- Spray an 8x8 cooking dish with non-stick spray. Preheat oven to 400 degrees F.
- Cook your chicken of choice before you assemble your casserole. This recipe isgreat for using a store bought rotisserie chicken, it tastes amazing and cutsout a lot of the work. You can also put your chicken in a crockpot to cookduring the day to speed this process up.
- You also need to fry up the bacon, you can do it in the beginning or whilethe dish is baking. Cook and crumble it for the garnish.
- In the prepared baking dish, combine the Wild Rice & seasoning packet,chicken broth, cooked and diced chicken, diced apple, milk, and 1 cup ofshredded cheese. Stir gently.
- Cover the baking dish with foil and bake for 30 minutes.
- Then, remove foil and bake for an additional 10 minutes.
- Next, top casserole with remaining ½ cup cheese and crumbled bacon. Bake an additional 5 minutes.
- Serve immediately and enjoy!

- In a 2-quart casserole, combine rice mix and seasoning packet with mushrooms. In a medium saucepan, combine water, spinach, onion, butter, mustard, and nutmeg. Bring to boiling; remove from heat. Stir mixture; pour over rice mixture. Stir in cream cheese.
- Bake, covered, in a 375 degree F oven 20 minutes. Stir mixture. Cover; bake 15 to 20 minutes more or until rice is tender. Stir again. Let stand 5 minutes before serving.Makes 6 to 8 servings.

- Heat oven to 350°F. Spray 11x7-inch (2-quart) glass baking dish with cooking spray. Cook rice as directed on package, using 2 tablespoons of the butter and 1/4 teaspoon of the salt.
- Meanwhile, in 12-inch skillet, melt remaining 1/4 cup butter over medium-high heat. Cook mushrooms, leek and garlic in butter 3 minutes, stirring occasionally, until tender. Reduce heat to medium. Stir in flour. Gradually add milk; heat to boiling. Cook 5 minutes, stirring constantly, until thickened. Remove from heat; stir in 1/2 cup of the cheese.
- In large bowl, mix cooked rice, milk mixture, chicken, broth, pepper and remaining 1/2 teaspoon salt until blended. Spoon into baking dish. Sprinkle with almonds and remaining 1/2 cup cheese. Bake uncovered 20 to 25 minutes or until thoroughly heated and cheese is melted.
