CHERRY NUT BREAD

Chopped pecans and maraschino cherries perk up this pound cake-like bread. The pretty slices are rich and moist with a crisp golden crust. This is my husband's favorite bread. -Melissa Gentner, Tecumseh, Michigan

Yield 4 loaves (16 slices each).

Number Of Ingredients 11

2 cups butter, softened
3 cups sugar
5 eggs, separated
1 teaspoon vanilla extract
5 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup buttermilk
2 jars (10 ounces each) maraschino cherries, drained and chopped
1 cup chopped pecans

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in egg yolks and vanilla. Combine the flour, baking soda, baking powder and salt; add to the creamed mixture alternately with buttermilk just until blended (batter will be thick). , In a small bowl, beat egg whites until stiff peaks form. Fold into batter. Fold in cherries and pecans., Transfer to four greased and floured 8x4-in. loaf pans. Bake at 350° for 50-55 minutes or until a toothpick inserted in the center comes out clean and loaves are golden brown. Cool for 10 minutes before removing from pans to wire racks.

I have this recipe from a family cookbook, I believe the lady who gets credit is named Debbie. I cut back on the amounts of nuts I use, but it is still very good this way!!

Number Of Ingredients 10

2 c flour
3 tsp baking powder
1/4 c maraschino cherry juice
3 Tbsp oil
1 c maraschino cherries
1 c sugar
2 eggs
3/4 c milk
1/4 Tbsp almond flavoring
1/2 c chopped nuts

Steps:

  • 1. Put dry ingredients in a mixing bowl.
  • 2. Beat in the eggs, milk, cherry juice, oil and almond flavoring; beat until smooth.
  • 3. Cut the cherries in half and stir into the mixture with the chopped nuts.
  • 4. Bake at 350* for about one hour.

You can serve this loaf year-round- but its cherries give it a pretty Christmasy look. In addition to being a lovely gift, it's something I often include in meals at home. I have also entered my loaf in fairs, where it's always a winner. I'm a widow (three grown daughters) who enjoys baking and crafting.

1 jar (6 ounces) red maraschino cherries
2-1/2 cups all-purpose flour
1 cup sugar
4 teaspoons baking powder
1/2 teaspoon salt
2 large eggs
2/3 cup milk
1/3 cup butter, melted
1 jar (8 ounces) green maraschino cherries, drained and cut up
1/2 cup chopped pecans
1 tablespoon grated orange zest

Steps:

  • Drain red cherries, reserving liquid; add water, if needed, to liquid to equal 1/3 cup. Cut up cherries; set cherries and liquid aside. , In a large bowl, combine the flour, sugar, baking powder and salt. In a small bowl, whisk the eggs, milk, butter and cherry liquid; stir into dry ingredients just until combined. Fold in the red and green cherries, pecans and orange zest. , Pour into a greased 9x5-in. loaf pan. Bake at 350° for 1 hour or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to wire rack.

2 c flour
1-1/2 tsp baking powder
1/2 tsp salt
1/2 tsp baking soda
1 c sugar
1/3 c vegetable oil
2 eggs
1 c milk
1 tsp vanilla
1/2 c chopped maraschino cherries (reserve juice)
1/2 c chopped walnuts or pecans
GLAZE:
1/2 c powdered sugar
2 Tbsp reserved cherry juice
2 Tbsp lemon juice

Steps:

  • 1. Heat oven to 350 degrees. Grease and flour 9X5" loaf pan; set aside.
  • 2. In a large bowl, stir together flour, baking powder, salt, and baking soda. In another bowl, beat together sugar, oil, and eggs until light; stir in milk and vanilla.
  • 3. Stir wet ingredients into dry enough to moisten; fold in cherries and nuts. Spoon into pan, smooth top and bake 60 to 70 minutes, or until toothpick inserted in the center comes out clean.
  • 4. Make the glaze. Mix together powdered sugar, cherry juice, and lemon juice. While cake is till hot, pierce the top a number of times with a long, thin skewer, then pour glaze mixture over loaf. Let stand in pan 15 minutes, then turn out onto cooling rack. When cool, wrap well and leave overnight before slicing.

