Steps:
- Heat 1/2 cup butter, white sugar, and cocoa powder in a saucepan over medium heat; cook and stir just until butter melts, about 2 minutes. Remove saucepan from heat; stir in beaten egg. Return pan to stove; cook and stir until cocoa mixture thickens slightly, about 3 minutes. Remove saucepan from heat.
- Stir graham cracker crumbs, coconut, and walnuts into cocoa mixture. Press mixture firmly into an ungreased 9x9-inch baking pan.
- Beat 1/4 cup butter, confectioners' sugar, cherry juice, and almond extract in a bowl with an electric mixer until smooth; stir in cherries. Drop cherry mixture by spoonfuls over base layer, then spread evenly. Let cherry mixture layer stand until slightly firm, about 10 minutes. Using your hand, pat cherry mixture layer to smooth.
- Melt 1 tablespoon butter in a small saucepan over low heat; stir in chocolate chips. Cook and stir mixture until melted and smooth, about 3 minutes. Pour chocolate mixture over middle layer. Working quickly, smooth chocolate with the back of a spoon. Chill before cutting into bars, about 30 minutes.

NANAIMO BARS (WITH 6 VARIATIONS)
These no-bake, three layered snack bars start with a crumb base, followed by a layer of light custard buttercream, then topped with a shimmering layer of chocolate. Nanaimo Bars are one of Canada's favorite confections, named after the beautiful city of Nanaimo, B.C. It all began when Mabel Jenkins, a Nanaimo housewife entered the recipe in a magazine contest back in the 1950's. She won the contest with these tasty treats even made the town famous for them. There are six variations of filling here at the bottom of this recipe. Buddha got this recipe from a co-worker named Kindalee.

- Prepare an 8 or 9 inch pan by lining it with foil or parchment paper, and greasing it with cooking spray or butter.
- In a large bowl, cream the softened butter using an electric mixer. Add the cherry juice and almond extract and mix. Gradually beat in the icing sugar until it is s a smooth, spreadable consistency. On low, mix in the maraschino cherries.
- Chop or break apart the chocolate into small pieces so that it melts more easily. Place in a small bowl with the butter and microwave for 30 seconds at a time, stirring in between. Do not over-do it otherwise the chocolate could seize. Once melted and smooth, use a fork to flick/drizzle the melted chocolate over the top of the cherry icing. If it's too thick, warm in the microwave briefly. Place the pan in the freezer to set.
