Cherry-Almond Balls image

I have included this treat in my Christmas baking for years, much to the delight of my family. Instead of almonds, I'll sometimes use pecans, and they're equally loved. -Ada Rost, Hernando, Florida

3/4 cup butter, softened
1/3 cup confectioners' sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
1/4 teaspoon salt
1/2 cup chopped almonds
60 red and/or green candied cherries
Additional confectioners' sugar

Steps:

  • In a small bowl, cream butter and sugar until light and fluffy. Add vanilla. Combine flour and salt; gradually add to creamed mixture and mix well. Stir in almonds. , Roll 1 teaspoon of dough around each cherry. Place on greased baking sheets. Bake at 325° for 15-20 minutes or until lightly browned. Remove to wire racks to cool slightly; roll in confectioners' sugar.

Steps:

  • Beat cream cheese, sugar, butter, and vanilla extract together in a bowl using an electric mixer. Beat in coconut and cherries.
  • Drop batter by teaspoonfuls into graham cracker crumbs and form into balls; roll again and place on wax paper-lined baking sheets.
  • Refrigerate for 2 hours before serving.

1 cup butter, softened
1/2 cup confectioners' sugar
1 tablespoon water
1 teaspoon vanilla extract
2 cups all-purpose flour
1 cup quick-cooking oats
1/2 teaspoon salt
36 maraschino cherries, well drained
COATING:
2 cups confectioners' sugar
1/4 to 1/3 cup whole milk
4 cups sweetened shredded coconut, finely chopped

Steps:

  • Preheat oven to 350°. Cream butter and sugar until light and fluffy. Beat in water and vanilla. In another bowl, whisk flour, oats and salt; gradually beat into creamed mixture. , Shape 1 tablespoonful of dough around each cherry, forming a ball. Place 2 in. apart on ungreased baking sheets. Bake until bottoms are browned, 18-20 minutes. Remove to wire racks to cool. , Stir together confectioners' sugar and enough milk to reach a smooth dipping consistency. Dip cookies, then roll in coconut. Place on waxed paper; let stand until set.

This recipe can also use rum instead of bourbon and also you can use chocolate wafers instead of vanilla wafers. Be sure to age these for at least a few days in a tin before serving.

1 cup semisweet chocolate chips
½ cup bourbon
¼ cup corn syrup
3 cups crushed vanilla wafers
1 ½ cups ground walnuts
24 candied cherries, halved
½ cup confectioners' sugar

Steps:

  • In the microwave oven or over a double boiler, melt chocolate chips, stirring occasionally until smooth. Remove from heat and stir in the bourbon and corn syrup.
  • In a medium bowl, toss together the crushed vanilla wafers and ground walnuts. Pour the chocolate mixture over the crumbs in the bowl and blend well using your hands. Shape into 1 inch balls and press a cherry half into the center of each one. Roll each cookie in confectioners' sugar to coat.
  • Store in an airtight tin for at least a week before serving.

1 tablespoon orange juice
1 1/2 cups coconut (finely shredded or grated)

Steps:

  • Dry the cherries on paper towel.
  • Cream the butter and gradually mix in the icing sugar and orange juice.
  • Add coconut and mix well.
  • Note: this mixture will be soft.
  • Roll a small portion of the coconut mixture evenly around each cherry and then roll in graham wafer crumbs.
  • Place on wax paper and keep cool.

0.25 cup coarsely chopped maraschino cherries
1 cup butter, softened
0.5 cup powdered sugar
0.5 teaspoon almond extract
0.5 teaspoon vanilla
2 cup all-purpose flour
0.75 cup chopped walnuts, toasted*
Red edible glitter (optional)
Powdered sugar

Steps:

  • Preheat oven to 325°F. Drain chopped maraschino cherries on paper towels; pat dry to remove any excess liquid. Set cherries aside.
  • In a large mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Add the 1/2 cup powdered sugar, almond extract, and vanilla. Beat until combined, scraping sides of bowl occasionally. Beat in as much of the flour as you can with the mixer. Using a wooden spoon, stir in any remaining flour, the walnuts, and maraschino cherries.
  • Shape dough into 1-inch balls. Place balls 2 inches apart on an ungreased cookie sheet. Bake for 18 to 20 minutes or until bottoms are light brown. Cool on cookie sheets for 5 minutes.
  • If desired, stir some red edible glitter into additional powdered sugar. Roll warm cookies in the powdered sugar mixture to coat. Place cookies on wire racks; cool. If desired, roll cooled cookies in the powdered sugar mixture again before serving.

1/2 c butter, softened
1 1/2 c confectioners' sugar
1 1/2 c shredded coconut
1 Tbsp cream or milk
1 small jar, marachino cherries, ( mine were large, so i cut them in half)
1/2 - 3/4 c graham cracker crumbs or finely chopped nuts

Steps:

  • 1. Drain cherries and set aside.
  • 2. Cream the softened butter and confectioners' sugar. I used my hand mixer.
  • 3. Blend in the coconut and cream; mix well. Chill for 15 minutes.
  • 4. Take a piece of mixture in your hand, about a tablespoonful, flatten, add cherry and roll in your hand to completely cover the cherry.
  • 5. Roll in graham cracker crumbs or nuts to coat. Refrigerate for 2 hours to chill and firm.
