HEARTY VEGETABLE LASAGNA
This hearty, vegetable lasagna is the only lasagna my husband will eat. We love it!!! Hope you all enjoy as much as we do.

Steps:
- Cook the lasagna noodles in a large pot of boiling water for 10 minutes, or until al dente. Rinse with cold water, and drain.
- In a large saucepan, cook and stir mushrooms, green peppers, onion, and garlic in oil. Stir in pasta sauce and basil; bring to a boil. Reduce heat, and simmer 15 minutes.
- Mix together ricotta, 2 cups mozzarella cheese, and eggs.
- Preheat oven to 350 degrees F (175 degrees C). Spread 1 cup tomato sauce into the bottom of a greased 9x13 inch baking dish. Layer 1/2 each, lasagna noodles, ricotta mix, sauce, and Parmesan cheese. Repeat layering, and top with remaining 2 cups mozzarella cheese.
- Bake, uncovered, for 40 minutes. Let stand 15 minutes before serving.

EASY VEGETABLE LASAGNA RECIPE
Here's an easy vegetable lasagna recipe that can be enjoyed any day of the week. This vegetarian lasagna is cheesy, packed with veggies and absolutely delicious!

Steps:
- Preheat the oven to 350F and coat a 9x9 baking dish with non stick spray.
- Heat olive oil in a large pan over medium heat.
- Saute onion and garlic for about 5 minutes until golden brown.
- Add in sliced eggplants, cover and cook for about 10 minutes until semi soft.
- Next, add in zucchini and bell peppers, cook for 10 more minutes.
- Then add La San Marzano Tomato Basil Sauce, stir and cook for ten minutes.
- Pour 1/3 cup vegetable sauce at the bottom of the baking dish.
- Top with Lasagna noodles. Spread ricotta on the lasagna noodles.
- Top with vegetable sauce and shredded mozzarella.
- Repeat the layers of noodles and vegetables until the last layer is vegetables topped with mozzarella cheese.
- Top with some basil leaves and cover with aluminum foil.
- Bake in the oven for 45 minutes until the lasagna noodles are fully cooked.
- Uncover and cook for another 10 minutes.
- Let cool for 20 minutes and then slice and serve.

- Heat oven to 425°. Spray bottom and sides of jelly roll pan, 15 1/2x10 1/2x1 inch, with cooking spray. Place bell peppers, onion, zucchini, potatoes, mushrooms, oil, peppered seasoned salt and basil inlarge bowl; toss to coat. Spread vegetables in pan. Bake uncovered about 30 minutes or until crisp-tender. Cool slightly.
- Reduce oven temperature to 350°. Spray bottom and sides of rectangular baking dish, 13x9x2 inches, with cooking spray. Cook and drain noodles as directed on package. Mix ricotta cheese, pesto and egg. Coarsely chop vegetables.
- Place 3 noodles lengthwise in baking dish. Spread with half of the ricotta mixture. Top with 2 cups vegetables and 1 cup of the provolone cheese. Repeat layers, starting with noodles. Top with remaining 3 noodles and remaining vegetables. Sprinkle with mozzarella cheese.
- Bake uncovered 40 to 45 minutes or until hot in center and top is golden brown. Let stand 5 minutes before cutting.

- Cook noodles according to package directions. Meanwhile, in a small bowl, whisk the eggs, egg whites, ricotta cheese, parsley, basil, oregano and pepper; set aside. , In each of two 13x9-in. baking dishes coated with cooking spray, spread 1 cup spaghetti sauce. Drain noodles; place 3 noodles over spaghetti sauce in each dish. , Layer each with a quarter of the ricotta mixture, 1 cup spaghetti sauce, 1 cup mozzarella cheese, 3 lasagna noodles and half of green beans. - For the white sauce: Put the butter and olive oil in a heavy medium saucepan over medium-low heat. Stir in the flour and whisk for 3 minutes. Stir in in the milk. Increase the heat to medium-high. Whisk the sauce until it comes to a simmer and is thick and smooth, 2 to 4 minutes. Stir in the salt, pepper, and nutmeg into the bechamel sauce. Preheat the oven to 450℉ (230℃). Combine the ricotta, spinach, 1 cup Parmesan, prosciutto, egg, salt, and pepper in a medium bowl, mix well. Add a tablespoon or 2 of oil to a large pot of boiling salted water. Boil the noodles until just tender but still firm to bite. Drain. Place the noodles in a single layer on a baking sheet to prevent them from sticking. Grease a 13-by-9-by-2-inch glass baking dish with butter or nonstick cooking spray. Pour the bechamel sauce over the bottom of the prepared dish. Lay out 4 lasagna noodles on a work surface, then spread about 3 tablespoons of ricotta mixture evenly over each noodle. Starting at 1 end, roll each noodle like a jelly roll. Lay the lasagna rolls seam side down, without touching, atop the bechamel sauce in the dish. Repeat with the remaining noodles and ricotta mixture. - In a large bowl, toss the the vegetables (including all the garlic) in one tablespoon of olive oil and sprinkle with salt and pepper. Place the vegetables in a single layer on a large baking sheet (I use a baking stone) and roast for 30 minutes. Once the vegetables are removed from the oven, lower the temperature to 375F.
- While the vegetables bake, heat a large saucepan, over medium-high heat, with one tablespoon of olive oil. Add the ground sausage and cook until no longer pink.
