CHERRY-BERRY STREUSEL BARS

We made these fruit-filled oatmeal cobbler bars with Betty Crocker Oatmeal Cookie mix, organic oats and honey granola, cherry preserves and fresh blueberries.

1 pouch Betty Crocker™ oatmeal cookie mix
1/2 cup butter, melted
1 egg
3/4 cup (8 oz) tart cherry preserves
2 cups Cascadian Farm® organic oats & honey granola
2 cups powdered sugar
1/4 cup heavy whipping cream
1/2 cup fresh blueberries, blackberries or cherries, if desired

Steps:

  • Heat oven to 350°F. Lightly grease 13x9-inch pan with shortening or cooking spray. In large bowl, mix cookie mix, melted butter and egg until thick dough forms. Press dough evenly in pan.
  • Spread preserves over cookie dough layer. Sprinkle granola evenly over preserves.
  • Bake 30 to 35 minutes or just until cookie layer is set. Cool completely, about 1 hour.
  • Cut into 4 rows by 3 rows to make 12 bars, or 4 rows by 4 rows to make 16 bars. Gently remove bars from pan; place on cooling rack or serving platter.
  • In small bowl, stir together powdered sugar and whipping cream until thin icing forms. Pour icing into small resealable food-storage plastic bag; seal bag. Cut off 1 bottom corner of bag; drizzle icing over bars. Top each with a few fresh berries. Let icing set before serving. If not serving immediately, cover tightly and store in refrigerator until serving time.

Buttery shortbread cookie base topped with ruby-colored fruit jam

Number Of Ingredients 12

2 cups fresh sour or Bing cherries (--pitted and halved (makes about 1 1/2 cups prepared cherries))
7 large fresh strawberries (--stems removed and sliced (or about 1 cup of slices))
3 tablespoons sugar
1 teaspoon fresh lemon juice
3/4 cup unsalted butter, room temperature ((1 1/2 sticks))
1/2 cup firmly packed brown sugar ((I used dark brown))
1 egg (--separated)
1/2 teaspoon almond extract
1 1/2 cups unbleached all-purpose flour
1/8 teaspoon salt
1/3 cup sliced almonds (toasted)
1/3 cup sweetened flaked coconut (toasted)

Steps:

  • Combine cherries, strawberries, and sugar in a heavy small saucepan. Simmer until almost all liquid evaporates and mixture has jam-like appearance, stirring frequently, about 15 minutes. (As it thickens to this point, you will see the bottom of the saucepan more and more.)
  • Remove the pan from the heat and stir in the lemon juice. Transfer to a bowl and allow to cool completely.
  • Preheat the oven to 350 degrees.
  • Separate the egg yolk from the egg white.
  • Using food processor with steel knife inserted, process butter, sugar, egg yolk, and almond extract until the mixture is smooth, stopping to scrape down the sides of the processor when needed.
  • Add the flour and salt in an even layer over the butter mixture and use 4 or 5 on/off turns to mix just until the dough is combined. Do not overprocess or allow the dough to form a ball in the food processor.
  • Transfer the dough to an 8 X 8 baking dish (preferably glass) and pat down into the bottom of the pan to create an even layer. Whisk the egg white in a small bowl until foamy. Brush the top of the dough with the egg white. Bake crust until the top is golden brown, about 30 minutes.
  • Cool the baked dough completely.
  • Maintaining oven heat, lightly toast the sliced almonds and the coconut flakes --each in its own baking dish-- until light golden brown. Remember to stir frequently so that neither burns.
  • Remove from oven and place on rack. Allow the almonds and coconut to cool.
  • Spread the cherry-berry jam mixture over the shortbread crust.
  • Sprinkle the top with the sliced almonds and coconut flakes, gently pressing them into the jam if needed.
  • Cut bars into 16 squares.

1 cup butter, softened
1 cup white sugar
1 egg
½ teaspoon almond extract
2 cups all-purpose flour
¼ teaspoon salt
¾ cup chopped red and green candied cherries
½ cup crushed candy coated milk chocolates
1 cup sifted confectioners' sugar
5 teaspoons warm water

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C).
  • In a large bowl, cream together butter and sugar until light and fluffy. Beat in the egg and almond extract. Combine the flour and salt; stir into the creamed mixture until well blended. Mix in 1/2 cup of the cherries. Press the dough into an ungreased 9x13 inch baking pan. Sprinkle with remaining cherries and crushed candies. Press in lightly.
  • Bake for 30 to 35 minutes in the preheated oven, or until edges are lightly browned. Cool completely in the pan before icing. To make the icing, mix together the confectioners' sugar and water until a drizzling consistency is reached.

1 teaspoon salt
4 large eggs, room temperature
1 teaspoon vanilla extract

GLAZE:
1 cup confectioners' sugar
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
2 to 3 tablespoons 2% milk

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter, sugar and salt until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in extracts. Gradually add flour., Spread 3 cups dough into a greased 15x10x1-in. baking pan. Spread with pie filling. Drop remaining dough by teaspoonfuls over filling. Bake 35-40 minutes or until golden brown. Cool completely in pan on a wire rack., In a small bowl, mix confectioners' sugar, extracts and enough milk to reach desired consistency; drizzle over top.

This recipe was passed on to me from my sister. It's a perfect holiday treat for Christmas or Easter. Frost with your favorite confectioners' sugar icing. Sprinkle with additional chopped nuts if desired. These freeze well.

2 cups all-purpose flour
1 cup butter, at room temperature
½ cup white sugar
3 large eggs
1 ½ cups light brown sugar
¼ cup all-purpose flour
½ teaspoon baking powder
½ teaspoon salt
1 cup chopped walnuts
½ cup maraschino cherries, drained and chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a 10x15-inch jelly roll pan with aluminum foil.
  • Mix 2 cups flour, butter, and white sugar together into a smooth dough in a large bowl. Press evenly into prepared pan to make crust.

1/4 cup butter, softened
1 cup all-purpose flour
1/2 cup dark brown sugar
1 lemon, zested
1/2 cup lemon juice
1 egg
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
3/4 cup assorted frozen cherries, thawed, drained well, pitted and chopped
1/4 cup mixed berry preserves
Powdered sugar, for dusting

Steps:

  • Preheat oven to 350 degrees F.
  • In large bowl with an electric mixer, mix butter until fluffy. Add half the flour, then add in order: brown sugar, lemon zest, juice and egg. To remaining flour add baking powder, baking soda, cinnamon and cloves. Combine both mixtures until just incorporated. Fold in cherries and pour into an ungreased 8 by 8-inch baking pan. Using a spoon, equally dollop preserves on top of batter and using a toothpick or skewer, drag the tip through the preserves to create a swirl pattern on top.
  • Bake for 30 minutes or until a toothpick inserted in center comes out clean; cake will be moist to the touch. Once cooled, cut into squares and dust with powdered sugar to serve.
