CHERRY CREAM CHEESE COOKIES

These cherry-topped Cream Cheese Cookies are one of my family's favorite Christmas cookies! We've been making these festive, melt-in-your mouth cookies for as long as I can remember.

1 cup butter (softened)
3 ounces cream cheese (softened)
1 cup granulated sugar
1 large egg
1 teaspoon almond extract
2 ½ cups all purpose flour
½ teaspoon salt
¼ teaspoon baking soda
1 cup finely chopped walnuts
Maraschino cherries (halved)

Steps:

  • Using an electric mixer, cream butter and cream cheese together. Add sugar, egg, and almond extract and mix until well combined. Sift dry ingredients together over the mixer bowl; mix on lowest speed until combined.
  • Chill dough for at least 2 hours.
  • Preheat oven to 350 degrees F. Line baking sheets with parchment paper.
  • Form dough into 1 inch balls. (Cookies turn out best when the dough balls are tiny.) Roll each ball in the chopped walnuts and place on a parchment-lined baking sheet. Press a half cherry into each cookie.
  • Bake for 9-12 minutes, until barely set and lightly golden on the bottom. Be careful not to over-bake.

A rich unique cookie that has the cream cheese and cherries baked right in. This recipe produces a soft and delicate cookie. You may top them with a Cherry half Before baking or you can drizzle a glaze over them or eat them just as they are!

1 (3 ounce) package cream cheese, softened
1 cup butter, softened
1/2 cup maraschino cherry, chopped and drained well
1 large egg
1 1/2 teaspoons almond extract
1 cup sugar
2 1/4 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda

Steps:

  • Preheat Oven to 375'.
  • In a large bowl, cream together butter and cream cheese until fluffy.
  • Stir in Remaining Ingredients. (dough will be a bit stiff).
  • Drop by rounded tablespoonsful about 1 inch apart onto ungreased cookie sheet.
  • Bake about 8-10 minutes. Watch them closely and don't let them get too brown.
  • Remove to wire rack to cool.
  • Yield is approximate.

My baking mojo hasn't just kicked in, it's stuck in overdrive :) This recipe was found at mangiabenepasta.com - a little labor-intensive, but they will be beautiful in Christmas cookie baskets. Chilling time is not included in prep or baking times.

1 cup flour
4 ounces cream cheese, cut into cubes
1/2 cup unsalted butter, cut into cubes
1/2 cup apricot jam
1 cup sweetened flaked coconut
1 cup dried cherries

Steps:

  • In a food processor or electric mixer, combine the flour, cream cheese, and butter.
  • With your hands, gather the dough into a ball, flatten it, and wrap in plastic wrap.
  • Refrigerate for at least 1 hour or up to 24 hours.
  • Preheat oven to 375-degrees F. Butter a baking sheet.
  • Divide the dough into 2 equal pieces.
  • Roll each piece out on a floured surface to a 12x8-inch rectangle.
  • Spread each with 1/4 cup of the jam.
  • Top each with 1/2 cup coconut and 1/2 cup cherries.
  • Starting at the longer end, roll each up jelly-roll style. Seal the seam with your fingers.
  • Cut each roll into 12 slices.
  • Place cookies on prepared sheet.
  • Slightly flatten each cookie so they are of even thickness.
  • Bake 25 minutes or until golden brown. Cool on a wire rack.

8 ounces cream cheese (low fat works ok)
2 cups flour
1/4 teaspoon salt
24 -36 candied cherries
powdered sugar

Steps:

  • Cream together butter and cream cheese. Blend flour/salt with butter/cheese. Chill at least 3 hours.
  • Roll out 1/8 " thin. Cut into strips 1/2"x2". Roll up a candied/glace cherry in strip and bake at 400°F for 11 minutes.
  • Sprinkle with powder sugar when cooled.
