2-1/2 pounds fresh tart cherries, pitted
1 package (1-3/4 ounces) powdered fruit pectin
1/2 teaspoon butter
4-3/4 cups sugar

Steps:

  • In a food processor, cover and process cherries in batches until finely chopped. Transfer to a Dutch oven; stir in pectin and butter. Bring to a full rolling boil over high heat, stirring constantly. Stir in sugar; return to a full rolling boil. Boil and stir 1 minute. , Remove from heat; skim off foam. Ladle hot mixture into 6 hot sterilized half-pint jars, leaving 1/4-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 5 minutes. Remove jars and cool.

Out of all the jams I've made over the years {and I've made a lot!} this recipe for cherry almond jam is HANDS DOWN my favorite all time jam recipe. Who knew, that after all these years of canning, there were still undiscovered recipes that could knock my socks off! I don't know about you, but I LOVE finding new recipes, especially ones that can make a simple hostess or last minute gift.

Number Of Ingredients 5

36 ounces pitted sweet cherries, chopped {weight is AFTER pits are removed}
3/4 cup almond liqueur {I used Jenkins Amaretto Liqueur, it was $4.99 for a 750 ml bottle}
3 tablespoons lemon juice
1 package {1-3/4 ounces} powdered fruit pectin
4 1/2 cups sugar

Steps:

  • Bring a boiling-water canner, 3/4 full with water, to simmer. Wash jars and screw bands in hot soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain well before filling.
  • In a 6 - 8 quart sauce pot, combine the first four ingredients. Bring to a boil, stirring frequently. Slowly stir in the sugar and return to a full rolling for 1 minute, making sure to stir constantly to avoid boiling over. Remove from heat and skim off any foam with metal spoon.
  • Ladle immediately into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with two-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. {Water must cover jars by 1 to 2 inches. Add boiling water, if necessary.}
  • Cover; bring water to gentle boil. Process 10 min. Remove jars and place upright on towel to cool completely. After jars cool, check seals by pressing middles of lids with finger. If lids spring back, lids are not sealed and refrigeration is necessary}.
  • Yields {6} 1/2 pints plus a wee bit extra for snacking.

3 12 oz bags of frozen sweet cherries, thawed and drained
6 Tbsp Ball Classic Pectin
3/4 C almond liqueur
3 Tbsp fresh lemon juice
4 1/2 C raw sugar

Steps:

  • After thawing cherries, drain and set juices aside.
  • Finely chop the cherries with a knife and then combine them in a saucepan with the pectin, almond liqueur, and the lemon juice.
  • Bring the cherries to a boil, stirring frequently to prevent burning, then add the sugar and return the mixture to a boil. Boil the jam at a hard boil for 1 minute, stirring constantly, and then remove from the heat.
  • Dip your ladle and funnel into your boiling water for approximately 1 minute to ensure they are sterile. Next, ladle the jam into warm, sterilized canning jars. Be sure not to touch the insides of the jars and resist the temptation to lick your fingers throughout the process (this part will be difficult). This will ensure that you create a sterile environment within the jars by the time you're done.
  • Next, clean the rims of your jars with a paper towel that you dipped into boiling water. If there is jam on the rims of the jars when you place the lid on top, it can compromise the integrity of the seal.
  • Now you'll get ready to sterilize your lids in the small saucepan of hot water. You'll want to be careful not to boil the lids, as this can damage the seals (I know, there are so many things to remember when you're canning), so bring the water to a boil first, remove from the heat, and then place the lids inside. Wait 5 minutes before using, so that the heat has time to work it's bacteria-killing magic. Next, remove the lids with the magnetic lid grabber, being sure not to touch the bottoms of the lids, and place them on the jars.
  • Finally, place your rings on your jars. Now comes the tricky part - you will screw the ring on until it is just tight, and then go back the other direction about one-eighth of an inch, or a couple of millimeters, loosening the ring a bit. This is very important - don't skip this step! This will allow some air to escape the jars while you're boiling them, and then create a vacuum as they cool, sealing the jars.
  • Place the jars into the boiling hot water bath (or large pot) using your jar grabber. Bring the water to a full boil, place the lid on the pot, and set your timer for 10 minutes. I used too small of a pot, because I'm too cheap to buy a larger one, so water spilled all over my stove... I don't recommend doing this.
  • After the jars have boiled (or have been "processed") for ten minutes, remove them from the pot using your grabber again and place them upright on some dish towels to cool. You will need to let them rest for 24 hours, so pick a place where they won't be in the way, and won't be a temptation for little hands or curious pets. That said, I do encourage you to crack open a jar early! You will just need to store it in the refrigerator after it has been opened.
  • Once 24-hours have elapsed remove all the rings from your jars. This will prevent moisture from forming around the edge of the lid and ensure the integrity of your seal. Your jars are now ready to store in a cool, dark place, such as your pantry or your basement. They will keep for 12 months. Once a jar is open, it will keep in the refrigerator for 1 month. When storing an opened jar, use one of your rings to keep the lid on tight.

SUGAR-FREE CHERRY JAM



Sugar-Free Cherry Jam image

A cherry jam recipe that requires no sugar but is still shelf-stable for up to a year. This jam has a perfect gel and texture and is absolutely amazing.

