CHERRY-GLAZED BLACK BOTTOM CHEESECAKE



Cherry-Glazed Black Bottom Cheesecake image

Here's the cheesecake version of the classic German dessert, Black Forest cake-made with chocolate and cherries on a chocolatey cookie-crumb crust.

18 vanilla creme-filled chocolate sandwich cookies, finely crushed (about 1-1/2 cups)
2 Tbsp. butter, melted
4 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1-1/2 cups sugar, divided
1 tsp. vanilla
4 eggs
1-1/2 pkg. (4 oz. each) BAKER'S Semi-Sweet Chocolate (6 oz.), broken into pieces, melted, cooled slightly
2 tsp. cornstarch
1/2 cup water
2 cups pitted frozen sweet cherries
1 tsp. ground Mexican cinnamon (canela)

Steps:

  • Heat oven to 325ºF.
  • Mix cookie crumbs and butter; press onto bottom of 9-inch springform pan.
  • Beat cream cheese, 1 cup sugar and vanilla in large bowl with mixer until well blended. Add eggs, 1 at a time, beating on low speed after each just until blended. Reserve 3 cups batter. Add melted chocolate to remaining batter; mix well. Pour over crust. Carefully spoon reserved batter over chocolate batter.
  • Bake 1 hour 5 min. or until center is almost set. Run knife around rim of pan to loosen cake; cool before removing rim. Refrigerate 4 hours.
  • Meanwhile, mix cornstarch and water in medium saucepan. Stir in remaining sugar. Add cherries; stir. Bring to boil on medium-high heat, stirring constantly; cook and stir on medium heat 2 min. or until sugar is dissolved and sauce is thickened. Stir in cinnamon. Cool completely. Refrigerate until ready to spoon over cheesecake just before serving.

The inspiration for me to find this recipe was my husband. He loves cheesecake but was tired of the dry types. Up here, all the wilderness we could ask for is right outside our back door-everything from wolves to caribou!

CRUST:
1-1/2 cups graham cracker crumbs
1/4 cup sugar
6 tablespoons butter, melted
FILLING:
2 packages (8 ounces each) cream cheese, softened
2 large eggs, lightly beaten
1/2 cup sugar
1 teaspoon vanilla extract
SOUR CREAM TOPPING:
1 cup sour cream
1/4 cup sugar
1 teaspoon vanilla extract
CHERRY TOPPING:
1/2 cup sugar
2 tablespoons cornstarch
1 can (14-1/2 ounces) pitted tart cherries
1 teaspoon lemon juice
Few drops red food coloring

Steps:

  • In a small bowl, combine crust ingredients. Press onto the bottom and a third of the way up the sides of a 9-in. springform pan; set aside. , For filling, in a small bowl, beat cream cheese until smooth. Add the eggs, sugar and vanilla; beat just until smooth. Pour into prepared crust. Bake at 375° for 20 minutes. Remove from oven; cool 15 minutes. Increase temperature to 450°., Meanwhile, combine sour cream topping ingredients. Spread over filling. Bake for 10 minutes. Cool at room temperature; cover and chill 12 hours. , For cherry topping, drain cherries, reserving juice. Set cherries aside. In a large saucepan, combine the sugar, cornstarch and cherry juice until smooth. Bring to a boil. Cook and stir for 1-2 minutes or until thickened. Remove from the heat; stir in lemon juice, food coloring and reserved cherries. Cool for 5 minutes. Spread over cheesecake; chill several hours. Just before serving, remove sides of pan.

This recipe has overturned a lifetime's prejudice - which is good, but unsettling. I had always been a committed believer that the only true cheesecake was the proper, baked cheesecake, but now I'm not so sure. This improper, unbaked cheesecake, feature of many a 1970s dessert trolley, has entirely won me over. It's light, it has tang, it is rapturously good. The fact that it is speedily easy to make is more reason for general hilarity and joy. Even in the spirit of retro-accuracy, please do not be tempted to open a jar of cherry pie filling over the cake. I use some French cherry concoction that seems to be pretty universally available and has no added sugar, but anything labelled 'conserve' as opposed to 'jam' should be safe. And, if you feel like it, when cherries are in season, rather strew the top with a couple of handfuls of beautiful fruit.

1 1/4 cups graham cracker crumbs
2 tablespoons sugar
3/4 stick soft unsalted butter
10 ounces cream cheese
1/2 cup powdered sugar
1 teaspoon vanilla extract
1/2 teaspoon lemon juice
1 cup heavy cream
1 (10-ounce) jar black cherry spread (recommended: St Dalfour Rhapsodie de Fruit)

Steps:

  • Blitz the biscuits in a food processor until beginning to turn to crumbs, then add the sugar and butter and whiz again to make the mixture clump. If using graham cracker crumbs, you can use a bowl and wooden spoon to mix the butter in, with the sugar added.
  • Press this mixture into a 8-inch springform tin; press a little up the sides to form a slight ridge.
  • Beat together the cream cheese, sugar, vanilla and lemon juice in a bowl until smooth.
  • Lightly whip the cream, and then fold it into the cream cheese mixture.
  • Spoon the cheesecake filling on top of the biscuit base and smooth with a spatula, put it in the refrigerator for 3 hours or overnight.
  • When you are ready to serve the cheesecake, un-mold and spread the black cherry spread over the top.

1/2 cup fine zwieback or grahm craker crumbs
1 tablespoon sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
5 eggs, seperated
1 cup sugar
2 (8-ounce) packages cream cheese, softened
1 cup sour cream
2 tablespoons all-purpose flour
1 teaspoon vanilla extract
Cherry Glaze (below)
Cherry Glaze
1 (16-ounce) can pitted tart red cherries, drained and liquid reserved
1/2 cup sugar
2 tablespoons cornstarch
few drops red food color, if desired

Steps:

  • 1. Heat oven to 275°. Butter springform pan, 9 x 3 inches.2. Mix cracker crumbs, 1 tablespoon sugar, the cinnamon and nutmeg. Dust bottom and side of springform pan with crumb mixture.3. Beat egg yolks in large bowl with electric mixer on high speed or until thick and lemon-colored. Gradually beat in 1 cup sugar. Beat in cream cheese until smooth. Beat in sour cream, flour and vanilla until smooth. 4. Beat egg whites in large bowl with electric mixer on high speed until stiff but not dry. Gently fold into cream cheese mixture. Pour into pan.5. Bake 1 hour 10 minutes. Turn off oven and leave cheesecake in oven 1 hour. Cool in pan on wire rack 15 minutes. Refrigerate about 3 hours or until chilled.6. Spread top of cheesecake with Cherry Glaze. Refrigerate until glaze is set. Remove cheesecake from pan just before serving.CHERRY GLAZEAdd enough water to cherry liquid to measure 1 cup.   • Stir together water, vinegar, corn syrup, preserves, cinnamon, cloves, and nutmeg in a saucepan over medium-high heat. Bring to a boil, then reduce heat to low and simmer for 2 minutes.
