CHERRY MARSHMALLOW DESSERT BY FREDA



Cherry Marshmallow Dessert By Freda image

This will be one of your Favorite Festive Dishes. So Simple to prepare a day ahead. Patience Please, Photo coming. If you get this made be fore I do, Please share your photo.

STEP ONE
2 1/2 c graham cracker crumbs
1/3 c butter, softened
1/4 c brown sugar
STEP 2
1 c whipping cream, ( may substitute cool whip)
1 tsp pure vanilla extract
STEP 3
2 c mini marshmallows
STEP 4
2 c cherry pie filling ( add more if you desire)

Steps:

  • 1. STEP ONE: Preheat Oven @ 350 degrees Step one Ingredients; Mix in Medium Bowl. Set aside 1 cup The remaining Mixture Press in 9 X 13 baking dish. Bake for 5 Minutes.
  • 2. Step Two: Whip cream in a small bowl until stiff. Fold in Vanilla. Spread over the Crumb Mixture above.
  • 3. Step 3: Sprinkle Mini Marshmallows over step 2, Whipped Cream.
  • 4. Step 4: Cover Step 3 (Mini Marshmallows) with Pie Filling. Sprinkle reserved Cup of Crumb Mixture over Pie Filling. Press down Lightly. Chill several Hrs or Over Night. Serves 8-10 in 9 x 13 dish. Kitchen Helper tip: you can use any of your Favorite Pie Fillings; Raspberry, Blueberry, Etc. instead of Cherry.

This was my grandmother Freda's 'famous' cherry salad. It was a huge hit at family gatherings. My mom mixes the lemon Jello, lemon juice, cream cheese and mayo in the blender. But here's the original recipe. Enjoy!

1 (3 ounce) package strawberry flavored Jell-O® mix
1 cup boiling water
1 (21 ounce) can cherry pie filling
1 (3 ounce) package lemon flavored Jell-O® mix
¾ cup boiling water
¼ cup lemon juice
1 (3 ounce) package cream cheese
⅓ cup mayonnaise
1 (8 ounce) can crushed pineapple, undrained
2 cups miniature marshmallows
½ cup whipped cream
½ cup chopped walnuts

Steps:

  • Dissolve the strawberry gelatin in 1 cup of boiling water. Stir in the cherry pie filling, then spread the mixture into a 7x11 inch pan, and refrigerate until nearly set, about 45 minutes.
  • Dissolve the lemon gelatin in 3/4 cup boiling water; stir in the lemon juice, and set aside. Mash the cream cheese in a separate bowl until soft, then stir in the mayonnaise. Pour the lemon gelatin into the cream cheese mixture and stir until smooth. Next, stir in the undrained pineapple. Finally, fold in the marshmallows and whipped cream. Spread the pineapple mixture over the chilled cherry layer, and sprinkle with chopped walnuts. Chill in the refrigerator until fully set, about 2 hours.

Number Of Ingredients 15

3/4 cup maraschino cherry, undrained
16 ounces prunes, in heavy syrup undrained
1 1/4 cups sugar
3/4 cup vegetable shortening
4 eggs (or equivalent amount of egg replacer)
1 cup chopped walnuts
3 tablespoons whiskey
1 (15 ounce) box raisins
1 (15 1/4 ounce) can crushed pineapple, undrained
4 cups all-purpose flour
1 tablespoon ground cinnamon
2 teaspoons baking soda
1 teaspoon ground cloves
1/2 teaspoon salt
vegetable cooking spray

Steps:

  • Drain cherries, reserving 3 tablespoons juice. Cut in half. Drain prunes, reserving 6 tablespoons syrup. Pit prunes.
  • Cream sugar, shortening and eggs or egg substitute at medium speed of a mixer for two minutes. Stir in cherries, reserved cherry and prune juice, prunes, walnuts, whiskey, pineapple and raisins. Combine flour and dry ingredients, add to creamed mixture and stir well.
  • Spoon batter into a 10 inch tube or bundt pan coated with cooking oil spray. Bake in a preheated 350 degree oven for 1 hour and 15 minutes or until a toothpick or wooden skewer comes out clean. Let cool in pan for 10 minutes on a wire rack, remove from pan and let cool completely. Store in tightly wrapped plastic wrap. Slice and enjoy.

Mouth Watering, Simple Dessert with Graham crackers layered. You will get oooz & awww's from all your guests. Tips: No cooking & NO Baking. Any canned Pie filling fruit can be used. Recipe can be Doubled for a bigger pan. NOTE: Prep time does not include Chilling time.

14 whole - graham crackers
1 pkg - instant vanilla pudding and pie mix(6 serving size)
2 Cups - cold milk
1 Cup - (thawed) cool whip
1 can - (21oz) cherry pie filling or (filling of your choice)
2 cups - finely chopping strawberries ( optional) spooned over top

Steps:

  • LINE a 9" SQUARE PAn, with the WHOLE GRAHAM CRACKERS. (break if Necessary to fill this pan.)
  • Combine Pudding mix with milk beat slowly with electric mixer, until blended, usually about 2 minutes. Let Stand for another 5 Minutes. Now, Fold in the whipped topping.
  • Spread 1/2 of this mixture over the Graham crackers. Add another Layer of Crackers. Add another layer of the Pudding Mixture. Top with Remaining crackers, another Layer. Then top with the Cherry Pie Filling. OR Substitute the Strawberries over top. CHILL for at Least 3 Hrs before Serving. Serves 9 or one 9 X 9 pan.
