- Remove the ham from the oven and brush the top with 1/4 cup of the glaze. Bake, uncovered, until the ham is hot and an instant-read thermometer inserted into the center registers 140 degrees F, about 20 minutes longer. Steps:
- Pre-heat the oven to 160°C/320ºF.
- Place the ham in a large roasting dish. Add the onion, garlic, rosemary, apple juice and water. Cover tightly with foil and place in a preheated oven.
- Place in the oven and roast for 20 minutes per 500g/1lb. A 4kg/8lb ham/gammon will need 2 hours 40 minutes.
- When the ham is cooked, remove from the oven and turn the heat up to 200°C/390ºF.
- In a small saucepan, combine all the glaze ingredients and allow to come to the boil. Cook until the sugar has dissolved and the cherries are soft. Remove the cinnamon and ginger then blend with an immersion blender.
- Cut the skin off the gammon and cut a diamond pattern into the fat.
- Pour the glaze over the gammon and place back in the oven to cook for another 20-30 minutes.
- Allow the glaze to get sticky but check on it regularly as it can burn quickly. Glaze the ham once or twice while baking to allow the glaze to get thick and sticky. When the glaze is sticky and dark, remove from the oven.
- Allow the ham to cool for 30 minutes then slice and serve.

Steps:
- Put the gammon in a large saucepan and cover with water. Bring to the boil, then drain. Rinse off any white starch from both the ham and the saucepan, then return the ham to the saucepan. Cover with water again.
- Stud the onion with the cloves, and add to the pan with all the remaining ingredients.
- Bring to the boil, reduce the heat and simmer, covered, for 2-2½ hours, or until the ham is cooked through - the internal temperature should reach 68C/154F (you can use a meat thermometer to check). Remove from the heat and either leave to cool in the liquor or immediately transfer to a work surface.
- Preheat the oven to 200C/180C Fan/Gas 6.
- To prepare the gammon for glazing, cut off the string and cut away the outer rind, leaving at least half the thickness of fat underneath attached to the ham. Score a diamond pattern on the fat and stud cloves into each corner.
- To make the glaze, blend the cherry conserve using a food processor or hand-held blender to get it as smooth as possible, then put it in a saucepan with the bourbon, ginger, sugar and cinnamon.
- Bring to the boil and simmer for 15 minutes, or until the liquid has reduced enough to coat the back of a spoon. Brush the glaze over the ham, making sure you use it all.
- Place the ham in a roasting tin and roast in the oven for 20-25 minutes, or until it is well browned. Serve in slices.

- Place ham in a large roasting pan with a cup of water, then brush at regular intervals for about 30 minutes, and bake until sticky, golden and warmed through (1-1½ hours). Rest for 30 minutes before carving.

- Stir sugar, sherry, cinnamon and star anise in a small saucepan over low heat until sugar dissolves. Bring to a simmer over medium heat and simmer for 5 minutes. Add cherries and simmer for 5 minutes or until mixture thickens slightly. Using a slotted spoon, transfer cherries to a bowl and reserve.
- Using a small knife, cut around ham rind, 10cm from shank end. Starting at the opposite end to shank, run your thumb under rind to separate it from the fat. Peel back and discard rind. Score fat at 1.5cm intervals, ensuring not to cut through to the meat. Place ham in pan and wrap shank end in foil.
- Brush ham with one-third of the glaze. Bake for 1 hour, basting every 15 minutes, or until golden. Spoon reserved cherries over ham. Bake for 5 minutes or until cherries are heated through. Transfer to a platter and rest for 30 minutes. Garnish with lemon thyme and serve with pickle.
