A juicy maraschino cherry is the secret center tucked inside these special cookies. My mom was inspired to create this by a recipe she clipped out of a newspaper more than 30 years ago. -Evy Adams, West Seneca, New York

Number Of Ingredients 12

1 cup butter, softened
1/2 cup confectioners' sugar
1 tablespoon water
1 teaspoon vanilla extract
2 cups all-purpose flour
1 cup quick-cooking oats
1/2 teaspoon salt
36 maraschino cherries, well drained
COATING:
2 cups confectioners' sugar
1/4 to 1/3 cup whole milk
4 cups sweetened shredded coconut, finely chopped

Steps:

  • Preheat oven to 350°. Cream butter and sugar until light and fluffy. Beat in water and vanilla. In another bowl, whisk flour, oats and salt; gradually beat into creamed mixture. , Shape 1 tablespoonful of dough around each cherry, forming a ball. Place 2 in. apart on ungreased baking sheets. Bake until bottoms are browned, 18-20 minutes. Remove to wire racks to cool. , Stir together confectioners' sugar and enough milk to reach a smooth dipping consistency. Dip cookies, then roll in coconut. Place on waxed paper; let stand until set.

This is another good one from my Grandma Whitehead. We really enjoyed this one at the cookie swap, and I have made them several times since. The don't last too long around my house.

1/2 c butter
1/4 c sugar
1 c flour
1 c red cherries, candied, chopped
1 c chopped pecans
1 tsp water
1 tsp vanilla extract

Steps:

  • 1. Preheat oven to 275 degrees.
  • 2. Cream butter and add sugar gradually.
  • 3. Add flour, cherries, pecans, water and vanilla, and mix thoroughly.
  • 4. Shape into balls and place on a lightly greased cookie sheet.
  • 5. Bake for 30 minutes or until lightly browned.
  • 6. Roll in powdered sugar.

3 (1 ounce) unsweetened chocolate squares
3 tablespoons butter, softened
1 1/2 cups sugar
1 1/2 cups flour
3 eggs
1 1/2 teaspoons baking powder
1/3 cup dried cherries, chopped
1/3 cup sugar
1 (11 ounce) bag chocolate-covered cherries, chocolate-kiss shaped decorative candies, unwrapped

Steps:

  • Place unsweetened chocolate in medium microwave-safe bowl. Microwave on HIGH, stirring every 30 seconds, until melted. Add butter; stir until butter is melted. Cool 10 minutes.
  • Combine melted chocolate mixture, 1 1/2 cups of sugar, 3/4 cups of flour, eggs and baking powder in large bowl. Beat at medium speed, scraping bowl often, until well mixed. Reduce speed to low; add remaining 3/4 cup of flour and dried cherries. Continue beating just until well mixed. Cover; refrigerate until firm. [1 hour].
  • Heat oven to 300. Place 1/3 cup of sugar in small bowl. Shape dough into 1 inch balls. Roll in sugar. Place 2 inches apart onto lightly greased cookie sheets. Bake for 10 to 12 minutes or until top is cracked and set.
  • Immediately press 1 cherry chocolate kiss into each cookie. Remove to cool racks. Cool completely or until chocolate is set. [about 1 hour]. Store between sheets of waxed paper in container with tight-fitting lid for up to 5 days.
