FAST AND EASY CHERRY CRISP
Frozen cherries make this Fast and Easy Cherry Crisp a dessert that can be pulled together on a whim. A great last minute dessert choice!

- Preheat oven to 375 degrees F. Lightly coat a 9- x 13-inch baking dish with non-stick cooking spray.
- In a large bowl, toss cherries with lemon juice and vanilla. Add white sugar and ¼ cup flour and stir to combine. Pour into the prepared baking dish.
- In a medium bowl, combine remaining 1 ¼ cups flour, oats, brown sugar, ¼ cup sliced almonds, and salt. Work in the butter with a pastry blender or fork until the mixture resembles coarse crumbs. Sprinkle over the fruit. Sprinkle with remaining almonds.
- Bake in preheated oven for 45 to 50 minutes, or until topping is golden brown.

- In a large bowl, combine cherries, 1 1/2 cups white sugar, and 4 tablespoons flour. Pour into 9x13 inch baking dish. In a medium bowl, combine 1 1/2 cups flour, oats, and brown sugar. Cut in butter and shortening until crumbly. Sprinkle over cherries.
- Bake in preheated oven for 45 to 50 minutes, or until topping is golden brown.

CHERRY CRISP
The very first time that I made Cherry Crisp, my brother happened to be visiting. He is an ice cream lover-but he passed up the scoops of vanilla that he tops most desserts with so he could taste the cherries better! Wheat, soybeans and milo are the main crops on our farm. We also have three small cherry trees. I apportion all of that harvest for this recipe. My husband's is the manager of a coop. I work part-time as a church secretary...teach piano in our home...and enjoy making clothes for myself and our 3-year-old daughter. Cross-stitch is one of my favorite hobbies.

- Set oven to 400 degrees (oven rack to second-lowest position).
- Butter a 9-inch glass baking dish.
- To make filling: cook all the filling ingredients in a 2-quart heavy saucepan over medium heat, stirring occasionally until the sugar begins to dissolve (about 3-4 minutes).
- Spoon the filling into prepared baking dish.
- To make the topping: in a medium bowl, whisk together flour, sugar, baking soda, baking powder and salt.
- Blend in the cold butter using your fingertips or a pastry blender until mixture resembles coarse meal.
- Stir in buttermilk with a fork JUST until combined (do not overmix!).
- Drop the dough in mounds over the filling, leaving space between the mounds.
- Lightly sprinkle sugar over the dough.
- Bake for about 25-30 minutes, or until the topping id golden brown and the fruit is bubbling.
- Cool slightly and serve warm.

- Pit cherries (if you don't have a cherry pitter, you can always use your hands like I did!) and then measure out 3 cups. Place cherries in baking dish.
