1/4 cup chopped fresh mushrooms
4 medium green onions, chopped (1/4 cup)

1/2 cup half-and-half
2 packages (3 oz each) cream cheese, cubed

  • Spoon about 1/4 cup seafood mixture down center of each crepe; roll up. Place in 11x7-inch (2-quart) glass baking dish. Sprinkle with Swiss cheese.
  • Microwave uncovered on High 4 to 6 minutes or until cheese is melted and crepes are heated through. Sprinkle with remaining 2 tablespoons onions.

CHEESY VEGETABLE CREPES

These European-style pancakes are packed with veggies and then baked with mozzarella cheese until gooey and golden.

Provided by Aleksandra

Categories     dinner     Main Course

Time 30m

Number Of Ingredients 11

3/4 cup flour (3.5 oz/100g, spoon and leveled)
2 large eggs
1 cup milk (240-250 ml)
2 teaspoons olive oil
1/4 teaspoon baking powder (you can skip it)
1/2 teaspoon Herbes de Provence (or chopped fresh herbs, French/Italian seasoning)
salt and pepper (just a little)
3 cups ratatouille
additionally:
2 cups grated mozzarella (low-moisture mozzarella)
fresh thyme (optional)

Steps:

  • Prepare the pancake batter: In a large bowl, whisk the flour, spices, and baking powder together, then add the eggs, milk, olive oil and whisk until smooth. Cover and set aside for 15 minutes.
  • Cook the pancakes: for this recipe, it's better to make slightly thicker pancakes (not paper-thin pancakes). Heat a little amount of oil in a pancake pan (only for the first pancake) over high heat. Ladle a portion of the batter into the pan, just enough to cover the bottom, tilt the pan to spread the batter evenly around it, cook until the edges of the pancake are slightly crispy and browned, slide a spatula under the middle of the pancake, flip it over and cook briefly on the other side. Repeat with the remaining batter.
  • Fill the pancakes: Spread 1/2 - 2/3 cup of ratatouille on each pancake, depending on the thickness and size of the pancake. Roll up the pancakes.
  • Bake the pancakes: Place the pancakes on a rimmed baking tray, sprinkle with grated cheese and bake in the oven preheated to 425°F/220°C/Gas Mark 7 (no fan) until the cheese is melted and golden (it will take about 5-10 minutes).
  • Enjoy!

  • Prepare the crepe batter: Simply mix all the ingredients. You can do that with a blender, hand mixer, an immersion blender, food processor, or even by hand (with a whisk). I prefer to mix the batter with a blender – it's the quickest way to mix the ingredients and the batter is more smooth. If you’ll whisk the batter by hand it will have small lumps, but this is also ok and your crepes will be fine.
  • Leave the batter to rest: Cover the bowl with plastic foil or a kitchen cloth and leave it on the counter for about 30 minutes.
  • Brush the pan with a small amount of butter (I’m only adding the butter before the first crepe, but you can brush the pan with butter between each crepe if you wish) over high heat. The pan should be well heated. Holding the pan in one hand (it shouldn’t be on the burner) and the bowl or blender jar in the other, pour in a small amount of batter, tilting and swirling the pan simultaneously until the batter evenly coats the bottom of the pan. Place the pan on the burner and cook for about 30 seconds.

SAVORY VEGETABLE CREPES-THE ALMOND EATER
2019-04-12 I originally created this recipe back in 2014 after eating at a crepe restaurant. Before then, I'd only ever thought of crepes as something sweet, not savory. So, one morning I decided I wanted something other than eggs for breakfast, so I decided to give these a try. If you're a fan of savory breakfasts, eggs are an obvious choice. • In a large mixing bowl, stir together the flour and the eggs. Slowly add in the milk water. Lastly, add in the salt and the melted butter; stir until everything is mixed.
  • Heat a small-medium sized skilled and pour mixture into the skillet until it covers the bottom, as if you were making pancakes.
  • Wait approximately 1 minute and then, using a spatula, flip over the crepe until both sides are cooked. Continue this process until the crepe mixture is used up.
  • After the crepes are made, cut up the zucchini and squash into small bite-size pieces. Place into a skillet with the olive oil and cook until slightly browned.