This is my grandma's recipe. I remember her making it but never paid attention to the time it took in the oven. Grandma never timed anything, it was done when it was done. My suggestion, insert a tooth pick into center when it comes out clean it is done.

1 whole egg
1 teaspoon vanilla

Steps:

  • Cream sugar and butter.
  • Seperate eggs, 2 egg whites and one whole egg.
  • Add well beaten eggs and milk--.
  • Sift flour and baking powder.
  • Mix well and add cherries, nuts and vanilla.
  • Mix lightly and pour into a well greased pan.
  • Medium oven (350) till top is a nice shade of brown.

I am very proud of my banana bread recipe, which is why I adapted it into this amazing cherry-chocolate loaf. While cherries really aren't anything like bananas, this really did work out extremely well--this loaf is a delicious option for breakfast, brunch, or dessert.

1 teaspoon unsalted butter
2 cups all-purpose flour
1 teaspoon kosher salt
1 teaspoon baking powder
½ teaspoon baking soda
½ cup unsalted butter, softened
1 cup white sugar
2 large eggs, at room temperature
¼ cup plain yogurt
¼ teaspoon vanilla extract
2 cups pitted cherries
½ cup dark chocolate chunks
½ cup chopped walnuts
¼ cup powdered sugar
3 teaspoons milk, or more as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x4-inch loaf pan with 1 teaspoon butter and reserve.
  • Whisk flour, salt, baking powder, and baking soda together in a bowl.
  • Cream 1/2 cup butter and sugar together in another bowl with a spatula or an electric mixer until smooth and creamy. Beat in eggs one at a time with a whisk or an electric mixer, fully blending in the first egg before adding the next. Stir in yogurt and vanilla extract.
  • Chop pitted cherries coarsely with a knife, or by pulsing on and off a few times in a food processor. Add to the wet ingredients along with the chocolate chunks and chopped walnuts. Stir briefly to combine. Batter may look curdled, but don't worry.
  • Pour in the flour mixture and mix with a spatula until all the flour has disappeared. Transfer batter into the prepared loaf pan, making sure to smooth the top evenly and fill in the corners. Tap pan on the counter to release any air pockets.
  • Bake in the preheated oven until nicely browned and a toothpick inserted into the center comes out clean, about 1 hour. Let bread rest in the pan for 15 minutes before removing to a wire rack.
  • While bread is resting, combine powdered sugar and milk in a bowl for icing, adding more milk as needed to reach a thin, runny consistency.
  • Brush icing over loaf, allowing to drip down the sides. Let cool completely before slicing and serving, about 20 minutes more.

2 cups all-purpose flour

4 tablespoons unsalted butter, in pieces, plus butter for greasing pan
2 cups flour, sifted
1 1/2 teaspoons baking powder
1/4 cup sugar
2 eggs, lightly beaten
1/4 cup orange juice
1/4 cup honey, prefarably cherry blossom
2 tablespoons cherry liqueur
1 1/2 cups pitted, halved fresh cherries, preferably Montmorency (see note)
1 tablespoon grated orange peel
1/2 cup chopped black walnuts or pecans

Steps:

  • Preheat oven to 325 degrees. Butter a loaf pan 8 by 4 by 2 inches.
  • Sift the flour, baking powder and sugar into a bowl. Cut in the butter in a food processor, or use a fork, two knives or a pastry blender.
  • Mix the eggs, orange juice, honey and cherry liqueur together and stir in. Fold in the cherries, orange peel and nuts.
  • Spread batter into pan. Bake about 1 hour and 15 minutes, until nicely browned and cake tester inserted in the center comes out clean.
  • Allow to cool completely before removing from the pan and slicing.
