At the restaurant, we always made three dressings to go with this chef salad...blue cheese, French and Thousand Island. At home, I had to serve all three dressings, too, because everyone had their favorite. Sometimes the kids would use a tablespoon of each. -Eleanore Hill, Fresno, California

1/2 head iceberg lettuce, torn
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained, optional
1 small red onion, chopped
1/2 cup sliced radishes
1 small cucumber, chopped
1 small tomato, chopped
1 cup julienned fully cooked ham
1 cup julienned Swiss or cheddar cheese
DRESSING:
1 cup Miracle Whip
1/2 cup each ketchup, sweet pickle relish and chopped onion
Dash garlic salt

Steps:

  • In a large salad bowl, combine lettuce, beans if desired, onion, radishes, cucumber and tomato. Arrange ham and cheese on top. Cover and refrigerate until serving. In a small bowl, combine all dressing ingredients; stir until well blended. Chill for 1 hour. Serve with the salad.

Homemade Macaroni Salad image

This easy homemade version of the classic summer salad has crunchy vegetables and creamy dressing. Make it yours by adding some egg, pickle, or anything you like.

2 cups pasta (8 oz.)
1 cup mayonnaise (regular or low-fat)
3 tablespoons milk
2 tablespoon vinegar
1 tablespoon mustard
1-2 teaspoon sugar ( to taste)
1/2 teaspoon salt
1/4 teaspoon pepper
1 red onion (small or 1/2 medium )
2 ribs celery
1 pepper (red or green)
1 cup cheddar cheese (shredded or cubed)
2 hard boiled eggs (chopped)
6-8 sweet pickles (chopped)
2-3 tablespoons sweet pickle juice (if using pickles)

Steps:

  • Cook 2 cups pasta according to package directions. A one pound box of pasta is generally 4 cups. Rinse after cooking to prevent sticking.
  • In a large bowl mix 1 cup mayonnaise (regular or low-fat), three tablespoons milk, two tablespoon vinegar, one tablespoon mustard, 1-2 teaspoon sugar to taste, 1/2 teaspoon salt, 1/4 teaspoon pepper.
  • Finely chop one small or 1/2 medium red onion, two ribs of celery, and one pepper (red or green). You may also add 2 chopped hard-boiled eggs, 6-8 sweet pickles, and a little pickle juice.
  • Mix pasta with the dressing, veggies, and 1 cup of shredded or cubed mild cheddar cheese. Refrigerate for a few hours to blend flavors.

I have developed this from several recipes, according to our likes and dislikes. DW can't eat very much at a single sitting. I like a Chef salad, but not as an entree'.This is just right for her, and makes a good snack for me. Cooking time would be the chill time.

1 head iceberg lettuce
1 small tomatoes, cubed
2 hard-boiled eggs, sliced,i cook earlier and let them cool
1 green bell pepper, diced to 1/2 inch squares
1 red bell pepper, diced to 1/2 inch squares
1 piece thinly sliced deli ham, cut crossways in 3/8 to 1/2 inch strips
2 slices sharp cheddar cheese
2 dashes paprika

Steps:

  • In medium sized bowl, tear lettuce into bite size pieces.
  • Add tomatoes and peppers and toss well to distribute evenly throughout the lettuce.
  • Place salad into small salad or cereal bowls, until as full as you want and mounded up a little in the center.
  • On to top of lettuce, in bowls, add the ham strips in a cross bowl design.
  • Place cheese strips between ham strips or in your design.
  • On to top, interspersed with ham and cheese strips, add egg slices, 3-4 per bowl, for color.
  • Sprinkle Paprika in center, for additional color.
  • Place finished bowls of salad in refrigerator to chill, and blend flavors, at least 30 minutes.
  • Place leftover salad, if any, in covered bowl and save for next time.
  • Gather up unused slices of ham, cheese and egg, and refrigerate for next time.
  • Serve salads plain, or with any dressing and/or seasonings you enjoy.

2 slices deli ham (1 ounce each), julienned
2 slices deli turkey (1 ounce each), julienned
1 medium tomato, chopped
1/2 cup julienned sweet yellow pepper
1/2 cup cubed cheddar cheese
1/4 cup chopped red onion
3 tablespoons chopped walnuts
2 tablespoons dried cranberries
2 tablespoons sliced ripe olives
1/2 teaspoon Beau Monde seasoning
1/4 to 1/2 teaspoon coarsely ground pepper
1/4 teaspoon crushed red pepper flakes
Salad dressing of your choice

Steps:

  • In a large bowl, combine the first 13 ingredients. Serve with salad dressing of your choice.

1 1/2 pounds Boston, Bibb, green or red leaf lettuce, or a mixture, washed, trimmed, and dried
Kosher salt and freshly ground black pepper
1 cup dressing of your choice, such as shallot or herb vinaigrette, ranch, or blue cheese
4 ounces imported Swiss cheese, cut into 2-inch long matchstick pieces
4 ounces baked ham, cut into 2-inch long matchstick pieces
4 ounces smoked turkey, chicken or duck breast, cut into 2-inch long matchstick pieces
4 ounces rare roast beef, cut into 1/4-inch by 2 inch matchstick pieces
2 hard-cooked eggs, shelled, cut into wedges
1 ripe Hass avocado, diced
16 vine-ripened cherry or grape tomatoes, halved
2 kirby (pickling) cucumbers, sliced
1 cup toasted croutons

Steps:

  • Tear the lettuce into bite-sized pieces and put into a large mixing bowl. Season with salt and pepper to taste and toss with 1/2 cup of the dressing. Divide the lettuce among 4 large individual serving bowls. Arrange the cheese, meats, eggs, and avocado, like the spokes of a wheel, on top of each salad. Scatter the tomatoes, cucumbers, and croutons on top. Season with salt and pepper to taste. Serve and pass the remaining dressing at the table.

EASY SHRIMP SALAD RECIPE

1 tablespoon Old Bay (to season the water)
1 pound raw shell on shrimp (26-30 size cooked, peeled and deveined)
2 stalks celery (small dice)
1/3 cup mayonnaise
1-2 teaspoon Old Bay seasoning
1 teaspoon sugar

Steps:

  • thaw shrimp in cold running water
  • Bring water to a boil in a large saucepan, then add 1 tablespoon of Old Bay Seasoning
  • Add thawed shrimp to boiling water and cook until the water returns to a boil, no longer than 5-6 minutes.
  • Drain the water from the pan and cover the shrimp with ice. Let the shrimp cool down in the ice for 15 minutes, then remove from the ice. Place the cooled shrimp in the refrigerator to continue to chill for one hour (or overnight)
  • Peel and devein the shrimp. Then rough chop the shrimp leaving them in big pieces.
  • Mix the ingredients together in a medium sized bowl. Mix well, cover and refrigerate for at least one hour.
  • Serve with your favorite bread or roll, on a salad, or simply by itself.
