1/4 cup mayonnaise
2 teaspoons purchased balsamic vinaigrette salad dressing
4 (4 to 5-inch) portobello mushroom caps, cleaned
1/4 teaspoon salt
1/4 teaspoon pepper
4 kaiser rolls, split
1/4 cup purchased balsamic vinaigrette salad dressing
4 (1-oz.) slices provolone cheese

Steps:

  • Heat gas or charcoal grill. In small bowl, combine mayonnaise and 2 teaspoons salad dressing; blend well. Set aside. Sprinkle mushroom caps with salt and pepper.
  • When grill is heated, place mushrooms on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cover grill; cook 5 to 8 minutes or until thoroughly heated, turning once.
  • Meanwhile, brush cut sides of rolls with 1/4 cup salad dressing. During last 1 to 2 minutes of cooking time, place cheese on mushrooms and place rolls, cut side down, on grill to toast.
  • Spread toasted rolls with mayonnaise mixture. Serve cheese-topped mushrooms in rolls.

Everybody knows how tasty the burgers can be, but this one crosses the line! The crunchy crust and crispy bacon tossed into the extra-cheesy mayonnaise mixture will convince you. Trying this nutritious and protein-rich mushroom burger is a must.

12 medium-sized mushrooms
⅔ cup low moisture mozzarella, grated
⅔ cup cheddar, grated
2 ounces of bacon, fried and crumbled
1 tablespoon fresh parsley, chopped
¼ cup mayonnaise
1 teaspoon paprika
1 teaspoon garlic powder
salt
pepper
1 cup flour
3 whisked eggs
1 cup breadcrumbs
6 burger buns
1 cup baby spinach

Steps:

  • Place the mushroom caps on a plate between paper towels. Cover with another plate placed upside down. Microwave for 3 minutes. You may need to do it in 2 batches.
  • Add the mozzarella, cheddar, bacon, parsley, and mayonnaise to a bowl. Season with salt, pepper, paprika, and garlic powder. Mix until even.
  • Add about 2 tablespoons of mayo mixture between 2 mushroom caps and wrap in plastic foil. Do the same for the remaining salad and mushroom caps. Refrigerate for 30 minutes.
  • Add the flour, whisked eggs, and breadcrumbs each to a small bowl. Coat each mushroom sandwich with flour, whisked egg and then, breadcrumbs.
  • Fill a deep frying pan 1/3 or 1/2 with vegetable oil and heat it over medium-high heat. Fry the mushroom sandwiches on both sides for 4 minutes. You may need to do it in 2 batches.
  • Horizontally cut a burger bun in half. Spread about 1 tablespoon of mayonnaise on the lower half, add some baby spinach, 1 fried mushroom sandwich, then top with the bun's upper half. Skewer the burger if you want. Do the same for the remaining ingredients.

1 slice american cheese
1 slice swiss cheese
2 portobello mushrooms, de-stemmed
½ cup bread crumbs
1 egg, beaten
½ cup flour
vegetable oil, for deep frying
2 tablespoons mayonnaise
1 tablespoon ketchup
1 teaspoon worcestershire sauce
1 teaspoon garlic salt
¼ tablespoon hot chili sauce
lettuce
tomato, sliced
onion, sliced
pickle, sliced, optional
burger bun

Steps:

  • Line a plate with two paper towels. Place two small portobello mushroom caps on the paper towels, then cover with two more paper towels. Top with another plate.
  • Meanwhile, in a small bowl, mix together mayonnaise, ketchup, worcestershire sauce, garlic salt, and hot chili sauce.
  • Place a slice of Swiss cheese down on a counter top, then place a slice of American cheese on top, folding the corners of the American cheese in towards the center. Do the same with Swiss cheese, forming a ball shape.
  • Place the cheese ball on one mushroom cap and then sandwich the other on top of it, pressing down to make the mushroom edges touch. Take a piece of clear plastic wrap and wrap it around the mushroom burger, twisting the sides like a piece of candy to release all of the air. Tuck the plastic wrap under the mushroom and refrigerate for 10-15 minutes.
  • Put the egg, flour, and bread crumbs into 3 separate bowls.
  • Remove plastic and coat mushroom burger in flour, egg, then bread crumbs. Dip in egg wash and bread crumbs one more time.
  • Heat vegetable oil in a large pan until it is 375ºF (190ºC) and fry mushroom burger for 1-2 minutes or until golden brown.
  • Remove burger onto paper towel to drain excess oil and let cool 1-2 minutes.
  • Assemble burger, spread special sauce on buns.

