CHERRY ALMOND SHORTBREAD COOKIES

Steps:
- In a medium sized mixing bowl, cream the butter and then add powdered sugar and cream together with a hand mixer. Add maraschino cherry juice, almond extract, and vanilla and continue to mix until smooth.
- Add flour and the chopped maraschino cherries to the bowl and work the two ingredients into the butter and sugar mixture using a spatula or your hands. Take care not to over-mix. You're going for well-combined, but not beaten.
- Scoop the mixture into the middle of a piece of plastic wrap, mold into a log shape about 1½ inches in diameter, then roll up in the plastic wrap and tie off the ends. Place in the freezer for 1 hour.
- After the dough has hardened in the freezer, preheat your oven to 350ºF. Cut the dough out of the plastic wrap and cut in ⅛ inch thick slices. Place on a cookie sheet covered with parchment and bake for 11-13 minutes or until the cookies are just beginning to turn golden brown.
EASY CHERRY DELIGHT DESSERT (NO-BAKE)
This is a really great dessert, plan ahead this needs to chill for a minimum of 3 hours or overnight is even better.

- Prepare a 9 x 9" baking pan.
- In a bowl, mix the graham cracker crumbs, melted butter and 1 tbsp sugar; spread on bottom of prepared baking pan to form a crust.
- Mix the Dream Whip topping according to directions on the package, then beat in the softened cream cheese into the Dream Whip a little at a time.
- Add the remaining sugar and vanilla until well blended.
- Smooth on top of the crust.
- Top with the cherry pie filling.
- Chill at least 3 hours (overnight is even better) if storing in the fridge overnight, cover with plastic wrap.
CHERRY FLIPS

- Soften butter to room temperature. Drain cherries well (reserving juice) and dry with paper towel. Preheat oven to 325 degrees F.
- Cream butter and sugar. Add egg yolks and beat well. Stir in almond extract. Blend in flour and salt.
- Pinch off a piece of dough. Press the dough in the palm of your hand and place a cherry on top. Mould the dough around the cherry to form a ball.
- Place balls on a greased cookie sheet and bake for about 25 minutes.
- Make a thin icing with icing sugar and some of the reserved cherry juice. When cool, dip the cookie tops in icing, and dip into coconut if desired.

- In a small bowl, soak cherries in hot water for at least 10 minutes., Meanwhile, in a large bowl, cream the shortening, butter and sugars until light and fluffy. Beat in the eggs, orange zest and vanilla. Combine the oats, flour, baking soda, cinnamon and salt; gradually add to creamed mixture and mix well. Stir in the chocolate chips and cherries with liquid., Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350° for 12-14 minutes or until edges are lightly browned. - Preheat oven to 300 degrees F (150 degrees C).
- Combine margarine, confectioner's sugar and vanilla. Beat until fluffy. Add flour, baking soda and oats. Mix well. Stir in cherry flavored chips (other flavors work well, too!).

CHOCOLATE PEANUT BUTTER RITZ COOKIES

- Line a 18x13 sheet pan with wax paper.
- In a small mixing bowl, stir together the peanut butter and the powdered sugar until smooth.
- Evenly space 30 Ritz crackers face down. This will be the cookies "bottom".
- Spoon 1 tablespoon of peanut butter mixture into the center of the cracker. Do not spread the peanut butter to the edges.
- Place the "top" cracker, face up. Gently press the cracker down, just until the peanut butter is close to the edge of the crackers, but not dripping over the edge.
- Refrigerate the cookies on the tray for 25 minutes. (This helps firm up peanut butter mixture).
- In a medium sized heat safe bowl, combine 2 cups of the chocolate chips.
- In the microwave, heat the chocolate chips for 30 seconds at a time, stirring well after each interval, until the 2 cups of chocolate chips are melted.
- Add the remaining ½ cups of chocolate chips, and stir until the chocolate is smooth.
- Remove the cookies from the refrigerator.
- Place 1 cookie at a time in the melted chocolate. Using a regular dinner fork, flip the cookie over until it is well coated. Slide the fork completely under the cookie and gently tap the fork against the rim or the side of the bowl, to remove the excess chocolate.
- Return the sheet pan of cookies to the refrigerator. Chill for 30 minutes to help set the chocolate. Store in an airtight container.

- Have the pecan crust baked, cooled, and ready to go.
- In a large mixing bowl, mix the Dream Whip according to package directions, whisking the 2 small packets with the whole milk and vanilla extract.
- In a separate bowl, beat the cream cheese well with a mixer.
- Add the cream cheese and powdered sugar to the Dream Whip whipped cream, whisking the mixture 'til it's smooth and creamy.
- Spread the Dream Whip filling on top of the cooled crust in a 9×13 pan.
- Then top it all off with cherry pie filling.
- Cover and chill in the fridge for at least 4 hours, or overnight if possible, before serving.

- Blend together the butter, egg yolks, vanilla, salt, confectioners' sugar and flour.
- Take small amount of dough in hand , flatted out and wrap around drained cherry. ( I use a combination of red and green cherries and tint the icing to match the color of the cherry. )
