CHEF JOEY'S OATMEAL, FRUIT & NUT BARS
I made these little gems this morning as part of my holiday baking. I'm not sure where I found this recipe. They should be cooled thoroughly before removing from the baking pan. I used hazelnuts, but I think almonds, walnuts or pecans would also work here. I used kumquat preserves in mine. You can use raspberry or apricot too.

Steps:
- Preheat oven to 375'F.
- Lightly spray a 8x8 inch square baking dish with oil.
- Cream the margarine and brown sugar together until well blended.
- Stir in the oats, flour and toasted chopped hazelnuts. Mix well. Remove one cup of this mixture and set aside.
- Press the remaining mixture into the bottom of your prepared pan. Try to get it as even as you can.
- Mix the raisins and preserves well. Spread this mixture on top of the oat mixture leaving a 1 inch border around the edges without any raisin mixture.
- Sprinkle the reserved oat mixture on top of the fruit and press down lightly.
- Bake for 25-30 minutes until the top is golden.
- Cool these for about 10 minutes.
- Then, with a wet, sharp knife cut the squares into 16 pieces. Dip the knife in water every time you cut, this is sticky.
- Let the squares cool and cut again before removing.
- These are delicious warm or cold and would be great with a dollop of non-dairy whipping cream or some vanilla soy ice cream.

HOLIDAY CHERRY SQUARES
Here's a simple to make square recipe that I sometimes make for the holidays. I have "excellent" written on the paper, so I know it's a keeper. This recipe differs slightly from the one already on 'zaar.

Steps:
- Preheat oven to 350*. Lightly spray a 9" x 13" pan with cooking spray.
- Combine the cornflakes, margarine and sugar in the pan. Press down tightly with the back of a spoon.
- Sprinkle marshmallows, coconut and cherries evenly over the crust.
- Pour the sweetened condensed milk evenly over the top.
- Sprinkle the nuts over the milk, pressing into the mixture.
- Bake @ 350* for 20-25 minutes. Refrigerate before cutting.

VEGAN DATE SQUARES
These are great squares that use maple syrup instead of refined sugar-make sure maple syrup is vegan! The syrup can also be omitted to make a less sweet square.

- soak dates in 1 cup of water(optional) and then heat until water evaporates(here you can add lemon juice, rind, or extracts if it pleases you).
- combine dry ingredients.
- combine wet ingredients.
- mix both mixtures.
- spread half of mixture into 8" pan.
- spread date puree.
- add the other half of mixture.
- bake at 350 degrees until lightly browned-approx 25-30mins.

- Cream margarine with sugar until very creamy.
- Beat in 1 egg at a time until fluffy.
- Slowly beat in flour.
- Add almond flavouring.
- Spread batter into a jelly roll pan.
- Mark off 16 squares with a knife.
- Drop 1 Tbsp of pie filling into each square.
- Bake at 350 degrees about 45 minutes until cake is golden brown.
- Sprinkle entire cake heavily with powdered sugar.

- Preheat oven to 350.
- Melt margarine in saucepan.
- Combine oats, flour and sugar.
- Add melted margarine to dry mixture.
- Cook the dates, water and salt in a saucepan until the water is evaporated. Stirring frequently.
- Press half of the oat mixture into the bottom of a 9x9 greased pan and bake for 15 minutes.
- Spread date mixture and then press the rest of the oat mixture on top.
- Bake 20 minutes.
