BRANDIED CHERRIES
This rich and fruity sauce is a perfect holiday gift idea, and goes well served over ice cream or used in cocktails.

Steps:
- In 2-quart saucepan, mix sugar, water and lemon juice. Heat to boiling. Reduce heat to low; simmer 8 to 10 minutes or until mixture slightly reduces and thickens. Remove from heat. Stir in brandy and pitted cherries.
- Transfer cherries and liquid to jar (liquid should cover cherries completely). Cover with lid; seal tightly. Cool completely, about 3 hours.
- Store in refrigerator 4 to 6 weeks before serving.

- In a rocks glass, muddle the cherry, bitters and ginger. Add ice. Pour in the ginger ale, brandy and cherry juice. Garnish with a cherry if desired.

CHERRY VODKA
Steps:
- Pit and halve the cherries. As in all vodka recipes, it is important that the flesh of the fruit be somehow exposed.
- Fill a jar with the cherries, but do not pack it. Pour the vodka on top and seal tightly. Leave in a dark place, preferably for at least 2 weeks-or up to 6 months. At the end of that time, open the jar and strain. If you have a very fine-mesh strainer, that will do. If not, use an ordinary strainer lined with a cheesecloth or even a coffee filter. Set the strainer over a large bowl, ideally one from which you'll be able to easily pour afterward. Pour the vodka mixture through the strainer and allow the fruit to sit, seeping liquid, for a good hour or so, stirring a bit and pressing if need be to make the liquid go through.
- Now taste the vodka. Add sugar if you want an after-dinner liqueur, or leave it out if you want something sharper. Pour (or ladle) into a decorative bottle.

- Use only fully ripened, unblemished fruit.
- Wash and remove stems and pits.
- Chop and mash fruit.
- Place in a plastic container or large glass bottle.
- Dissolve sugar in the vodka or brandy.
- Pour over the fruit.
- Cover and let sit in a cool dark place for 4 to 6 months.
- Strain out the fruit and bottle.
- Your cherry brandy is ready to drink!

- Add the cherries and sugar to a large, flat-sided skillet (sautoir) or Dutch oven. Stir and allow the mixture to macerate for at least 15 minutes, to allow some liquid to release from the cherries.
- Turn the heat to medium and allow the liquid to come to a simmer while stirring periodically. Stir in the lemon juice and cherry brandy.
- The skillet will continue to fill with liquid as it is released from the cherries. Continue stirring the jam frequently as it simmers, until most of the liquid has evaporated or thickened, 30 to 45 minutes. Remember that the jam will continue to thicken once it cools.
- Once the jam is thick, remove it from the heat. Can, freeze for 3 months, or store in the refrigerator for up to 1 month.
