I love cocoa and cherries (like Black Forest cakes, etc) and try to add more whole grains (like buckwheat) in my foods. Sometimes I add pecans or walnuts to the muffins too.

Number Of Ingredients 13

3/4 cup brown sugar
1/3 cup honey
2/3 cup oil
1 egg
1 cup buttermilk
2 teaspoons vanilla
1 1/2 cups flour
1 cup buckwheat flour
1 teaspoon baking soda
2 teaspoons baking powder
1/2 cup cocoa
1 pinch salt
1 3/4 cups dried cherries (I prefer to chop them into small pieces, but this is up to you)

Steps:

  • Whisk together brown sugar, honey, oil, egg, buttermilk, and vanilla.
  • Stir together dry ingredients and add to oil mixture, stirring just until combined.
  • Add cherries, scoop batter into muffin cups.
  • Bake in a 375º for 15-20 minutes or until tops are browned.
  • Allow to cool in pans for 5 minutes before removing to cooling racks.
  • 15 muffins.

1/2 cup buckwheat flour
2 tsp baking powder
1 tsp ground cinnamon
1/4 tsp coarse salt
4 large eggs
1 banana, mashed
1/2 cup honey
1 sweet apple, such as honeycrisp, peeled, cored, and finely diced
1/2 cup chopped walnuts

Steps:

  • Heat oven to 350 degrees. Line a 12-cup muffin pan with paper liners. In a bowl whisk together flour, baking powder, cinnamon, and salt. In another bowl whisk together eggs, banana, and honey. Mix the wet ingredients into the dry, then fold in apple and walnuts.
  • Pour batter to the tops of lined cups. Bake until deep golden brown and a toothpick comes out clean, about 30 minutes. Let cool on a wire rack.

This is an amazing gluten-free muffin recipe that can be adapted to almost any fresh berry or chopped fruit. The streusel topping sinks into the muffin as it bakes, giving it a lovely cobbler effect. Living gluten-free doesn't mean deprivation! Enjoy!

2 cups gluten-free all-purpose baking flour
½ cup white sugar
1 teaspoon gluten-free baking powder
1 cup milk
¼ cup vegetable oil
1 egg, beaten
½ teaspoon vanilla extract
½ teaspoon almond extract
2 cups pitted and chopped fresh cherries (including any juice from chopping)
¼ cup gluten-free rolled oats
¼ cup brown sugar
¼ cup white sugar
2 tablespoons cold butter, cut into pieces

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line 24 muffin cups with paper liners.
  • Mix flour, 1/2 cup sugar, and baking powder in a large bowl. Whisk milk, vegetable oil, egg, vanilla extract, and almond extract together in a separate bowl. Make a well in the center of the flour mixture; pour in milk mixture. Stir until batter is just blended and slightly lumpy; gently fold in cherries and cherry juice. Fill muffin cups 2/3 full with batter.
  • Mix oats, brown sugar, 1/4 cup white sugar, and butter together in a bowl until crumbly; sprinkle oat mixture over batter.
  • Bake in the preheated oven until a toothpick inserted in the center of a muffin comes out clean, about 20 minutes.

BUCKWHEAT FARINETTA MUFFINS



Buckwheat Farinetta Muffins image

Buckwheat Farinetta is supposed to have the highest concentration of D-chiro-inositol (which has been shown to dramatically help those suffering from insulin resistance, PCOS, and infertility). According to the website where I purchase the buckwheat farinetta, a 1 cup serving has 600 milligrams of the stuff (which was the daily dose administered in one of the studies). A woman posted this recipe on a trying-to-conceive message board, and I have tweaked it only slightly. The women on those boards swear by this stuff. Since I have only made one batch of these muffins so far, I can't comment on their effectiveness, but I can say that the recipe is very tasty and my husband (who has no need for the muffins) absolutely loves them.

3 cups buckwheat flour (preferably buckwheat farinetta)
1 tablespoon baking powder
1 teaspoon salt
1 1/4 teaspoons cinnamon
3/4 teaspoon allspice
1/2 teaspoon nutmeg
15 ounces canned pumpkin
3/4 cup brown sugar (packed)
2 eggs
3/4 cup milk (or sub. water)
3 tablespoons oil
2 teaspoons vanilla
1 cup walnuts (chopped)

Steps:

  • Preheat oven to 350 degrees.
  • Mix all the ingredients together (excluding the nuts).
  • Add the nuts.
  • Spoon into muffin tins. Its best to use paper liners because they tend to stick, (even with spray-on cooking oil). They don't rise very much at all, so you can really fill the muffin tins up.
  • Bake for 30 to 35 minutes.
  • (Note: You can also add 1/2 a cup of ground flaxseed to this recipe, which is another food that is really helpful for PCOS and infertility.).

  • The night before you want to make the muffins, put the buckwheat flour, coconut milk, sea salt, and lemon juice in a medium mixing bowl, combine, cover the bowl with a towel, and let it sit overnight (8-9 hours). This soaking process breaks down the phytic acid in the buckwheat seed so it is easier on the gut, and also makes the nutrients in the buckwheat more available to absorb into the body.
  • Add the rest of the ingredients EXCEPT the cherries into the bowl, and stir to combine, and then fold in the cherries.
  • Scoop the batter into silicone muffin cups (my personal preference), or paper muffin cups, and bake at 350 degrees for 30 minutes. Let the muffins cool 10 minutes before taking them out of the muffin tin to finish cooling on a cooling rack.
