4 cups fresh or frozen pitted tart cherries, thawed and drained
1/4 teaspoon almond extract
Pastry for double-crust pie (9 inches)
2 tablespoons butter, cut into small pieces

Steps:

  • Preheat oven to 400°. In a large bowl, combine sugar and flour; stir in cherries and extract. , On a lightly floured surface, roll one half of the pastry dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim pastry to 1/2 in. beyond rim of plate. Add filling; dot with butter., Roll remaining dough to a 1/8-in.-thick circle; cut into 1-1/2-in.-wide strips. Arrange over filling in a lattice pattern. Trim and seal strips to edge of bottom pastry; flute edge. Cover edge loosely with foil., Bake until crust is golden brown and filling is bubbly, 40-50 minutes. Remove foil. Cool on a wire rack.

2 ½ cups all-purpose flour
½ teaspoon sea salt, divided
1 cup unsalted butter, well chilled and cut into cubes
½ cup ice water
1 ¾ pounds fresh cherries, stemmed and pitted (or frozen cherries, partially thawed)
½ cup Stevia In The Raw®
¼ cup cornstarch
2 tablespoons fresh lemon juice
2 tablespoons 2% milk
1 tablespoon Stevia In The Raw®

Steps:

  • In a food processor, pulse flour and salt to combine. Add butter and pulse until the size of small peas. Add 6 tablespoons water and pulse 15 times. (If dough is still dry, add more water, 1 tablespoon at a time, until dough just comes together.)
  • Divide dough in half, shape into discs, wrap in plastic wrap, and refrigerate at least 1 hour.
  • Preheat oven to 425 degrees F.
  • In a large bowl, combine cherries, stevia, cornstarch, and lemon juice.
  • On a lightly floured surface, roll half the dough into a 12-inch circle.
  • Transfer to a 9-inch pie pan, pressing gently into the corners. Trim edges so the dough hangs 1/4 inch over the sides. Refrigerate.
  • Roll out the rest of the dough as above, and cut into 3/4-inch wide strips.
  • On a lightly floured cookie sheet, place half the dough strips 1/2-inch apart, then weave the remaining strips through them in a perpendicular, alternating over, under pattern.
  • Remove crust from refrigerator and pour filling into it.
  • Slide lattice off the cookie sheet directly on top of the pie.
  • Trim lattice strips, leaving a 1/4-inch overhang.
  • Tuck ends of the strips under the edge of the bottom crust, then crimp the edge.
  • Brush top of the pie with milk and sprinkle with Sugar In The Raw, if desired.
  • Bake 30 minutes, then lower heat to 350 degrees F and bake until the juices are thick and bubbling, about 25 to 30 minutes.
  • Cool on a rack.

2 1/2 cups all-purpose flour, plus some for dusting the board
2 teaspoons plus 1 tablespoon sugar
2 teaspoons kosher salt
1/2 cup cold unsalted butter, cut in small pieces
6 tablespoons cold vegetable shortening
About 6 tablespoons ice water, more as needed
1 egg, lightly beaten
2 1/2 pounds fresh strawberries, hulled and halved to make 6 cups
3/4 cup sugar
1 tablespoon fresh, strained lemon juice
1/4 cup cornstarch
Pinch salt
1 tablespoon cold unsalted butter, cut into small pieces

Steps:

  • To make the crust, combine the flour, 2 teaspoons of the sugar and the salt in a large bowl. Add the butter and shortening and rub into the dry ingredients until the mixture resembles coarse meal. Gradually and gently stir in just enough water to make it come together. Divide the dough in halve and gently press each half into a ball. Wrap both in plastic, flatten into disks, and refrigerate until cold, at least 30 minutes and up to 1 day.
  • To make the filling, preheat the oven to 425 degrees. In a large bowl, toss together the strawberries, sugar, cornstarch, lemon juice, and salt. Set aside.
  • On a lightly floured surface, roll out one dough round to fit a 9-inch pie plate. Fit the dough in the pie plate and spoon in the filling. Scatter the butter evenly over the top. Roll out the remaining dough, cut it into 1-inch strips and weave a lattice top over the filling. Trim and crimp the edges. Brush the egg over the crust and sprinkle with the remaining tablespoon of sugar. Place on a rimmed baking sheet to catch any drips and bake for 15 minutes. Turn the oven down to 350 degrees. Continue baking until the crust is nicely browned and the filling bubbles thickly, 40-50 minutes. Place on a rack to cool completely, at least 3 hours and up to 1 day. Cut into wedges and serve.

