HOMEMADE CHERRY JAM
Homemade cherry jam - quick and easy to make from either fresh or frozen cherries. You can make this jam with or without pectin. Use a canning technique to preserve it for a few months or keep in the fridge for up to 3 weeks. Serve over cheesecakes, crepes, pancakes or toast.

Steps:
- Remove pits from washed cherries. Chop all or half of them into small pieces, leave some whole if you'd like.
- Place cherries in a large, heavy bottomed pan. Add sugar on top and stir. Let them sit for 30 minutes to up to 3 hours.
- Turn the heat on and bring to a boil.
- Reduce heat to medium low. If the mixture is starting to foam, your can try to remove some of the foam with a spoon.
- Place a plate in the freezer. (Optional for testing the jam).
- Cook for 20 minutes, the cherries will become soft and darken in color. Add the vanilla, butter and lemon juice.
- It will thicken.
- Test the jam: Add a few drops of it to the cold plate. When you touch the cooled jam, it should wrinkle in your fingers, rather than stick or stay runny.
- Add the butter (optional).
- Let the jam cool for 10 minutes, before you pour it into clean jars.
- Don't overfill the jars. Close the lids.

CHERRY JELLY FROM (FROZEN CONCENTRATE)

Steps:
- Measure juice into a 6-8 quart saucepot.
- Add 3 cups water and stir.
- Measure sugar and set aside.
- Stir Fruit Jell pectin into juice and stir.
- Bring to a full rolling boil, stirring constantly.
- At once stir in sugar.
- Bring to a full rolling boil, one that cannot be stirred down.
- Stirring constantly, boil hard for 1 minute.
- Remove from heat.
- Skim off foam
- Immediately ladle into hot glass jars, leaving ½-inch head space.
- Process for 5 minutes in a boiling bath water.
- Makes 7/8-ouince jars.

CHERRY JELLY
Sweet or sour cherries can be used. I used sour because that is what grows on our tree. Got this off the internet and altered it somewhat. No need to pit all those cherries. This one is easy! Time to make does not include time for water to boil in water bath canner.

- TO MAKE JUICE:
- Select fully ripe cherries.
- Softly wash. Remove stems. Do not pit!
- In large pot, crush cherries (I use a potato masher.).
- Add 1 cup water to crushed cherries.
- Bring to a boil over high heat.
- Reduce heat and simmer for 10 minutes.
- Strain juice through a jelly bag or cheesecloth. (I use a fine mesh "sifter" lined with a coffee filter.).
- Toss pits, pulp, and peels.
- TO MAKE JELLY:
- Measure 3 1/2 cups juice into large pot.
- Add pectin and stir.
- Place on high heat and stir constantly.
- Bring to a full rolling boil (that can't be stirred down).
- Add sugar, continue stirring and bring to a full rolling boil once more.
- Boil hard for 1 minute.
- Remove from heat.
- Skim off foam.
- Ladle into hot jelly jars leaving 1/4 inch headspace. Apply lids and rings.
- Process in hot water bath for 5 minutes.
- Note: I used 1 gallon of cherries and had a little more than 3 1/2 cups juice. Of course, it also depends on the quality of the fruit.

- Place unpitted fresh cherries or frozen cherries in a 6- to 8-quart heavy pot. Add the water. Bring to simmering (do not boil). Simmer, uncovered, about 15 minutes or until cherries are soft and the skins begin to split. Using a potato masher, carefully crush cherries. Remove from heat.
- Place a fine-mesh sieve over a large bowl. Ladle cherries into sieve. Using the back of a large spoon, press cherries to release juice; discard pits and pulp. Line a colander with a double layer of 100-percent-cotton cheesecloth; place over a large bowl. Strain juice through cheesecloth; do not squeeze cheesecloth or jelly may be cloudy. Measure 3 1/2 cups juice. Discard pulp in cheesecloth.
- In the same pot stir together the 3 1/2 cups cherry juice and the pectin. Bring to a full rolling boil, stirring constantly. Add sugar. Return to a full rolling boil, stirring constantly. Boil hard 1 minute, stirring constantly. Remove from heat. Quickly skim off foam with a metal spoon.
- Ladle hot jelly into hot, sterilized half-pint canning jars, leaving a 1/4-inch headspace. Wipe rims; adjust lids and screw bands.
