CHERRY FRENCH TOAST BREAKFAST BAKE



Cherry French Toast Breakfast Bake image

This tastes like French toast with cherries and cream. Leftovers can be refrigerated and reheated in the microwave or toaster oven. I created this to clean out my fridge and cupboards, but it can be made ahead to bake the next day!

6 eggs
6 slices bread, or more to taste
1 (12 ounce) can cherry pie filling
1 cup Greek yogurt
3 tablespoons butter, softened
3 tablespoons white sugar, or more as needed
2 tablespoons all-purpose flour, or more as needed
2 tablespoons chopped almonds
1 teaspoon ground cinnamon

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x9-inch baking dish.
  • Whisk eggs in a bowl until smooth.
  • Line the bottom of the prepared dish with half of the bread. Bread can be sliced or torn to cover the bottom of the dish flat. Pour half of the eggs over and spread to the edges to saturate bread. Spread half of the pie filling over.
  • Line the dish with remaining bread and pour remaining eggs over to saturate; some may leak through below and that is okay. Cover with yogurt and spread evenly to seal the top. Pour remaining pie filling over and spread evenly.
  • Place butter, sugar, flour, almonds, and cinnamon into a bowl. Work the dry ingredients into the butter with a fork to create crumbs, adding more flour and sugar if needed to get the right consistency. Sprinkle crumb over the top of the cherry filling. Place the baking dish on a baking sheet.
  • Bake in the preheated oven until the center topping is bubbling, 35 to 40 minutes. Let cool for 10 minutes before cutting with a spatula to serve.

1 pkg. (1 oz.) JELL-O Vanilla Flavor Sugar Free Fat Free Instant Pudding
1-1/4 cups cold fat-free milk
1/2 tsp. almond extract, divided
1 cup thawed COOL WHIP LITE Whipped Topping
2 Tbsp. slivered almonds, toasted, chopped and divided
1 can (21 oz.) light cherry pie filling

Steps:

  • Beat pudding mix, milk and 1/4 tsp. extract in medium bowl with whisk 2 min. Stir in COOL WHIP and 1 Tbsp. nuts.
  • Mix cherry pie filling and remaining extract. Spoon into 8 dessert glasses alternately with pudding mixture.
  • Top with remaining nuts.

One 12-ounce bag frozen cherries
1/2 cup sugar
2 strips lemon zest plus 1 tablespoon fresh lemon juice
2 ounces rum
1 ounce kirschwasser
Vanilla ice cream, for serving

Steps:

  • Put the cherries, sugar and lemon zest and juice in a large skillet and stir to combine. Cover and cook over medium heat until the sugar dissolves, about 4 minutes. Uncover and cook until the cherries get juicy, about 5 minutes more.
  • Mix together the rum and kirschwasser in a measuring cup, then add to the cherries. Ignite the alcohol with a long match and swirl the pan slightly until the flames subside, about 30 seconds. Serve the warm cherries and their juices over ice cream.

1 cup drained jarred high-quality maraschino cherries, such as Luxardo
2 tablespoons lemon juice
3 tablespoons sugar
2 strips lemon peel (using a peeler)
1 cup dark rum
1/2 cup milk
1/2 cup heavy cream
3 large eggs, beaten
1/2 teaspoon almond extract
2 tablespoons honey
Two 1 1/2-inch thick challah bread slices
2 tablespoons unsalted butter
Confectioners' sugar, for dusting
2 lemons, zested

Steps:

  • Combine the cherries, lemon juice, sugar and lemon strips in a small saucepan over low heat. Cook until the mixture has thickened, about 20 minutes. Remove the pan from the heat, add the rum and return it to the heat to burn off the alcohol, about 1 minute or until the flame is gone.
  • Whisk together the milk, cream, eggs, almond extract and honey in a shallow bowl. Soak the bread in the custard mixture.
  • Heat the butter in a large saute pan wide enough to fit both pieces of bread over medium heat until frothing. Drain off the excess custard from the bread, add the slices to the pan and cook the on both sides until golden brown, 4 to 5 minutes a side.
  • Finish in a 375 degrees F oven if the center is still wet, 5 minutes at most.
  • Serve by placing the French toast on a platter, along with the cherries jubilee sauce. Finish with the zest of the lemons and a dusting of confectioners' sugar.

2 tablespoons cornstarch
¼ cup cold water
¼ cup orange juice
1 pound Bing or other dark, sweet cherries, rinsed and pitted (or use frozen pitted cherries)
½ teaspoon finely grated orange zest
¼ teaspoon cherry extract
¼ cup brandy
3 cups vanilla bean ice cream

Steps:

  • Whisk together the sugar and cornstarch in a wide saucepan. Stir in the water and orange juice; bring to a boil over medium-high heat, whisking until thickened. Stir in the cherries and orange zest, return to a boil, then reduce heat, and simmer for 10 minutes. While the cherries are cooking, spoon the ice cream into serving bowls.
  • Remove the cherries from the heat, and stir in the cherry extract. Pour in the brandy, and ignite with a long lighter. Gently shake the pan until the blue flame has extinguished itself. Spoon the cherries over the bowls of ice cream.

8 slices French bread (1 inch thick)
6 large eggs, lightly beaten
1-1/2 cups 2% milk
1/3 cup maple syrup
2 tablespoons sugar
1 tablespoon grated orange zest
1/8 teaspoon salt
CHERRY TOPPING:
4 cups fresh or frozen pitted sweet cherries
1/2 cup orange juice
1 tablespoon sugar
4 teaspoons cornstarch
4 teaspoons cold water
Vanilla yogurt

Steps:

  • Place the bread in a greased 15x10x1-in. baking pan. In a large bowl, whisk the eggs, milk, syrup, sugar, orange zest and salt. Pour over bread; turn to coat. Cover and refrigerate overnight. In another large bowl, combine the cherries, orange juice and sugar. Cover and refrigerate overnight. , Transfer bread slices to another greased 15x10x1-in. baking pan. Discard any remaining egg mixture. Bake at 400° for 7-9 minutes or until golden brown., Meanwhile, in a small saucepan, combine cornstarch and water until smooth. Stir in the reserved cherry mixture. 3 large eggs plus 2 large egg yolks
Two 1 1/2-inch-thick challah bread slices
2 tablespoons unsalted butter
2 lemons, zested
Confectioners' sugar, for dusting

Steps:

  • For the jubilee sauce: Combine the cherries and lemon strips and juice in a small saucepan over low heat. Cook until the mixture has thickened, about 10 minutes. Remove the pan from the heat, add the rum and return it to the heat to burn off the alcohol, about 5 minutes. Just before serving, swirl in the butter and maple syrup.
  • For the French toast: Add the cream, honey, almond extract, cardamom and eggs and yolks to a blender and blend until combined. Transfer to a shallow container and soak the bread in the custard mixture.
  • Heat the butter in a large saute pan over medium heat until frothing. Drain off the excess custard from the bread, add the slices to the pan and cook on both sides until golden brown, 5 to 8 minutes a side.
