CHEESY PUMPKIN CAULIFLOWER GRATIN
Colorful and creamy, rich pumpkin is the perfect addition to a classic baked vegetable dish. The crispy topping comes together with Progresso plain panko crispy bread crumbs.

Steps:
- Heat oven to 375°F. Grease or spray 2-quart baking dish.
- In 4-quart saucepan two-thirds full of salted water, heat cauliflower to simmering. Cook about 5 minutes or until tender. Drain.
- Meanwhile, in 2-quart saucepan, melt 2 tablespoons of the butter over low heat. Add flour and cook 1 minute, stirring constantly with whisk. Slowly add milk, continuing to stir with whisk until mixture heats to boiling and thickens. Add 3/4 teaspoon salt, the nutmeg, Cheddar cheese and pumpkin. Stir until smooth.
- Pour one-third of the sauce into baking dish. Add drained cauliflower, then pour remaining sauce on top.
- Melt remaining 1 tablespoon butter; toss with bread crumbs. Sprinkle on top of gratin.
- Bake 25 to 30 minutes or until top is golden brown.

CHEESY CAULIFLOWER GRATIN
Steps:
- Preheat the broiler.
- In a microwave-safe casserole dish, stir to combine cauliflower, soup, cayenne pepper, salt and shredded cheese. Cover with plastic wrap and microwave on high setting for 6 minutes.
- In a small bowl, combine grated Parmesan, bread crumbs, and olive oil. Remove cauliflower from microwave and remove plastic wrap. Spoon bread crumb mixture over cauliflower and broil for 1 to 2 minutes until top is golden brown. Serve hot.

- Preheat oven to 400 degrees F (200 degrees C).
- Combine cream, mozzarella cheese, Parmesan cheese, Asiago cheese, salt, and pepper together in a bowl. Scoop 1 cup of cheese mixture in bottom of a baking dish. Layer cauliflower into baking dish; cover with remaining cheese mixture.
- Bake in preheated oven until cauliflower is easily pierced with a fork, 20 to 30 minutes.

- Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender, 5 to 7 minutes.
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9-inch baking dish.
- Heat butter in a small saucepan over low heat; cook and stir onion in the melted butter until softened, about 5 minutes. Add flour; cook, stirring constantly, until mixture just starts to brown, 3 to 5 minutes. Gradually pour milk into mixture, whisking into a smooth sauce. Cook until just simmering.
- Remove sauce from heat and stir in half the Cheddar cheese until melted; sprinkle with pepper and nutmeg.
- Place steamed cauliflower in the prepared baking dish; pour cheese sauce over cauliflower. Sprinkle with remaining Cheddar cheese.
- Bake in the preheated oven until cheese is melted and browned, about 25 minutes.

- Preheat the oven to 190ºC (375ºF) and lightly grease a small 16 x 10 cm (6 x 4 inch) baking dish with butter.
- Peel and chop the pumpkin into small pieces. Place them at the bottom of a steaming basket and place the cauliflower florets on top. Steam the vegetables over a pot of boiling water. Remove the cauliflower after 3 minutes and pop them into the baking dish. Continue steaming the pumpkin until it is very soft, about 15 minutes.
- Once the pumpkin is soft, drop the pieces into a blender. Add the cream, pepper, mustard, and garlic to the blender and then blitz until super smooth. Stopping to scrape down the sides occasionally.
- Pour the sauce into a small saucepan over medium heat and add 25 grams of the grated cheese. Stir the cheese into sauce until it is completely melted. Taste the sauce and season with salt to your taste.
