CHERRY CHIP COOKIES I
A chip cookie with a difference! Light, crispy and eggless, these cookies are a great after-school treat with a cold mug of milk.

Steps:
- Preheat oven to 300 degrees F (150 degrees C).
- Combine margarine, confectioner's sugar and vanilla. Beat until fluffy. Add flour, baking soda and oats. Mix well. Stir in cherry flavored chips (other flavors work well, too!).
- Drop by rounded teaspoonful onto ungreased cookie sheets and flatten slightly with fingers. Bake for 12 minutes. Remove immediately from cookie sheets and onto wire racks to cool.

CHERRY CHIP COOKIES
Steps:
- Preheat the oven to 350°F, and line a large baking sheet with parchment paper.
- In a large mixing bowl, add cream cheese. Beat with a hand mixer until smooth and creamy. Add the egg and mix on medium until combined, scraping down the sides of the bowl as needed.
- Slowly add the sugar cookie mix to the bowl, and continue to mix on medium until all ingredients are incorporated.
- Gently fold in the cherry chips.
- Using a 2 tablespoon scoop, add the dough to the lined baking sheet, leaving 2 inches on each side to allow for spreading.
- Bake 8-12 minutes, or until golden brown.
- Allow the cookies to cool slightly before serving.

- Preheat the oven to 180°C ,350°F or gas mark 4.
- Cream the butter and sugar together(with a wooden spoon) in a large bowl until light, fluffy and golden.
- Stir everything together (vanilla, flour, baking powder and chocolate chips or oreos, add the water and the Coco powder) to make the yummy dough.
- Sprinkle some flour onto a surface and the dough. Roll out the dough and with cookie cutters cut out the shapes and lay them out onto greased, lined baking sheets. Spacing them well apart.
- Bake for about 12 minutes or until golden brown.
- Leave on the baking sheets for 5 minutes, then transfer to a wire rack to cool.
- Store in an airtight tin for up to 2-3 weeks.
CHERRY CHOCOLATE CHIP OATMEAL COOKIES

- Combine the flour, baking soda, cinnamon and salt in a medium sized bowl and set aside.
- 2. Cream the butter and sugars together in a large mixer bowl on medium speed until light in color and fluffy. You should be able to see the change in color and texture happen and know it's ready.

- 1. Preheat the oven to 350 degree F. Note: This recipe does not call for any eggs.
- 2. Combine the margarine, powdered sugar and vanilla in a mixing bowl and beat until light and fluffy. Add the flour and baking soda. Mix until well blended. Add cherry chips and stir until well distributed
- 3. On an ungreased cookie sheet, drop rounded teaspoons of dough, leaving at least an inch between to allow for spreading. Slightly flatten each cookie with the back of a spoon. Note: A rounded teaspoon makes a fairly small cookie. If a larger cookie is desired, use approximately 50% more dough.
- 4. Place in the preheated oven and bake for 8 to 9 minutes (11 to 13 minutes for larger cookies). Cookies are done when they start to brown slightly around the edges. Remove from the oven and allow cookies to set on cookie sheet for 1 to 2 minutes to firm up slightly before removing. Remove and place on a wire rack to cool. I have used cinnamon chips in these cookies also.

- In a medium bowl, combine the flour, baking powder, baking soda and salt. Whisk to combine, then add the chocolate chips and toss to coat.
- In a large bowl, combine the coconut sugar, regular sugar, oil and water. Whisk until the sugar has incorporated into the oil and the mixture is smooth, about 1 to 2 minutes.
- Add the flour mixture to the sugar mixture, then stir just until combined and no more flour is visible (don't overdo it).

- Heat the oven to 180C/160C fan/gas 4. Cream the butter and sugar together using a wooden spoon or an electric whisk in a large bowl until light, fluffy and golden.
- Stir in the vanilla, flour, baking powder and chocolate chips. Add 1 tbsp water to bring the mixture together if needed, and the cocoa powder to make them chocolate cookies, if you like. Bring the dough together into a ball with your hands.
- Sprinkle some flour over your work surface and the dough. Roll out the dough until 3mm thick and, using cookie cutters, cut them out and lay them out on lined baking sheets, spacing them well apart.
