3 large egg whites
1/4 teaspoon cream of tartar
3/4 cup sugar
FILLING:
3 ounces cream cheese, softened
1/4 cup confectioners' sugar
1/2 teaspoon vanilla extract
1 cup heavy whipping cream, whipped
1 can (21 ounces) cherry pie filling

Steps:

  • Place egg whites in a small bowl; let stand at room temperature for 30 minutes. Add cream of tartar; beat on medium speed until soft peaks form. Gradually beat in sugar, 1 tablespoon at a time, on high until stiff glossy peaks form and sugar is dissolved., Spoon meringue onto a parchment-lined baking sheet. Using the back of a spoon, form meringue into a 9-in. circle, building up edges slightly., Bake at 275° for 1-1/2 hours. Turn oven off and do not open door; leave meringue in oven for 1 hour. Remove from the oven; cool completely., In a small bowl, beat the cream cheese, confectioners' sugar and vanilla until smooth. Fold in whipped cream until mixture is well blended. To serve, place meringue on a serving platter; fill with cream cheese mixture and top with pie filling.

6 large egg whites
1/2 teaspoon cream of tartar
1/4 teaspoon salt
1-3/4 cups sugar
FILLING:
6 ounces cream cheese, softened
1 cup sugar
1 teaspoon vanilla extract
2 cups heavy whipping cream, whipped
2 cups miniature marshmallows
TOPPING:
1 can (21 ounces) cherry pie filling
2 cups sliced fresh strawberries
1 teaspoon lemon juice

Steps:

  • Place egg whites in a large bowl; let stand at room temperature for 30 minutes. Add the cream of tartar and salt; beat until foamy. Gradually add sugar, 1 tablespoon at a time, beating on high until stiff peaks form (do not under beat). Spread evenly in a greased 13x9-in. baking pan. Bake at 275° for 1 hour; turn off oven (do not open door). Let cool in oven overnight or at least 12 hours. , In another large bowl, beat the cream cheese, sugar and vanilla until smooth; gently fold in whipped cream and marshmallows. Spread over meringue. Chill for 4 hours. Cut into 16 pieces. Combine topping ingredients; spoon 1/4 cup over each serving.

A creamy mixture of Neufchatel cheese, powdered sugar and almond extract is spread between layers of angel food cake and topped with cherry pie filling.

4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Neufchatel Cheese, softened
1/2 cup powdered sugar
1/8 tsp. almond extract
1 cup thawed COOL WHIP LITE Whipped Topping
1 pkg. (10 oz.) angel food cake
1 cup canned cherry pie filling

Steps:

  • Beat Neufchatel, sugar and extract in large bowl with mixer until blended. Gently stir in COOL WHIP.
  • Cut cake horizontally into 3 layers. Stack layers on plate, spreading Neufchatel mixture between layers and on top of cake.
  • Refrigerate 1 hour. Top with pie filling.

Moist white cake, dressed with a light & fluffy cream, sweetened just enough to compliment tart fresh cherries. With reduced-sugar cake mix & Splenda brown sugar, it's a diabetic friendly dessert that doesn't look like it at the table. Prep time does not include chilling time. Created for RSC #12.

1 (18 1/4 ounce) reduced-sugar white cake mix (I used Pillsbury brand in Classic White)
3 egg whites
1 1/4 cups water
1/3 cup canola oil
1/4 cup brewed coffee (I used Starbucks brand brewed at home)
2 tablespoons Splenda brown sugar blend
1 (8 ounce) container mascarpone cheese (I used Mozzarella Fresco brand)
1/4 cup powdered sugar
1 teaspoon almond extract
1 (12 ounce) container whipped topping (I used Cool Whip brand)
3 cups fresh cherries (approximately 36 whole cherries)
1 ounce BAKER'S Semi-Sweet Chocolate, grated

Steps:

  • Pre-heat oven to 350 degrees. Spray two 8' round cake pans with non-stick cooking spray.
  • In mixer bowl, combine cake mix, egg whites, water & oil. Mix on low for 30 seconds, then on medium for 2 minutes. Pour evenly into prepared pans & bake at 350 degrees for 27-32 minutes or til toothpick inserted in center comes out clean. Cool in pans on wire rack.
  • Meanwhile, in small bowl or liquid measuring cup, combine hot coffee & Splenda. Set aside to dissolve.
  • Slice 2 cups of cherries in half, removing & discarding pit, then chop into 1/2 inch pieces. Set aside.
  • In mixer bowl, beat together mascarpone cheese & powdered sugar. Add almond extract & coffee mixture, mixing well. Fold in whipped topping.
  • In large glass trifle bowl (or other deep-sided dish), crumble one cake layer into bite-sized pieces & spread over the bottom of the bowl.
  • Gently spread half of the mascarpone mixture on top of the cake.
  • Sprinkle half of the chopped cherries on top of the mascarpone & top with all of the grated chocolate.
  • Crumble second cake layer over everything & gently spread the rest of the mascarpone mixture on top. Refrigerate for 2 hours.
  • Slice all but 2 cherries in half, remove & discard pits. Arrange the sliced cherries, cut side down, in a circular pattern around the outside edge of the mascarpone. Put the two whole cherries in center of bowl. Serve & enjoy!

You can use either a homemade angel food cake or a store bought one. Super easy to prepare and the dish always come home licked clean. Works especially well when you need to prepare dessert for a large number of people.

1 prepared and cooled angel food cake
4 -6 cups prepared vanilla pudding, cooled if necessary
2 (16 ounce) cans cherry pie filling (Lite works fine)

Steps:

  • Tear the angel food cake into 1 inch cubes. Place them in a single layer in a 13x9 inch pan.
  • (The pudding amount is 2 small boxes or 1 large US box pudding, either instant or cooked.) Pour the pudding over the cake; top with the cherry pie filling.
  • Can also be layered in a trifle bowl or in individual parfait glasses.
  • I've never tried it but I bet chocolate pudding would be good too. :).

A light dessert, just right after a big Easter dinner. You need to start two days before you want to serve it, but it doesn't take very long.

6 egg whites
1/2 teaspoon cream of tartar
1/4 teaspoon salt
1 3/4 cups sugar
2 (3 ounce) packages cream cheese
1 cup sugar
1 teaspoon vanilla
2 cups whipped cream (1 carton)
2 cups mini marshmallows
1 can cherry pie filling
2 cups fresh strawberries

Steps:

  • Beat egg whites until frothy, slowly add sugar, cream of tarter and salt.
  • Pour in greased 9 x 13 pan.
  • Bake 60 minutes at 275 degrees.
  • Turn off oven and leave in oven overnight.
  • Do not peek.
  • The next morning make this: Blend the cream cheese, sugar and vanilla.
  • Fold in whipped cream and marshmallows.
  • Spread on baked meringue.
  • Refrigerate 12 hours or overnight.
  • Top with cherry pie filling and strawberries.
