Frozen cherries make this Fast and Easy Cherry Crisp a dessert that can be pulled together on a whim. A great last minute dessert choice!

36 ounces frozen dark cherries, no sugar added (thawed) ((3 12-ounce bags))
1 tablespoon fresh lemon juice
1 teaspoon pure vanilla extract
¾ cup white sugar
1 ½ cups all-purpose flour (divided)
¾ cup old fashioned oats
½ cup brown sugar
½ cup sliced almonds (divided)
½ teaspoon salt
¾ cup butter (cut into 1-inch slices)

Steps:

  • Preheat oven to 375 degrees F. Lightly coat a 9- x 13-inch baking dish with non-stick cooking spray.
  • In a large bowl, toss cherries with lemon juice and vanilla. Add white sugar and ¼ cup flour and stir to combine. Pour into the prepared baking dish.
  • In a medium bowl, combine remaining 1 ¼ cups flour, oats, brown sugar, ¼ cup sliced almonds, and salt. Work in the butter with a pastry blender or fork until the mixture resembles coarse crumbs. Sprinkle over the fruit. Sprinkle with remaining almonds.
  • Bake in preheated oven for 45 to 50 minutes, or until topping is golden brown.

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large bowl, combine cherries, 1 1/2 cups white sugar, and 4 tablespoons flour. Pour into 9x13 inch baking dish. In a medium bowl, combine 1 1/2 cups flour, oats, and brown sugar. Cut in butter and shortening until crumbly. Sprinkle over cherries.

The very first time that I made Cherry Crisp, my brother happened to be visiting. He is an ice cream lover-but he passed up the scoops of vanilla that he tops most desserts with so he could taste the cherries better! Wheat, soybeans and milo are the main crops on our farm. We also have three small cherry trees. I apportion all of that harvest for this recipe. My husband's is the manager of a coop. I work part-time as a church secretary...teach piano in our home...and enjoy making clothes for myself and our 3-year-old daughter. Cross-stitch is one of my favorite hobbies.

PASTRY:
1/4 teaspoon salt
1/2 cup packed brown sugar
1 cup all-purpose flour
1/2 cup cold butter, cubed
FILLING:
1 cup sugar
1/4 cup cornstarch
1 cup cherry juice blend
4 cups pitted tart red cherries
Few drops red food coloring, optional
TOPPING:
1-1/2 cups quick-cooking rolled oats
1/2 cup packed brown sugar
1/4 cup all-purpose flour
5 tablespoons butter, melted

Steps:

  • In a bowl, combine salt, sugar and flour; cut in butter. Press into a greased 2-qt. or 11x7-in. baking dish. Bake at 350° for 15 minutes. , For filling, combine sugar and cornstarch in a saucepan. Stir in juice. Cook over medium heat until thick, stirring constantly. Fold in cherries and food coloring if desired. Pour over baked crust. Combine all topping ingredients; sprinkle over filling. , Bake for 20-25 minutes or until golden brown and bubbly around edges.

  • Preheat oven to 350 degrees F (175 degrees C.) Lightly grease a 2 quart baking dish. Pour pie filling into the dish, and spread evenly.
  • In a medium bowl, mix together flour, oats, sugar, cinnamon, and nutmeg. Mix in melted margarine. Spread over pie filling, and sprinkle with chopped pecans.

This recipe uses frozen cherries, so it's great to make all year round! This is a sweet cobbler you can reduce the sugar slightly for a less sweeter taste. Although I have never tried it, I imagine that you could also make this using frozen or fresh blueberries.

4 cups frozen dark sweet cherries (can use 1 cup more)
1/2 cup sugar
2 tablespoons cornstarch
1/4 teaspoon cinnamon
1 pinch salt
1 1/2 cups flour
2 tablespoons sugar (can use 1 tablespoon)
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 cup cold butter, cut into small pieces (no substitutes)
2/3 cup buttermilk

Steps:

  • Set oven to 400 degrees (oven rack to second-lowest position).
  • Butter a 9-inch glass baking dish.
  • To make filling: cook all the filling ingredients in a 2-quart heavy saucepan over medium heat, stirring occasionally until the sugar begins to dissolve (about 3-4 minutes).
  • Spoon the filling into prepared baking dish.
  • To make the topping: in a medium bowl, whisk together flour, sugar, baking soda, baking powder and salt.
  • Blend in the cold butter using your fingertips or a pastry blender until mixture resembles coarse meal.
  • Stir in buttermilk with a fork JUST until combined (do not overmix!).
  • Drop the dough in mounds over the filling, leaving space between the mounds.
  • Lightly sprinkle sugar over the dough.
  • Bake for about 25-30 minutes, or until the topping id golden brown and the fruit is bubbling.
  • Cool slightly and serve warm.

1/2 cup all purpose flour or white whole wheat flour
3/4 cup old-fashioned oats
1/2 cup coconut sugar (can sub brown sugar)
1/3 cup pecans or walnuts, finely chopped
1/2 tsp cinnamon
1/4 tsp fine sea salt
heaping 1/3 cup coconut oil, solid (or unsalted butter)

Steps:

  • Preheat oven to 350F. Spray an 8x8-inch baking dish with cooking spray.
  • Pit cherries (if you don't have a cherry pitter, you can always use your hands like I did!) and then measure out 3 cups. Place cherries in baking dish.
  • Add flour, oats, coconut sugar, almonds, cinnamon, and salt to a medium mixing bowl, stirring until combined. Add coconut oil and use your fingers to incorporate the oil into the mixture until it's moist, crumbly, and very well combined. If your coconut oil is very hard, this will take a bit longer.
  • Sprinkle topping evenly onto the cherries. Bake for 30 minutes. Cool on a rack for 15 minutes before diving in, preferably with ice cream!
