CHEESE STUFFED ITALIAN MEATLOAF
I wanted to make a different sort of meatloaf for dinner last night, and this is what I came up with. This meatloaf is moist and cheesy and oh-so-delicious! Tastes pretty darn good cold, too. :) I often make a double batch and freeze one in a disposable meatloaf pan to give to bachelor friends.

Steps:
- Preheat oven to 350 degrees F.
- In a large bowl, stir together the egg, breadcrumbs (I whir herbed dry stuffing mix in my food processor to make these), garlic, and 1/2 cup pasta sauce until well-mixed.
- Add remaining ingredients (except the garnish), and mix together well (I do the whole thing in my sturdy KitchenAid mixer, which works quite well).
- Put into a large loaf pan, top/garnish with additional pasta sauce (I like a*lot* of sauce and so use about a half-cup, but three or four tablespoons would do, too), and bake at 350 degrees F for 1 hour.
- Serve with rice, spaghetti, or scalloped potatoes.

- Preheat oven to 400 degrees F (200 degrees C).
- In a bowl, mix the turkey, milk, bread crumbs, and eggs by hand. Season with salt and pepper. Fold the cheese cubes into the mixture. Transfer to a loaf pan, and top with ketchup.
- Bake 1 hour in the preheated oven, to an internal temperature of 180 degrees F (85 degrees C).

CHEESY ITALIAN MEATLOAF RECIPE

- Preheat oven to 350ºF. and prepare 9x5 loaf pan by lining it with foil and spraying the foil with nonstick cooking spray.
- In a large mixing bowl, combine all ingredients, except 1/2 of the tomato sauce and the mozzarella.
- After ingredients are combined, transfer the meatloaf mixture to a flat surface, covered with parchment or wax paper. Shape the meatloaf into an oval or square and sprinkle most of the mozzarella over the middle of the meatloaf. Save about 1/4 cup of the mozzarella for the topping. Next, roll the meatloaf up and place it in the loaf pan. Use your fingers or the back of a spoon to press the meatloaf down so that it is all even at the top. Pour the reserved 1/2 of tomato sauce over the top and spread out evenly.
- Bake for 1 hour. Once cooked, remove from oven and sprinkle additional mozzarella cheese over the top. Bake for about 10-15 minutes more.
- Allow meatloaf to cool for about 10 minutes and then cut loaf into 8 even slices. Enjoy with a side salad or another favorite side dish!

- 1. Mix together milk and bread crumbs and set aside to soak. Place carrots, celery and onion in food processor. Pulse till finely chopped. Saute veggies in 2 Tbl EVOO until softened. Grate in 3 cloves of garlic while cooking. Set aside to cool a little.
- 2. Mix together ground beef, sausage, bread crumb/milk mixture, cooled veggies, eggs and seasonings in bowl until well blended. Heat oven to 425 degrees. Spray a large 12 hole muffin pan with non stick spray. Fill each cavity with meatloaf mixture, packing it in tightly. Make a hole in the center of each. Press a cube of cheese in middle. Pack rest of meat mixture on top to cover cheese.
- 3. Place muffin pan on foil lined baking sheet to catch drips. Bake 30 minutes. Drain drippings from pan and return to oven for another 10 minutes. If you want them more brown, broil for a few minutes. Serve with Italian tomato sauce. Enjoy!
- 4. Italian Tomato Sauce: Heat sauce, oregano, basil, garlic powder, salt & pepper to taste...simmer 20 minutes until it reduces and thickens. Serve over mini meat loaves.
ITALIAN MEATLOAF MUFFINS

- Preheat oven to 400° F. Very lightly spray a regular-sized muffin pan with non-stick cooking spray.
- Heat a medium skillet over medium to medium-high heat. Add oil. Once oil is hot, stir in onion. Sauté for 3 to 5 minutes, until onion is softened, stirring occasionally. Then add garlic and sauté for 3 minutes more. Remove pan from heat. Transfer onion and garlic mixture to a large bowl. Let cool for a few minutes.
- To the onion and garlic mixture, stir in 1/2 cup of the marinara, and then the egg, bread crumbs, Parmesan, parsley, mustard, oregano, salt, and pepper. Stir to combine. Add ground beef and Italian sausage, and combine thoroughly with your hands.
- Lightly press about half of the meatloaf mixture into each of 12 muffin cups. Press a cube of mozzarella gently into the center of each muffin cup. Top each cube of cheese with more meatloaf mixture, evenly dividing up the remaining mixture.
- Top meatloaf muffins with remaining 1/2 cup of marinara, dividing evenly amongst the 12 portions. Place muffin pan on a rimmed baking sheet and bake for about 30 minutes, or until internal temperature registers 165° F and the muffins are hot and bubbling. Remove pan from oven and let stand for a few minutes. Using a slotted spoon, carefully transfer meatloaf muffins to a serving platter. Sprinkle with additional chopped parsley, if desired.

CHEESY ITALIAN MEATLOAF

- Preheat the oven to 350°F. Liberally spray a bundt pan with cooking spray. Have nearby a foil lined sheet pan.
- In a medium-size mixing bowl mix together the ground beef, onion, green pepper, bread crumbs, Parmesan, pasta sauce, parsley, Worcestershire, Italian seasoning, steak seasoning, garlic and salt. Add eggs.
- Using your hands mix until fully combined and the ingredients are evenly distributed. Divided in half.
- Press 1/2 of meatloaf mixture in pan. Arrange the mozzarella cheese over the meatloaf then top with the remaining meatloaf mixture. Press evenly.
- Bake for 45 minutes. Remove from oven. Drain liquid from bundt pan. (Use oven mitts the pan will be hot.) Center foil lined sheet pan on top, then flip to Invert meatloaf onto the pan. Arrange cheese slices overlapping on top.
- Increase oven temperature to 375°F. Return to oven baking for an additional 15 minutes or until cooked through and cheese has melted. Rest on pan for 10 minutes then transfer to a platter or cake stand.
- Serve slices with additional warm pasta sauce on the side.

- 1. To make Tuscan Garlic Spice Mix;in a small bowl,combine dried rosemary,thyme,fennel seeds,garlic powder,marjoram and sage,whisk together with a fork,until blended and set aside.
- 2. Preheat oven to 350 degrees F.Grease a 9x5-inch loaf pan.Season with 1 tablespoon italian seasoning.
