This calorie-trimmed favorite saves 200 calories per serving. For the creamiest results, be sure to use red potatoes. White potatoes have a drier texture and tend to sock up the sauce during baking. For the cheesiest flavor use reduced-fat Sharp Cheddar Cheese. 114 Calories a Serving! Adapted from the New Dieter's Cookbook from Better Homes and Gardens.

1 1/2 cups skim milk
2 tablespoons all-purpose flour
1/2 teaspoon salt or 1/2 teaspoon seasoning salt
1/8 teaspoon garlic powder
1/8 teaspoon pepper
1/2 cup chopped onion
nonstick spray coating
4 medium red potatoes, peeled and thinly sliced
1/2 cup shredded reduced-fat sharp cheddar cheese (2 ounces)
snipped fresh parsley (optional)
parmesan cheese (optional)

Steps:

  • For sauce, in a small saucepan stir together milk, flour, salt, pepper, and garlic powder. Cook and stir over medium heat until thickened and bubbly. Stir in onion.
  • Spray a 1-1/2-quart casserole with nonstick spray coating. Place half of the potatoes in the casserole. Top with half of the sauce and optional parmesan. Repeat layers with remaining potatoes, sauce and parmesan.
  • Bake, covered, in a 350°F oven about 65 minutes or until potatoes are tender, stirring once.
  • Remove from oven and sprinkle with cheese.
  • Cover and let stand 1-2 minutes or until cheese is melted.
  • If desired, garnish with parsley.

A delicious recipe from Southern to the Core cookbook received from BusyMomof3 in the 2011 Cookbook Swap, must admit to cooking this but I add ham and spring onion (scallion in place of onion) to the mix so consider this the base mix and delicious. On preparation time it can vary hugely dependig on if you use a mondolin or food processor or by hand and then depending on your knife skills, so I have tried to take a middle line here on the timing.

4 cups potatoes (thinly sliced, use a food processor or mandolin)
1/4 cup onion (chopped, for dietary purposes would use spring onion)
1 tablespoon flour
4 tablespoons butter (melted)
1 teaspoon salt (personally omit due to dietary reasons and use salted butter)
1/8 teaspoon pepper (personally would use more)
2 cups cheddar cheese (shredded)
1 1/2 cups milk (heated)

Steps:

  • Preheat oven to 350°F.
  • Grease 9 x 13 inch baking dish and spread half of your potatoes on the bottom of the dish, overlapping as necessary and then layer half of your onions.
  • In a small separate bowl, mix your flour, butter, salt and pepper then sprinkle half of this mixture to make the next layer and then on top of this layer half of your cheese and the repeat to create your second layer and now add milk and cook for 45 minutes or until the potatoes are good and tender (Just to warn you this is supposed to look pretty soupy. To be safe, you might want to put a piece of aluminum foil underneath your pan in case of run over,).

2 pounds yellow potatoes
1 can cream of mushroom (chicken or celery soup)
1 cup milk
½ teaspoon garlic powder
black pepper to taste
1 small onion (thinly sliced)
2 cups sharp cheddar cheese (shredded)

Steps:

  • Preheat oven to 375°F.
  • Wash potatoes and slice ¼″ thick (no need to peel). Drop into boiling water for 5 minutes. During the last minute, add sliced onions to the water. Drain.
  • Meanwhile, combine soup, milk, pepper and garlic powder in a bowl. Microwave until hot.
  • Put a little bit of the soup mixture in the bottom of a greased 2 QT casserole dish, a 9×9 pan, or an oven-safe pan. Layer ½ of the potatoes, ½ of the soup mixture, and ½ of the cheese. Repeat layers ending with cheese.
  • Bake at 375°F for 45-55 minutes or until hot and bubbly.

4 medium yukon gold potatoes, peeled
2 tablespoons vegan butter
2 garlics, minced
2 tablespoons all-purpose flour
2 cups non-dairy milk
1 ½ cups low sodium vegetable broth
1 teaspoon salt
½ teaspoon pepper
⅓ cup nutritional yeast
½ medium yellow onion, sliced into rings
fresh parsley, chopped, to garnish

Steps:

  • Preheat the oven to 400°F (200°C).
  • Thinly slice the potatoes into rounds about ⅛-inch (3 mm) thick. Submerge in a large bowl of water to keep from browning and set aside.
  • In a medium pot over low heat, melt the butter. Once the butter begins to foam, add the garlic and cook for 2-3 minutes, until fragrant. Add the flour and stir until flour and butter resemble the consistency of wet sand, creating a roux.
  • While stirring continuously, add the non-dairy milk, vegetable broth, salt, and pepper and bring to a boil. Stir in the nutritional yeast and continue to cook for 2-3 minutes, or until the sauce thickens. Remove from the heat.
  • In a medium baking dish, add 2 layers of the sliced potatoes, followed by a layer of the sliced onions. Pour on half of the cheese sauce and spread with a spatula to coat all of the potatoes and onions. Add another 2 layers of potatoes and pour on the remaining cheese sauce.
  • Cover with a lid or foil and bake for 1 hour. Then, uncover and bake for 10-15 minutes more, until the top is golden and bubbling and the potatoes are tender.
  • Garnish with parsley and serve warm.