Mushrooms are wonderful and, these days, they are getting called upon to play so many different parts. One of the most popular things is to use mushrooms as a substitute for meat. It works well because they have such wonderful texture and heartiness. The portobello is the top dog of the cultivated mushroom world because it's large and can be a meal unto itself. They are cultivated mushrooms (as opposed to wild, foraged kinds) and are earthy and meaty. Regarding mushrooms in general: Wash them just before cooking (if they are dirty) so they are clean but don't sit around, waterlogged, in your fridge. Many people scrape the brown "ribs" out of the insides of the portobello and peel the outer skin. Why? I say leave everything on the mushroom (except dirt). Make sure you cook mushrooms long enough-they take longer than you think to reach full flavor.

4 large portobello mushrooms, wiped of any dirt
1 medium yellow onion, thinly sliced
6 large garlic cloves
1/2 cup extra-virgin olive oil, divided use
Kosher salt and freshly ground black pepper
2 large eggs, lightly beaten
2 cups panko breadcrumbs
2 teaspoons granulated garlic
3/4 cup shredded Monterey Jack cheese
8 basil leaves, torn
2 to 4 iceberg lettuce leaves
Sliced dill pickles and pickle juice, for serving
Red wine vinegar, to drizzle
2 burger buns, buttered and toasted

Steps:

  • Preheat the oven to 425 degrees F. Line 2 rimmed baking sheets with parchment and set aside.
  • Roast the mushrooms: Arrange the mushrooms, stem side up, onions and garlic cloves in a single layer on 1 prepared baking sheet. Drizzle with half of the olive oil. Drizzle 1/2 cup water around the mushrooms on the baking sheet. Season generously with salt and pepper. Roast in the center of the oven until the mushrooms shrink in size and become darker brown, 15 to 18 minutes. Remove and let cool.
  • Bread the mushrooms: In a medium bowl, whisk the eggs with a splash of water. In another medium bowl, combine the breadcrumbs with the granulated garlic. Dip each mushroom in the egg mixture and then coat completely with the breadcrumbs. Reserve everything.
  • Fry the mushrooms: In a large skillet, heat the remaining olive oil over medium heat until it begins to smoke. Add the mushrooms in a single layer. Cook on one side until golden brown, 2 to 3 minutes. Flip and cook on the second side until golden brown, another 2 to 3 minutes. Remove the mushrooms from the oil and arrange in a single layer on a clean baking sheet. Season with salt and pepper.
  • Make the filling: In a medium bowl, combine the roasted garlic cloves and onion slices with the cheese. Add any remaining egg and 1/4 cup of the breadcrumbs leftover from the breading. Add the basil and mix well.
  • Assemble and bake: On the same baking sheet, place 2 portobellos, stem-side up, with some distance between them. Pile half of the filling on each and then top with the remaining mushrooms, pressing gently but firmly down, so it forms a fairly compact sandwich. Bake until the cheese melts, 6 to 8 minutes.
  • Arrange the lettuce to form 2 cups. Drizzle some pickle juice and red wine vinegar into the cups. Season with salt and pepper and then top with some sliced pickles.
  • Place each mushroom burger onto a bottom bun. Flip a lettuce cup onto each burger and top with the top bun. Serve.

