CHERRY CRISP

The very first time that I made Cherry Crisp, my brother happened to be visiting. He is an ice cream lover-but he passed up the scoops of vanilla that he tops most desserts with so he could taste the cherries better! Wheat, soybeans and milo are the main crops on our farm. We also have three small cherry trees. I apportion all of that harvest for this recipe. My husband's is the manager of a coop. I work part-time as a church secretary...teach piano in our home...and enjoy making clothes for myself and our 3-year-old daughter. Cross-stitch is one of my favorite hobbies.

Number Of Ingredients 16

PASTRY:
1/4 teaspoon salt
1/2 cup packed brown sugar
1 cup all-purpose flour
1/2 cup cold butter, cubed
FILLING:
1 cup sugar
1/4 cup cornstarch
1 cup cherry juice blend
4 cups pitted tart red cherries
Few drops red food coloring, optional
TOPPING:
1-1/2 cups quick-cooking rolled oats
1/2 cup packed brown sugar
1/4 cup all-purpose flour
5 tablespoons butter, melted

Steps:

  • In a bowl, combine salt, sugar and flour; cut in butter. Press into a greased 2-qt. or 11x7-in. baking dish. Bake at 350° for 15 minutes. , For filling, combine sugar and cornstarch in a saucepan. Stir in juice. Cook over medium heat until thick, stirring constantly. Fold in cherries and food coloring if desired. Pour over baked crust. Combine all topping ingredients; sprinkle over filling. , Bake for 20-25 minutes or until golden brown and bubbly around edges.

1-1/2 cups all-purpose flour
1/2 teaspoon salt
1/2 cup shortening
4 to 5 tablespoons cold water
3/4 cup sugar
3 tablespoons cornstarch
2 cans (14-1/2 ounces each) pitted tart cherries
1 tablespoon butter
1/4 teaspoon almond extract
4 to 5 drops red food coloring, optional

Steps:

  • In a small bowl, combine flour and salt. Cut in shortening until mixture resembles coarse crumbs. Add enough water until dough forms a ball. Refrigerate for 30 minutes., Preheat oven to 450°. On a lightly floured surface, roll out dough to 1/8-in. thickness. Cut out eight 5-in. circles. Place each over an inverted custard cup on an ungreased 15x10x1-in. baking pan; flute edges. , Bake 10-11 minutes or until golden brown. Cool 5 minutes before removing tart shells from custard cups; cool completely on wire racks., For filling, in a large saucepan, combine sugar and cornstarch. Drain cherries, reserving 1 cup juice. Set cherries aside. Stir reserved juice into sugar mixture until smooth. Bring to a boil; cook and stir 2 minutes or until thickened. Remove from heat; stir in cherries, butter, almond extract and food coloring if desired. Cool to room temperature. Spoon about 1/4 cup filling into each tart shell.

Cherry pie filling is lovingly sandwiched between 2 layers of crunchy oaty goodness. Substitute apple pie filling and sprinkle a little extra cinnamon over the top if you like.

1 cup rolled oats
1 cup all-purpose flour
¾ cup brown sugar
½ teaspoon ground cinnamon
½ cup butter
1 (21 ounce) can cherry pie filling

Steps:

  • Preheat oven to 375 degrees F (190 degrees C.)
  • In a medium bowl, combine the rolled oats, flour, brown sugar and cinnamon. Cut in butter until mixture resembles coarse crumbs.
  • Sprinkle one half of crumb mixture in the bottom of a 9 inch square baking dish. Cover with cherry pie filling. Sprinkle remaining crumb mixture over pie filling.
  • Bake in the preheated oven for 40 minutes, or until topping is golden brown. Serve warm.

4 cups pitted fresh tart cherries or 2 cans (14-1/2 ounces) pitted tart cherries, drained
2 tablespoons sugar
1/2 cup all-purpose flour
1/2 cup packed brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 cup cold butter, cubed

Steps:

  • Preheat oven to 375°. Place cherries in an ungreased 9-in. pie plate. Sprinkle with sugar. In a small bowl, combine the flour, brown sugar, cinnamon and salt. 1 package refrigerated crescent dinner roll
1 (3 ounce) package cream cheese, softened
1/4 cup confectioners' sugar
1 cup canned cherry pie filling
1/4 teaspoon almond extract

Steps:

  • Place crescent dough on a lightly floured surface; seal seams and preforations. Cut into 2" circles. Place in a greased mini tart pan.
  • Beat cream cheese and confectioner sugar until smooth. Place about 1/2 teaspoons in each cup. Combine pie filling and almond extract; place about 2 teaspoons in each cup.
  • Bake @ 375* for 12-14 minutes, or until edges are lightly brown. Remove to wire rack to cool. Refrigerate until ready to serve.

1 egg yolk, slightly beaten
1 (21-ounce) can cherry pie filling
3 tablespoons all-purpose flour
3 tablespoons rolled oats
1 tablespoon granulated sugar
1 tablespoon brown sugar
2 tablespoons margarine or butter, melted

Steps:

  • 1. Brush bottom and sides of crusts with egg yolk. Place on baking sheet. Bake at 375°F for 4 minutes.2. Spoon pie filling into tart crusts.3. In small bowl combine flour, oats, granulated sugar and brown sugar. Stir in margarine or butter. Sprinkle over pie filling in tart crusts.4. Bake on baking sheet at 375°F about 20 minutes or until filling is bubbly and topping is light brown. Cool on wire rack. Serve at room temperature.
