HOW TO MAKE CHEESE STICKS
These super-simple breadsticks are easy, cheesy, and there's no dough to make because we're going to use frozen puff pastry for this. They're very cool for entertaining.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper or a silicone baking mat.
- Place a sheet of frozen puff pastry dough onto a floured work surface and allow dough to thaw just until it can be unfolded. Unfold dough into a flat sheet; brush top of puff pastry dough with olive oil. Season with salt, black pepper, and cayenne pepper.
- Sprinkle white Cheddar cheese and 1/4 cup Parmigiano-Reggiano cheese onto the dough, covering the surface. Top with a piece of plastic wrap; press cheese and seasonings firmly into the dough with your fingers or by laying a sheet pan onto the dough over the plastic and pressing it down.
- Remove plastic and use a pizza cutter or sharp knife to cut the dough down the seam lines into thirds; cut each third lengthwise into thirds for a total of 9 breadsticks.
- Pick up a dough strip, place it seasoned side down on the work surface, and twist from both ends 8 or 9 times to make a rolled tube of dough with the seasoned side out. Place breadsticks onto prepared baking sheet.
- Sprinkle remaining 1 tablespoon Parmigiano-Reggiano cheese over the sticks. Roll the sticks lightly to even up their shapes and pick up and press any dropped cheese onto the surfaces.
- Bake in the preheated oven for about 10 minutes; flip and continue baking until breadsticks are browned and crisp, 10 to 20 more minutes. If you pick up a stick by one end and it droops, bake for several more minutes. Cool on a wire rack before serving.

Steps:
- Preheat oven to 400ºF (220ºC).
- Grate zucchini into a medium bowl.
- Transfer grated zucchini into a large bowl and add parmesan cheese, garlic powder, pepper, red pepper flakes, salt, and egg. Mix together.
- Pour the mixture onto a small towel and wring the excess fluid from mix.
- Place a piece of parchment paper on a baking sheet and spread mixture evenly into a square about a ½-inch (1cm) thick.
- Bake for 35-40 minutes or until middle has thickened.
- Remove from oven and spread cheddar and mozzarella cheese over top .
- Place back in the oven at 350ºF (180ºC) for 10 more minutes or until cheese melts and is bubbling.
- Let cool for 5 minutes, then cut.
- Serve with marinara, ranch, or any sauce of your choosing!

- Preheat the oven to 425 degrees
- Shred the zucchini and place in a sturdy dish towel. Squeeze as much moisture as possible from the zucchini. When you feel like you've gotten as much as you can out unroll the towel and allow it to rest for several minutes then try again. Do not skip the second step, the zucchini needs to be extremely dry.
- Transfer the dry zucchini to a mixing bowl and combine with the garlic, spices, eggs and cheese.
- Place the dough on a greased or silicone lined baking sheet and spread into a rectangle. **Do not pat too thin, or it will be more like a thin crust pizza than breadsticks**
- Bake for 20-22 minutes until the breadsticks have browned slightly and dried out.
- Remove from the oven and top with remaining cheese. Bake for 5-7 more minutes until melted and bubbly.
- Cut into 12 strips.

- Line a rimmed cookie sheet with aluminum foil.
- Cut zucchini into thick wedges.
- Place the zucchini on baking sheet.
- In a small bowl, stir together the melted butter and garlic.
- Brush the garlic/butter mixture onto zucchini.
- Sprinkle with garlic salt and shredded Mozzarella cheese.
- Bake in preheated oven 11-13 minutes until the cheese starts to brown and zucchini are fork tender. Serve warm.

CHEESY ZUCCHINI
My daughter despises zucchini, but my husband and I love it, so this is an easy way for us to get our "fix" and it's the perfect amount for the two of us. If I'm baking something else in the oven, I'll just put this in till the meat or whatever is done, then crank up the broiler and top it off in there. And of course, you can use more cheese or anything else you desire.

- Rinse the zucchini under lukewarm water. Trim off one of the ends off the zucchini and shred on a grater. (I keep one end on to make sure I don't get too close to my fingers when grating.)