1/4 cup olive oil
2 shallots, sliced
1 tablespoon minced garlic
2 cups sliced cremini mushrooms
Dash balsamic vinegar
1/4 cup beef broth
1/2 cup mascarpone
3 tablespoons chopped chives
Pinch salt
Pinch cracked black pepper
2 pounds ground beef
4 teaspoons steak seasoning (recommended: Montreal)
8 slices smoked Cheddar
4 large seeded hamburger buns, split and toasted
Dijon mayonnaise blend, for garnish (recommended: Dijonnaise)
1 cup french fried onion pieces

Steps:

  • Preheat a grill on high.
  • In a medium-sized saute pan over high heat, add 2 tablespoons of olive oil. Add the shallots, garlic and mushrooms and cook until a nice color develops, about 3 to 4 minutes. Stir in the remaining 2 tablespoons olive oil and a splash of balsamic vinegar. Whisk in the beef broth and bring the mixture to a simmer. Cook until the mixture thickens, approximately 3 to 4 minutes. Remove the pan from the heat, then mix in the mascarpone cheese, chives and the salt and pepper.
  • Add the ground beef and steak seasoning to a medium bowl and mix well. Form the meat into 4 burgers. Put the burgers on the grill and cook for 4 to 6 minutes on each side. Top each with a slice of cheese and cook until the cheese melts, about 1 minute. Remove the burgers from the grill and put on a platter.
  • Spread the cut sides of the rolls with Dijon mayonnaise blend and top with a burger patty. Sprinkle each burger with a liberal amount of fried onion pieces. Spoon a good amount of creamy mushrooms on top and cover with the other half of the bun. Serve.

1/2 cup apple cider vinegar
2 tablespoons sugar
Kosher salt
2 Persian cucumbers, thinly sliced
2 carrots, thinly sliced
1 1/2 pounds ground beef chuck
2 tablespoons Worcestershire sauce
Freshly ground pepper
2 tablespoons unsalted butter
8 ounces shiitake mushrooms, stemmed and sliced
4 slices fontina cheese (about 4 ounces)
1/2 cup ketchup
4 sesame potato buns, split and toasted

Steps:

  • Combine 1/2 cup water, the vinegar, sugar and 3/4 teaspoon salt in a small saucepan. Cook over medium heat, stirring, until the sugar dissolves, about 2 minutes. Combine the cucumbers and carrots in a bowl; pour in the hot liquid and refrigerate until ready to serve.
  • Combine the ground beef and 1 tablespoon Worcestershire sauce in a large bowl. Mix with your hands until just combined. Form into four 1-inch-thick patties; season with salt and pepper. Set aside.
  • Melt 1 tablespoon butter in a large nonstick skillet over medium-high heat. Add the mushrooms, season with salt and cook, stirring occasionally, until browned around the edges, about 10 minutes. Transfer to a plate and cover to keep warm.
  • Wipe out the skillet and melt the remaining 1 tablespoon butter. Add the burgers and cook until browned, about 4 minutes per side; top with the cheese and cover during the last 1 minute.
  • Meanwhile, mix the ketchup with the remaining 1 tablespoon Worcestershire sauce; spread on the bottom buns. Serve the burgers on the buns; top with the mushrooms. Drain the pickles and serve on the side.

1 large shallot, finely chopped
2 pounds portobello mushrooms, finely chopped
1/2 cup button mushrooms (roughly chop)
2 garlic cloves, minced
1/2 cup carrots, minced
1/4 bunch of Italian parsley, washed, stems removed, finely chopped
2 cups fresh bread crumbs (about 3 slices)
1 egg
1 1/2 tablespoons balsamic vinegar
Salt and pepper to taste
4 ounces Stilton cheese, crumbled
Hamburger buns

Steps:

  • In a small saute pan over medium heat, heat 1 tablespoon olive oil and saute shallot until translucent. Add mushrooms, garlic, carrots and saute for 10 to 15 minutes, until most of the liquid from mushrooms has evaporated. Remove from heat and pour mixture into a large bowl. Let cool. Stir in parsley, bread crumbs, egg, balsamic vinegar and salt and pepper to taste. The mixing spoon should stand in the mixture. If not, add more bread crumbs Preheat oven to 400 degrees F.
  • Shape mushroom mixture into 4 burgers. Heat remaining oil in a large saute pan over medium high heat and sear until golden on both sides. Crumble cheese over the top and place pan in oven for 15 minutes until lightly browned. Remove each burger to a bun and serve with traditional garnish of sliced onion, tomato and fries.