4 cups of cherries (pitted, chopped)
1/2 cup lemon juice
1 cup allulose
2 tsp Pomona's Universal Pectin
2 tsp calcium water (provided in the pectin box)
1 tsp vanilla (optional)

Steps:

  • Wash jars, bands, and lids well. Place jam jars in water bath canner filled 1/2 way with water. Bring water to a rolling boil. Turn off the burner and leave jars in canner until ready to use.
  • Place lids and bands in water in a small saucepan and heat until water simmers. keep lids & bands in warm water until ready to use.
  • If using fresh cherries, pit before adding to a large saucepan. If using frozen measure and just pour right in.
  • Add lemon juice and calcium water and blend in well.
  • In a bowl add allulose and pectin and blend well.
  • Heat the cherries in the saucepan over medium heat. As they start to soften, mash with the back of a fork, or use a potato masher. I like to leave a few whole cherries in my jam, but mash to the consistency that you like. Bring cherries to a boil.
  • Add pectin-sweetener mixture, continuing to mix for 1 to 2 minutes to dissolve the pectin while the jam comes back up to a boil. Boil for 1 full minute once the jam reaches the boiling stage.
  • Fill jam jars to ¼" to the top. Clean rims with a clean cloth. Add lids and twist bands until finger tight.
  • Add jars to the water bath canner when the water in the canner reaches a full boil. Boil 10 full minutes (add 1 minute more for every 1,000 ft. above sea level).
  • Remove from water. Let jars cool undisturbed for 24 hours.
  • Test for seal, if a jar did not seal, you can reprocess it again in the canner for 10 full minutes, or add that jar to the refrigerator for up to 3 weeks.

This recipe came from my mother-in-law. It's very old-fashioned-in fact, the friend who gave it to her used to cook it up on an old wood stove. With all the cherry orchards here in Bitterroot Valley, I make two batches of these preserves each summer. (I get the cherries from a nearby cannery by the gallons!) My family likes them on fresh bread, muffins, pancakes and even ice cream-the consistency's similar to a topping. I have to be careful, though, and ration the jars out or they'd be the first thing to disappear from the root cellar! Both my husband and I serve as 4-H leaders. We have three children-girls 16 and 14 and a son who's 12.

1-1/2 cups water
10 cups sugar
2 pouches (3 ounces each) liquid fruit pectin
1 teaspoon almond extract

  • In a stockpot, bring cherries and water to a boil; boil 15 minutes. , Stir in sugar. Bring to a full rolling boil over high heat, stirring constantly. Boil 4 minutes. Stir in pectin. 3 pkg. (12 oz. each) frozen sweet cherries, thawed, drained
1/4 cup almond-flavored liqueur
3 Tbsp. fresh lemon juice
1 box SURE-JELL Fruit Pectin
1/2 tsp. butter or margarine
4-1/2 cups sugar, measured into separate bowl

Steps:

  • Bring boiling-water canner, half full with water, to simmer. Wash jars and screw bands in hot soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain jars well before filling.
  • Finely chop or grind cherries; place in 6- or 8-qt. saucepot. Add liqueur and lemon juice; mix well.
  • Stir pectin into prepared fruit mixture in saucepot. Add butter to reduce foaming. Bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly. Stir in sugar. Return to full rolling boil and boil exactly 1 min., stirring constantly. Remove from heat. Skim off any foam with metal spoon.
  • Ladle immediately into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with two-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. (Water must cover jars by 1 to 2 inches. Add boiling water, if necessary.) Cover; bring water to gentle boil. Process 10 min. SOUR CHERRY JAM



Sour Cherry Jam image

Sour cherry jam is just packed with incredible cherry flavor.

3 lbs sour cherries (2 1/2 lbs pitted, or 5 cups pitted)
Juice of 1 lemon (2 Tbsp.)
2 cups sugar (see note)

Steps:

  • Pit fresh 3 lbs sour cherries. If working with pitted fruit, the total weight should be about 2 1/2 lbs pitted, or roughly 5 cups pitted fruit.
  • Place the fruit in a heavy-bottomed jam pot along with lemon juice. Bring to a boil over medium-high heat.
  • Cook the cherry mixture, stirring continuously to avoid boil-overs, for about 20 minutes until the fruit has completely fallen apart.
  • Add sugar. (If adding pectin, now is the time, see notes).
  • Continue cooking the jam until it reaches gel stage, about 25 to 30 more minutes.
  • Test for gel stage on a plate that's been placed in the freezer, or with an instant-read thermometer (220 degrees F at sea level).
  • Turn off heat and ladle jam into prepared jars. De-bubble, wipe rims and adjust headspace to 1/4 inch. Store in the refrigerator for immediate use (within 1 month), or process in a water bath canner for 10 minutes for a shelf-stable jam.

  • Remove any stems from your cherries. To pit the cherries, place them over the open mouth of a clean, empty glass bottle (e.g. a beer bottle) facing upwards. Use a chopstick to poke through the cherry so that the pit pops out straight into the bottle. Repeat with the rest of the cherries - you should end up with roughly 1kg of cherries.
  • Place the pitted cherries into a large pot with the sugar and lemon juice. Place over a low heat and stir occasionally until it starts to bubble. As you start to see juice coming out of the cherries, turn the heat up. Keep stirring occasionally until the jam just starts to simmer then turn the heat down to low and leave to simmer. Let it simmer for 20-30 minutes until it has thickened and will coat a wooden spoon with a jammy layer.
  • You can test if the jam is done by placing a small plate into your freezer for 5 minutes so it gets nice and cold. Scoop a spoonful of jam onto the plate. Let it sit there for a minute to cool then push with a finger - if the jam wrinkles and leaves a clear line it's done, if it is still liquidy it needs to be cooked for longer.
  • Remove from the heat and stir in the almonds and almond extract. Divide between sterilised glass jars and leave to cool. Store at cool place for up to 3 months.
