CHELLE'S PUMPKIN BREAD
A great holiday favorite- I got this from an old Betty Crocker cookbook and make it along with my Recipe #195728 and Recipe #195714 in mini loaves for the holidays! I generally get 6 mini loaves from this recipe and they bake for 33 minutes for me without any changes to the recipe. Easy, fun, crowd pleasing recipes! Enjoy!

Steps:
- Heat oven to 350°F.
- Grease the bottom only of loaf pans (two pans if using 9 inch, three if using 8 or 8.5 inch).
- In a large mixing bowl, combine sugar and shortening.
- Stir in eggs, water and pumpkin.
- Mix in remaining ingredients thoroughly, except nuts.
- Stir in nuts (if desired) and pour into pans.
- Bake for 70 to 80 minutes; until a wooden toothpick inserted into the center of the loaves comes out clean.
- Cool for 5 minutes.
- Loosen the sides of loaves from pans, remove from pans to finish cooling.
- Cool completely prior to cutting.
- Great served toasted with butter, with cream cheese frosting, whipping cream with rum as dessert, or just plain!

PUMPKIN BREAD IV
This is an all time, excellent, every time recipe. It is very simple, and so well loved by many. I make these for family, friends, school functions, work functions, for gifts etc. It has always been raved about - even by kids! I recommend bringing this to your Thanksgiving function; you will be thanked many times for this delicious taste treat. This is a large quantity, but you will end up making this size batch more than once. You can also make muffins and small loaves using this recipe; bake for 30 to 35 minutes.

- Preheat the oven to 350 degrees F (175 degrees C). Grease and flour three 9x5 inch loaf pans.
- In a large bowl, mix together the pumpkin, oil, sugar, and eggs. Combine the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves; stir into the pumpkin mixture until well blended. Divide the batter evenly between the prepared pans.
- Bake in preheated oven for 45 minutes to 1 hour. The top of the loaf should spring back when lightly pressed.

This has been a long time favorite recipe from Del Monte, especially good to have on hand for holiday entertaining. Extra easy too! It's been on their pumpkin can label since 1969.

- Cream together sugar and oil.
- Add eggs and pumpkin; mix well.
- Sift together flour, baking soda, salt, baking powder, nutmeg, allspice, cinnamon and cloves.
- Add to pumpkin mixture alternately with water.
- Mix well after each addition.
- Pour into well greased and floured 9 X 5-inch loaf pans.
- Bake at 350 °F for 1 ½ hours, until loaves test done.
- Let stand for 10 minutes.
- Remove from pans to cool.
