light and slightly sweet and good for you! use honey if you want a sweeter bread and low fat mayonnaise for a slightly richer texture

1 cup cornmeal
3/4 cup all-purpose flour
1/4 cup whole wheat flour
4 teaspoons baking powder
1/4 cup sugar substitute or 1/4 cup honey
1 teaspoon salt
2 egg whites
1 cup skim milk
1/4 cup applesauce or 1/4 cup low-fat mayonnaise

Steps:

  • Combine dry ingrients and mix.
  • Combine wet ingredients and mix.
  • Sift in dry into wet and fold in gently.
  • Bake in preheated oven at 400 degrees for 20 minutes (adjust to your oven).
  • Let cool and cut into 20 squares.

I love corn bread. Not the stuff out of a box, but the real thing. I went to make some last night and discovered I had no baking powder! So I looked in my Joy of Cooking for substitutions for baking powder, and the resulting corn bread was the best I've tasted. Try it, I think you'll agree!

1 cup yellow cornmeal
1 cup white flour
1/4 cup sugar
1/2 teaspoon baking soda
1 teaspoon salt
1 cup plain nonfat yogurt
1/4 cup light sour cream
1 egg

Steps:

  • Preheat oven to 400°F.
  • Sift together the corn meal, flour and sugar.
  • Mix the baking soda with the yogurt sour cream and egg.
  • Combine the yogurt mixture into the corn meal mixture. The batter will be thick, but don't worry.
  • Pour mixture into greased (PAM) 8 inch square pan.
  • Bake for 20-25 minutes until a toothpick inserted in center comes out clean.
  • NOTE: For a more savory corn bread, omit the sugar and try adding any combination of following -- crumbled bacon, shredded cheese, green chilies.

I haven't tried this one yet. I just found it online @ mypeoplepc.com. As I'm not a fan of sweet cornbread I won't be using any sugar at all, but even if I were going to, I would still cut the amount in half and switch it to Splenda. I've now made this several times and it works!

3/4 cup cornmeal
4 tablespoons sugar (optional)
5 teaspoons baking powder
1/2 teaspoon salt
1/3 cup unsweetened applesauce
2 tablespoons unsweetened applesauce
1/2 cup low-fat soymilk
1/2 cup water

Steps:

  • Mix dry ingredients in a bowl.
  • Mix wet ingredients in another bowl.
  • Add wet to dry and stir well.
  • Bake at 375° for about 30 minutes, or until golden brown.

1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
2 eggs
1 cup creamed corn (canned)
1/4 cup canola oil
1 cup plain fat-free yogurt (optional)

Steps:

  • Pre-heat oven to 400°F; generously grease an 8x8-inch bread pan.
  • Sprinkle about 2 tablespoons of cornmeal into the greased pan and shake around until all sides are coated. Discard of the remaining cornmeal.
  • Stir together the cornmeal, baking powder, soda, and salt.
