Ingredients

1-1/2 cups sugar
4 egg whites
1/4 cup water
1/4 cup maraschino cherry juice
1/2 teaspoon cream of tartar
1 teaspoon vanilla extract
1/2 teaspoon cherry extract or 1/4 teaspoon almond extract

Steps:

In a heavy saucepan, combine the sugar, egg whites, water, cherry juice and cream of tartar. With a portable mixer, beat on low speed for 1 minute. Continue beating on low over low heat until frosting reaches 160° on a candy thermometer, about 10 minutes. , Pour into the bowl of a heavy-duty stand mixer; add extracts. Beat on high until stiff peaks form, about 7 minutes.

8 ounces cream cheese
1/2 cup butter, room temperature
1 teaspoon vanilla
16 ounces powdered sugar
8 ounces crushed pineapple, drained
1/2 cup maraschino cherry, drained, chop

Steps:

place ingredients in a large bowl --
Mix with electric mixer till well blended.
Add powdered sugar, mix till combined.
stir in crushed pineapple, cherries, and a little maraschino cherry juice for color.
Whip 2-3 minutes.

Ingredients

1 cup frozen dark sweet cherries
3 -5 ice cubes
1/2-1 teaspoon vanilla extract
3/4 cup 1% low-fat milk (if using milk to make it extra creamy add 2 tbsp of cream or creamer) or 3/4 cup low-fat buttermilk (if using milk to make it extra creamy add 2 tbsp of cream or creamer)
1/2 cup sparkling water (optional) or 1/2 cup club soda (optional)
sugar (I like it sweet so added 5 Splenda packets.) or Splenda sugar substitute, to taste (I like it sweet so added 5 Splenda packets.)

Steps:

Blend all ingredients in a blender until smooth.
Pour in a large glass or two.
Enjoy!
