CHELSEA BUNS
These large, buttery rolls are my family's favorite Christmas tradition. We eat them on Christmas morning under the tree!

- Sprinkle the yeast over 1/4 cup of warm water in a small bowl and stir in 1 teaspoon of sugar. The water should be no more than 100 degrees F (40 degrees C). Let stand for 5 minutes until the yeast softens and begins to form a creamy foam.
- Sift together the flour and salt. Cut in 3/4 cup butter with a knife or pastry blender until the mixture resembles coarse crumbs. Bring the milk to a boil; remove from the heat and stir in 1/2 cup sugar. Cool until the milk is lukewarm, no more than 100 degrees F (40 degrees C). Pour the milk and yeast mixture into the flour. Add the eggs and mix well to form a soft, sticky dough.
- Turn the dough out onto a well-floured surface and knead until smooth and elastic, about 8 minutes. Add more flour a tablespoon at a time, if necessary. Place the dough in a buttered bowl, turning to coat the dough. Cover with a light cloth and let rise in a warm place (80 to 95 degrees F (27 to 35 degrees C)) until doubled in volume, about 1 1/2 hours.
- Roll the dough into a square on a floured surface. Brush the dough with the melted butter and sprinkle with the remaining 1/4 cup sugar and the raisins. Roll up the dough to form a log, pinching the seam to seal.
- Preheat an oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking pan.
- Cut the log into slices about 1 1/2 inches thick. Place the slices in the prepared pan and let them rise for 30 minutes. Beat the egg yolk with 2 tablespoons of water to form an egg wash. Brush the buns with egg wash.
- Bake in the preheated oven until the buns are golden brown and the centers are set, about 25 minutes.

CHEESY SAUSAGE PASTA
This simple Cheesy Sausage Pasta is all made in ONE baking dish -- the oven does all the work! No need to pre-boil the pasta or pre-cook the sausage, just dump it all in and bake.

- PREP: Start by removing the milk from the fridge, measuring 2 cups, and setting it aside for now. Preheat oven to 400 degrees F. Generously grease a 9x13-inch pan with cooking spray. Coin sausage then cut coins in half.
- COMBINE: Add the following ingredients in this order to the pan: uncooked pasta, flour (sprinkled evenly on top), seasonings (mustard, onion, and garlic powder), and salt/pepper to taste (I add 3/4 tsp of each), minced garlic, chicken broth/stock, milk, and butter (cut into 2 pieces). Stir well. Top with coarsely chopped broccoli. Cover pan with foil and bake for 20 minutes.
- BAKE AGAIN: Remove foil, and stir ingredients together really well. Add in 1 cup Cheddar cheese and stir through again. Place the cut sausage on top of ingredients in one even layer. Sprinkle the remaining 1/2 cup Cheddar on top. Return the pan to the oven, uncovered, and bake for another 15-20 minutes or until pasta is tender and the top is golden brown (don't overbake or sauce will bake out). Remove from oven and let stand for 5 minutes (it thickens more as it stands). Enjoy immediately, garnished with fresh parsley if desired.

LOVELY CHEESY PASTA
Soft cooked pasta cooked in a cheese sauce mixed with peas or sweetcorn, with bacon on top.

- Preheat the oven to 200 degrees C/ gas mark 6
- Grab a saucepan, pour all the pasta in and fill with cold tap water until the pasta is submerged. Cook the pasta until "al dente" or done. But just before it is done, add the vegetables into the saucepan.
- While the pasta is cooking, place the flour, the margerine, the mustard powder and the milk into another clean saucepan and stir well until smooth.
- Set the sauce on a cooker and start to boil, stirring continuously until the sauce thickens. Keep simmering until smooth.
- Add the cheese to the sauce, and stir in in.
- Remove the pasta and veg from the cooker, and drain it using a colander. Put the pasta and veg back in the saucepan and mix in the cheese sauce.
- Mix in all up then pour it into the oven proof tray, and put it in the oven for 10 minutes.
- Take the tray out, take the pasta out the tray and put on a plate. Sprinkle the bacon all over, then serve.

A very rich, creamy, and zesty cheese and pasta recipe. Not for the dieters out there! The salad dressing adds a very nice creaminess and a little 'bite'!

- Bring a large pot of lightly salted water to a boil, and cook the rigatoni pasta 8 to 10 minutes, until al dente. Drain, and return pasta to the pot.
- In the pot with the pasta, mix the butter, garlic, Cheddar cheese, Gouda cheese, and Parmesan cheese. Cook and stir over low heat. Be careful not to have too much heat, as the cheese will get stringy. Gradually mix in the blue cheese dressing and milk. Continue to cook and stir until the pasta is well coated. Season with paprika, salt, and pepper.

- Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- Place ground beef in a large, deep skillet. Cook over medium high heat until evenly brown and crumbled. Drain, excess fat, and set aside.
- Heat oil in a large heavy skillet over medium heat. Saute onion until soft and translucent. Stir in garlic, and cook for 30 seconds. Add cooked beef, tomatoes, spaghetti sauce and mushrooms; bring to a boil. Reduce heat, and simmer 20 minutes.
- In a 9x13 inch casserole dish, layer 1/2 of the pasta, 1/2 of the meat sauce, 1/2 of the sour cream and 1/2 of the shredded cheese. Repeat layers.
- Cover, and bake in preheated oven for 45 minutes.

- BEEF: Brown the ground beef in a large nonstick skillet. Transfer the beef to a plate and drain the fat. Add in the onion and garlic in the skillet. Stir until fragrant - about 30 seconds to a minute on medium-high heat. Add in the taco seasoning and stir for 30 more seconds.
- OTHER INGREDIENTS: Add in one cup of water, salsa, and corn. Stir well and add in the uncooked pasta, taco sauce, and reserved cooked beef.
- BOIL & SIMMER: Bring mixture to a boil and then lower to low-medium heat and cover the skillet with a lid. Let simmer for about 5-7 minutes and then add in the last cup of water and stir everything together again. Return lid and let simmer until pasta is tender, about another 5-7 minutes.
- ADD TOPPINGS: Remove from heat and sprinkle with cheese. Stir into the pasta until melted. Top taco pasta with optional toppings of choice. We love avocado, sour cream, cherry tomatoes, and fresh cilantro or green onions. Serve immediately.

- In the same pot, over medium heat, add in 1 tablespoon of oil from the sundried tomatoes. Add in the mushrooms and stir for 3-4 minutes. Add in the coarsely chopped tomatoes and stir for another 1-2 minutes. Dump this mixture on top of the set aside Penne.
- In the same pot again (return to the burners and put at medium-high heat), add 1 more tablespoon sundried tomato oil OR olive oil and the butter. Once the butter is melted, stir in the garlic and stir until fragrant, about 30 seconds. Slowly add in the flour, whisking constantly. Whisk for one minute.
- Slowly add in the chicken broth while whisking and then slowly add in the milk while continuing to whisk. Increase the heat and allow the mixture to get to a boiling point and then reduce and allow to simmer until thickened, stirring occasionally.
