2-1/2 cups all-purpose flour
1 tablespoon sugar
1 teaspoon salt
1 cup cold butter, cubed
7 to 8 tablespoons cold water
FILLING:
2 cans (21 ounces each) cherry pie filling
1 cup fresh or frozen raspberries
1/4 cup packed brown sugar
1/4 teaspoon ground cinnamon
TOPPING:
1 cup yellow cake mix
1/2 cup chopped pecans, toasted
1/2 cup sweetened shredded coconut
1/4 cup butter, melted
2 tablespoons 2% milk
2 tablespoons sugar

Steps:

  • Place the flour, sugar and salt in a food processor; cover and pulse until blended. Add butter; cover and pulse until mixture resembles coarse crumbs. While processing, gradually add water until dough forms a ball., Divide dough in half so that one portion is slightly larger than the other; wrap each in plastic wrap. Refrigerate for 30 minutes or until easy to handle., On a lightly floured surface, roll out larger portion of dough to fit a 9-in. deep-dish pie plate. Transfer pastry to pie plate; trim pastry to 1/2 in. beyond edge of plate. Combine the filling ingredients; spoon into crust. Sprinkle with dry cake mix, pecans and coconut. Drizzle with butter., Roll out remaining pastry to a 13-inch circle; cut into strips for a lattice top. While creating the lattice top, twist the pastry strips for a decorative effect. Seal and flute edges of pie., Brush lattice top with milk; sprinkle with sugar. Cover edges loosely with foil. Bake at 375° for 55-65 minutes or until crust is golden brown and filling is bubbly. Cool on a wire rack.

1/2 teaspoon salt

Steps:

  • Adjust oven rack to lower-third of oven. Preheat oven to 375°F. Place pie crust in bottom of 9-inch pie plate and flute the edges. Pour cherry pie filling into crust.
  • Beat butter, flour, brown sugar and salt in medium bowl with an electric mixer at low speed until streusel topping is blended and crumbly. Pour evenly over pie filling.
  • Place pie on baking sheet and bake 45 to 50 minutes, until streusel topping is golden brown and crisp. Cool completely before slicing. Serve with Reddi-wip.

A lightly spiced sweet cherry streusel pie that tastes like a warm hug and is an excellent use of one of summer's best stone fruits.

Yield 8-10 servings

Number Of Ingredients 20

1¼ cups all purpose flour
½ tsp kosher salt
1½ tsp sugar
¼ lb (1 sticks) cold unsalted butter, cut into ½-inch pieces
½ cup cold water
2 tbsp cider vinegar
½ cup ice
1 cup all purpose flour
3 tbsp packed brown sugar
4 tsp sugar
¼ tsp kosher salt
6 tbsp unsalted butter, cut into ½-inch cubes
1 small granny smith apple
5 cups sweet cherries, pitted
2 tbsp fresh lemon juice
¾ cup packed brown sugar
3 tbsp small tapioca pearls
¼ tsp ground cinnamon
¼ tsp ground cardamom
2 dashes Angostura bitters

Steps:

  • Whisk together the flour, salt, and sugar in a large bowl. Add the butter to the flour mixture and toss to coat. Using a pastry blender, cut the butter into the flour until only pea-sized pieces of butter (or smaller) remain.
  • In a separate small bowl, combine the water, cider vinegar, and ice. Sprinkle 2 tbsp of the ice water mixture over the flour-butter mixture. Toss with your hands until fully incorporated. Add more of the ice water, 1-2 tbsp at a time, using your hands to mix. Add just enough of the water mixture so that the dough comes together into a ball. Wrap in plastic wrap and refrigerate for at least 1 hour.
  • Roll out the pie disc into an 11-inch round. Use this to line the pie plate and crimp the edges as desired. Freeze for at least 30 minutes.
  • Heat oven to 425F and place a baking sheet in the oven to preheat..
  • Remove the frozen pie from the freezer and use a fork to prick it all over the bottom and sides, about 15-20 times. Line the pie tightly with aluminum foil, making sure the edges are completely covered. Fill with pie weights or a pound of beans and place on the preheated baking sheet. Bake for 20 minutes. Remove from the oven, lift out the foil and pie weights, and allow to cool for a minute. Return to the oven and bake for an additional 3 more minutes. Remove and allow to cool completely while you prepare the filling.
  • Whisk together the flour, sugars, and salt in a large bowl. Sprinkle in the butter cubes and toss to coat in the flour mixture. Incorporate the butter into the flour by rubbing it in between your fingers until the mix is chunky and starting to form crumbs. Chill for at least 15 minutes before baking.
  • Heat oven to 425F.
  • Peel the apple and then grate it using the large holes of a box grater. In a large bowl combine the apple shreds with the cherries, lemon juice, sugar, tapioca pearls, cinnamon, cardamom, and bitters. Toss until well combined. Pour into the partially prebaked pie shell. Sprinkle the streusel on top in an even layer.
  • Place the pie on a rimmed baking sheet lined with parchment paper in the lowest rack of the oven. Bake for 20-25 minutes, or until the crust is starting to brown. Lower the oven temperature to 375F and move the pie to the middle rack. Bake until the juices are bubbling in the center, 30-35 minutes longer.
  • Allow to cool completely, about 2-3 hours, before serving.

