This White Beans recipe is so simple, yet so delicious! Cannellini beans cooked with tomatoes, garlic, and chicken broth make for one tasty side dish. It's perfect for holidays or easy weeknight meals!

1/3 cup olive oil & more for serving
¼ cup chopped fresh sage leaves
4 garlic cloves (sliced thin)
1 28-ounce can diced tomatoes, drained
1 teaspoon kosher salt
½ teaspoon fresh ground black pepper
1 teaspoon granulated sugar
1 cup low-sodium chicken broth
2 16 ounce - 32 ounces total cans cannellini beans, drained and rinsed
2 tablespoons minced fresh parsley leaves
Garnish: crispy bacon (optional)

Steps:

  • Heat olive oil in a medium skillet over medium heat.
  • Add the sage and sliced garlic. Shake the pan so the garlic doesn't stick, but don't stir it because the garlic might clump.
  • Reduce the heat to medium-low and cook 3-4 minutes or until the garlic turns very light gold and the sage darkens a bit.
  • Add the tomatoes and salt. Simmer, stirring often, until the tomatoes are shiny and their juices have evaporated; 8-10 minutes.
  • Add the pepper, sugar and chicken broth, stirring often, and bring the broth to a boil.
  • Reduce heat to low, add the beans, simmer (stirring often) until the liquid has evaporated, 18-20 minutes.
  • Remove the beans/tomatoes from the heat and stir in the parsley. Season, if needed, with more salt & pepper.
  • Serve with extra olive oil for drizzling and a sprinkle of crispy bacon (optional).
  • Enjoy!

salt and pepper to taste
1 (6 ounce) can tomato sauce
1 onion, chopped
1 tablespoon Worcestershire sauce
1 (15 ounce) can vegetarian baked beans
6 cups prepared instant mashed potatoes
6 ounces shredded Cheddar cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large skillet over medium high heat, combine the ground beef and salt and pepper to taste. Saute for 10 minutes, or until well browned. Add the tomato sauce, onion and Worcestershire sauce. Reduce heat to low and simmer for 10 minutes.
  • Prepare potatoes according to package directions. Place beef mixture into a casserole dish. Layer the beans over the beef and smooth prepared potatoes over the beans.
  • Sprinkle the cheese over the potatoes and bake uncovered at 375 degrees F (190 degrees C) for 30 to 40 minutes.

Whether or not you've fallen for this cheesy white-bean tomato bake, we'd like you to meet its bolder counterpart, smoky and spiced, with lots of melty cheese. Black beans shine in a deep-red mixture of fried garlic, caramelized tomato paste, smoked paprika and cumin. The whole skillet gets coated in a generous sprinkling of sharp Cheddar or Manchego cheese, then baked until melted. The final result is what you hope for from a really good chili or stew, but in a lot less time. For a spicier rendition, add a pinch of cayenne with the paprika, or douse the final skillet with hot sauce. Serve with tortillas, tortilla chips, rice, a baked potato or fried eggs.

1/2 cup coarsely chopped yellow onion
3 cloves garlic (sliced)
1 28 ounce can fire-roasted crushed tomatoes (undrained)
1/4 cup fresh rosemary leaves (coarsely chopped, plus additional for garnish)
3 15 ounce cans Bush's cannellini beans (rinsed and drained)
3/4 cup shredded Parmesan cheese
Crushed red pepper flakes (optional)
Coarse salt and freshly ground black pepper
1/2 cup cup shredded Fontina cheese

Steps:

  • Preheat oven to 400 degrees F. In a large skillet, heat olive oil over medium-high heat. Add onion, garlic, and 1/8 teaspoon salt. Cook and stir for 5 minutes or until tender.
  • Stir in tomatoes and rosemary. Bring to boiling; boil gently, uncovered, 5 minutes, or until slightly thickened.
  • Stir in beans and half the Parmesan. Season to taste with crushed red pepper, salt, and black pepper. Transfer to a 2-qt. rectangular baking dish.
  • Top with remaining Parmesan and the Fontina. Bake 15 to 20 minutes, or until beginning to lightly brown around the edges.
  • Sprinkle with additional rosemary before serving.

Next, add the vegetable stock a little at a time, stirring regularly and allowing most of the excess liquid to be absorbed by the rice before adding more - it should take around 20 minutes in total.   • Transfer the mixture to a large baking dish, and top with the remaining grated cheese. Bake at 190°C (Gas Mark 5 / 375°F) for around 30-40 minutes, until cooked to your liking. For a slightly firmer bean bake, allow to stand for 10 minutes before serving.
