and our 3-year-old daughter. Cross-stitch is one of my favorite hobbies.

PASTRY:
1/4 teaspoon salt
1/2 cup packed brown sugar
1 cup all-purpose flour
1/2 cup cold butter, cubed
FILLING:
1 cup sugar
1/4 cup cornstarch
1 cup cherry juice blend
4 cups pitted tart red cherries
Few drops red food coloring, optional
TOPPING:
1-1/2 cups quick-cooking rolled oats
1/2 cup packed brown sugar
1/4 cup all-purpose flour
5 tablespoons butter, melted

Steps:

  • In a bowl, combine salt, sugar and flour; cut in butter. Press into a greased 2-qt. or 11x7-in. baking dish. Bake at 350° for 15 minutes. , For filling, combine sugar and cornstarch in a saucepan. Stir in juice. Cook over medium heat until thick, stirring constantly. Fold in cherries and food coloring if desired. Pour over baked crust. Combine all topping ingredients; sprinkle over filling. , Bake for 20-25 minutes or until golden brown and bubbly around edges.

1 ½ cups white sugar
4 tablespoons all-purpose flour
1 ½ cups all-purpose flour

1 cup brown sugar
½ cup butter
½ cup shortening

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large bowl, combine cherries, 1 1/2 cups white sugar, and 4 tablespoons flour. Pour into 9x13 inch baking dish. In a medium bowl, combine 1 1/2 cups flour, oats, and brown sugar. Cut in butter and shortening until crumbly. Sprinkle over cherries.
  • Bake in preheated oven for 45 to 50 minutes, or until topping is golden brown.

A truly incredible dessert! It's just soooo good and really easy to make. Everyone always raves about it and asks me for the recipe when I make it. Wonderful served with whipped topping or ice cream. Great for vegans!

1 (21 ounce) can cherry pie filling
½ cup all-purpose flour
½ cup rolled oats
⅔ cup brown sugar
¾ teaspoon ground cinnamon
¾ teaspoon ground nutmeg
¼ cup chopped pecans
⅓ cup melted margarine

Steps:

  • Preheat oven to 350 degrees F (175 degrees C.) Lightly grease a 2 quart baking dish. Pour pie filling into the dish, and spread evenly.
  • In a medium bowl, mix together flour, oats, sugar, cinnamon, and nutmeg. Mix in melted margarine. Spread over pie filling, and sprinkle with chopped pecans.
  • Bake in the preheated oven for 30 minutes, or until topping is golden brown. Allow to cool 15 minutes before serving.

1 ½ lbs sweet cherries, (pitted (a little over 4 cups))
1 ½ lbs rhubarb, (cut into ½-inch pieces (about 5 ½ cups))
¾ cup granulated sugar
1 ½ Tablespoons cornstarch ((see note to increase if using frozen fruit))
2 teaspoons orange juice
¼ teaspoon vanilla extract
¾ cup all-purpose flour
¾ cup old-fashioned oats
¾ cup packed brown sugar
¼ teaspoon ground cinnamon
¼ teaspoon salt
8 Tablespoons chilled unsalted butter, (cut into ½-inch pieces)

Steps:

  • Preheat oven to 350°F.
  • Add pitted cherries, sliced rhubarb, granulated sugar, cornstarch, orange juice, and vanilla extract to a large bowl and gently toss to combine and coat the fruit evenly.
  • Pour out filling into a large pan (mine is 13" x 9" x 3") and pat into an even layer.
  • Add flour, oats, brown sugar, cinnamon, and salt to a mixing bowl and stir to combine evenly. Cut in the chilled butter pieces with a pastry blender until it is in small clumps. It will not be smooth.
  • Scatter the topping over the fruit in the pan evenly.
  • Bake for 45-50 minutes, or until the crisp topping is golden-brown and the fruit filling is well-heated and bubbly. You should easily be able to pierce the center of a slice of rhubarb with a fork. Let the crisp cool off some, then serve warm in bowls (with a scoop of vanilla ice cream as a recommend topping!).

1 (11 ounce) can mandarin orange sections, undrained
2/3 cup all-purpose flour
4 teaspoons granulated sugar
1 teaspoon baking powder
1/8 teaspoon salt
3 tablespoons unsalted butter, cold
1 egg, slightly beaten
2 tablespoons whole milk
2 tablespoons granulated sugar
1/4 teaspoon cinnamon

Steps:

  • Preheat oven to 400 degrees F.
  • In medium saucepan, combine cherry pie filling & oranges, & bring to boil, then reduce heat to simmer & keep hot.
  • Whisk together flour, sugar, baking powder & salt, then cut in butter until coarse.
  • Whisk together the egg & milk, then add to flour mixture, stirring just to moisten.
  • Pour hot filling into a 1.5 or 2 quart baking dish.
  • Immediately spoon on the biscuit topping in 6 mounds.
  • Combine the 2 tablespoons of sugar & cinnamon, & sprinkle over the biscuits.
  • Bake 20 minutes, until browned.
  • Serve warm.