Nonstick cooking spray
1 tablespoon vanilla wafer or graham cracker crumbs, optional (see Cook's Note)
2 sheets of your favorite homemade or store-bought refrigerated pie dough (enough for a 9-inch double-crust pie)
1 1/2 pounds pitted cherries
1/4 pound diced fresh strawberries
2/3 cup granulated sugar
3 tablespoons cornstarch
Pinch of salt
Zest of 1 lemon
Juice of 1/2 lemon
1 teaspoon pure vanilla extract
2 tablespoons heavy cream or milk

Steps:

  • Spray a 9-inch pie plate with a light coating of cooking spray. Sprinkle about 1 teaspoon of the wafer crumbs, if using, on the bottom of the pie plate.
  • Roll out 1 sheet of the pie dough until large enough to fit into your prepared pie plate with 1 inch of overhang all around. Press the dough into the pie plate. Sprinkle the remaining wafer crumbs on top of the pie crust and refrigerate. Roll out the remaining sheet of pie dough into a rough rectangle about 1/8 inch thick and refrigerate while you prepare the filling.
  • Combine the cherries and strawberries in a large bowl. Mix the sugar, cornstarch, salt and lemon zest in a small bowl. Sprinkle over the fruit and mix well. Add the lemon juice and vanilla and toss to coat. Pour the filling into the chilled bottom crust. Brush some of the heavy cream onto the edge of the overhanging dough.
  • Remove the rectangle of dough from the refrigerator and cut into 1-inch-wide strips. Lay strips of dough across the entire pie in one direction about 1 inch apart. Starting at one end of the pie, fold back every other strip halfway. Lay another dough strip perpendicular to the first row of strips. Unfold the strips back over the new strip, then fold alternate strips back halfway. Add another perpendicular strip; unfold the strips back over it. Repeat to form a lattice. Trim off excess dough from the strips and then fold in the 1 inch overhang, rolling it in towards the edge of the pie plate so that it sits on top of the plate's rim. Crimp as desired.
  • Brush just the lattice portion with the remaining heavy cream. Place the pie in the freezer for 30 minutes to chill and rest.
  • Place a foil-lined rimmed baking sheet on the center rack of the oven and preheat to 400 degrees F. When the pie has chilled, place it on the preheated baking sheet and bake until the crust is golden and the pie is bubbling vigorously, 65 to 75 minutes, checking the pie after 35 minutes for browning. Rotate the baking sheet back to front. If the pie is browning too quickly, take a piece of aluminum foil, poke a few holes in it, then lay it gently over the top of the pie for the remainder of the bake time. The center of the pie must be bubbling for the cornstarch to be fully activated. The center of the pie should reach an internal temperature of about 212 degrees F.
  • Let cool for at least 3 hours before serving to allow the filling to thicken.

2 ounce pitted tart red cherries (water pack)
1.5 cup sugar
0.25 cup cornstarch
0.5 teaspoon ground cinnamon
1 tablespoon butter
0.5 teaspoon almond extract
2.25 cup all-purpose flour
0.75 teaspoon salt
0.667 cup shortening

Steps:

  • Prepare and roll out Pastry for Double-Crust Pie or let refrigerated pie crusts stand at room temperature according to package directions. Line a 9-inch pie plate with a pastry circle; trim to 1/2 inch beyond edge of pie plate. Roll out remaining pastry and cut into 1/2-inch-wide strips.
  • Preheat oven to 375°F. For filling, drain cherries, reserving the liquid from 1 of the cans (discard liquid from the other can). In a medium saucepan combine sugar, cornstarch, and cinnamon. Gradually stir in reserved cherry liquid. Cook and stir over medium-high heat just until bubbly. Remove from heat; stir in cherries, butter, and almond extract.
  • Transfer filling to the pastry-lined pie plate. Weave pastry strips in a lattice pattern. Press ends of strips into bottom pastry rim. Fold bottom pastry over strip ends; seal and crimp edge.
  • To prevent overbrowning, cover edge of pie with foil. Bake in the preheated oven for 35 minutes. Remove foil. Bake for 20 to 25 minutes more or until filling is bubbly and pastry is golden. Cool on a wire rack. Makes 8 servings. Pastry for Double-Crust Pie
  • In a medium bowl stir together flour and salt. Using a pastry blender, cut in shortening until pieces are pea-size. Sprinkle 1 tablespoon cold water over part of the flour mixture; gently toss with a fork. Push moistened dough to side of bowl. Repeat, using 1 tablespoon water at a time until all the flour mixture is moistened (about 8 to 10 tablespoons total). Divide dough in half. Form each half into a ball. On a lightly floured surface, use your hands to slightly flatten 1 dough ball. Roll dough from center to edges into a 12-inch circle. To transfer pastry, wrap it around the rolling pin; unroll into a 9-inch pie plate. Ease pastry into pie plate, being careful not to stretch pastry. Trim pastry even with the rim of the pie plate. Fill pie and continue as directed.

¼ cup cornstarch (30 grams)

2 tablespoons heavy whipping cream (28 grams)

Steps:

  • Preheat the oven to 375°F.
  • In a large saucepan set over medium heat, cook the cherries and sugar, stirring occasionally, for 5 minutes.
  • In a small bowl, stir together the cornstarch, lemon juice, and salt until smooth. Fold into warm cherries. Cook 2-3 minutes, stirring frequently, until mixture is very thick. Remove from heat.