Steps:

  • Heat oven to 400°F. Prepare pie crust as directed on box for one-crust filled pie using Betty Crocker® stoneware pie pan.
  • In 2-quart saucepan, mix pineapple juice, cherries, cornstarch, nutmeg and ginger. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute; remove from heat. Stir in pears. Spoon into pie crust-lined pan.

  • For crust:

2 tablespoons quick-cooking tapioca
2 tablespoons cornstarch

1 (16 ounce) can pitted sour cherries, drained with liquid reserved
1 (10 ounce) package frozen strawberries in syrup, thawed, drained with liquid reserved
1 tablespoon lemon juice
2 teaspoons white sugar

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a medium saucepan combine 3/4 cup sugar, tapioca, cornstarch, and salt. Mix well, then stir in reserved cherry and strawberry liquids. Suggested by a pie that Publix used to sell, one that was better than either a cherry or blueberry pie alone. This one starts with LubyLubyLuby's Best Cherry Pie recipe (thank you, Luby) and finishes with a streusel topping. If you don't have a pie crust handy, just bake the filling and streusel in a glass or ceramic baking dish and serve it as a crisp/cobbler/crurmble-esque dessert with a scoop of vanilla ice cream.

2/3 cup sugar
2 tablespoons cornstarch
1/4 teaspoon salt
1/2 tablespoon butter, softened

2 -3 drops almond extract

1 single-crust 9 inch pie shell, homemade...or not. I use not.
1 1/4 cups flour
6 tablespoons light brown sugar
1/4 cup granulated sugar

1/4 teaspoon salt
1/2 cup butter, soft, but not melted
1/4 teaspoon vanilla

Steps:

  • Preheat oven to 400 degrees.
  • FILLING: Combine sugar, cornstarch and salt in a mixing bowl.
  • Drain cherries, pouring 1/4 cup of the juice into a small bowl or measuring cup. Set the cherries aside. Add almond extract and vanilla to the juice in the cup.
  • Add the liquid to the dry ingredients in the mixing bowl and mix well. Add the butter and use the back of a fork to smoosh it up into smaller pieces that will spread themselves around the mixture.
  • Stir in the cherries and let the mixture stand for 15 minutes. While it's sitting there, taunting you, make the streusel:.
  • STREUSEL: Combine all dry ingredients in a bowl, then add the butter and vanilla. Cut the butter into the dry ingredients with a pastry blender or two knives until mixture looks crumbly - like a bowl of gravel. (Bad analogy. Sorry.) Set the streusel aside. *Note to self: Next time, make the streusel with cold butter and the food processor, do it ahead of time, and store it in the refrigerator. That way, you can stand around and watch the cherries in that bowl and won't miss out on any of the action.*.
  • Back to the FILLING: Stir the blueberry pie filling into the cherries.
  • Pour filling into pie crust and sprinkle the streusel as evenly as possible over the top. Bake for 50 to 55 minutes.
  • Note: if you decide to go make it without the pie crust, less baking time is required. It will be done when it's bubbly and the streusel is browned - 40-45 minutes.

  • Roll out pie crust disk on floured surface to 13 1/2-inch round. Transfer to 9-inch glass pie dish. Trim overhang to 1 inch. Fold edges under. Crimp, forming high rim (about 1/2 inch above sides of dish). Chill at least 30 minutes and up to 1 day.
  • Mix first 5 ingredients in bowl. Add melted butter and vanilla; rub in with fingertips until small clumps form. DO AHEAD Can be made 4 hours ahead. Cover; let stand at room temperature.
  • Position rack in center of oven; preheat to 375°F. Place foil-lined baking sheet in bottom of oven to catch spills. Mix first 4 ingredients in large bowl. Add cherries; toss to coat. Let stand until cherries begin to release juice, stirring occasionally, about 10 minutes. Transfer filling to chilled crust, mounding in center. Sprinkle streusel over, covering completely and pressing to adhere.
  • Bake pie 20 minutes. Tent loosely with foil. Bake until filling bubbles thickly and streusel is golden, about 1 hour 10 minutes longer. Cool on rack.
